CHEESY ASPARAGUS BITES
When I managed a cafeteria, I would cook up different snacks for the staff. These tiny squares with big asparagus flavor never lasted long and prompted lots of recipe requests. -Lois McAtee, Oceanside, California

Steps:
- In a skillet, saute onion and garlic in oil until tender. Combine cheese, bread crumbs, parsley, salt, pepper, oregano and hot pepper sauce. Stir in the onion mixture and eggs. , Cook asparagus in a small amount of water until crisp-tender, about 3-4 minutes; drain well. , Stir into cheese mixture. Pour into a greased 9-in. square baking pan. Bake at 350° for 30 minutes or until a knife inserted in the center comes out clean. Let stand for 15 minutes. Cut into small squares; serve warm.

BELGIOIOSO ASPARAGUS APPETIZERS
A delicious appetizer with BelGioioso Parmesan.

Steps:
- Preheat the oven to 425 degrees F (220 degrees C).
- Fill a large bowl with ice and cold water. Bring a large pot of lightly salted water to a boil. Add asparagus and cook uncovered until bright green and tender, 3 to 4 minutes. Drain in a colander and immediately immerse in ice water for several minutes to stop the cooking process. Drain.
- Place 1 sheet of phyllo dough on a clean cutting board. Brush with butter and sprinkle with 1 to 2 tablespoons Parmesan. Top with another piece of phyllo dough; brush with butter and sprinkle with cheese.
- Cut phyllo dough into 4 equal pieces and wrap 1 asparagus spear inside each piece of phyllo. Place on a parchment-lined baking sheet.
- Repeat with remaining phyllo dough, butter, Parmesan cheese, and asparagus spears. Sprinkle remaining Parmesan over wrapped asparagus.
- Bake in the preheated oven until phyllo is lightly browned, 10 to 12 minutes. Serve immediately.

ASPARAGUS APPETIZERS
A wonderful appetizer to have on hand that can be made ahead of time, frozen, and used as needed.

Steps:
- Trim crusts from bread, and flatten slightly with a rolling pin.
- In a bowl, stir blue and cream cheeses together with the egg until well blended and creamy. Spread a thin layer of cheese mixture over each slice of bread. Roll one asparagus spear inside each, and fasten with a toothpick.
- Melt butter in a small saucepan. Roll each asparagus wrap in butter to coat. Place on a baking sheet small enough to fit into the freezer, and freeze for one hour, or until butter hardens and wraps are somewhat firm. Remove pan from freezer, discard toothpicks, and cut each wrap in half crosswise. Store in a resealable plastic bag in the freezer until ready to use.
- To serve, preheat oven to 400 degrees F (205 degrees C).
- Arrange frozen asparagus wraps on an ungreased baking sheet. Bake in the preheated oven for 25 minutes, or until lightly browned. Check occasionally, and turn if necessary, for even browning and to prevent burning. Enjoy!

PHYLLO WRAPPED ASPARAGUS

Steps:
- 1. Preheat over to 375.
- 2. Snap off tough ends of asparagus. Unwrap phyllo and cut the stack into half lengthwise. Reserve 1 stack for later use. Cover the phyllo with a damp towel to keep if from drying out. Take 1 sheet of phyllo and brush lightly with some melted butter. Sprinkle with some parmesan. Place 2-3 asparagus spears on the short end of the sheet. Roll up, jelly-roll style. Place each piece, seam side down, on a baking sheet.* Brush with more melted butter and sprinkle with more Parmesan. Repeat until all the asparagus spears are used up. Place baking sheet in oven and bake for 15-18 minutes or until golden brown and crispy. When done let cool and drain on paper towels.
- 3. *Don't crowd on pan or they will steam and not crisp.
- 4. These can be prepared ahead and set in refrigerator overnight and then cooked. Cover well and remove cover before baking.
ASPARAGUS APPETIZER - SPEAR ECSTASY
This is a wonderful light apetizer. I served it at a luncheon and all asked for the recipe. My son-in-law did the "taste test" for me and wanted any left-overs. (Re the capers listed below: it does take 1 tbsp PLUS 1 tsp, drained and chopped) Recipe from Food Network.

Steps:
- To make Dipping Sauce: Mix well the sour cream, mayo, onion, lemon juice, capers, tarragon, onion powder, sugar and pepper together using a whisk.
- Refrigerate until chilled, about 2 hours.
- Steam asparagus until fork tender, 6 to 8 minutes.
- Mix Ice Bath together in large bowl. Plunge asparagus into ice water and let sit until cold.
- (I personally skipped the water bath and just let steamed asparagus drain in colander until cooled.) Transfer to paper towel to drain.
- Refrigerate.
- Serve chilled asparagus with dipping sauce.
- Note Do Ahead tips: The dipping sauce can be prepared up to 2 days in advance and regrigerated. The asparagus can be prepared 1 day in advance and refrigerated.
