Homemade French Fries with Five Dipping Sauces image

3 pounds russet (baking) potatoes (5 or 6)
4 to 6 cups vegetable oil for deep-frying
Salt
Accompaniments:
Sour Cream and Onion Dip , Saffron Mayonnaise , Ginger-Sesame Sauce , Roasted Red Pepper-Walnut Dip , and/or Chipotle-Tomatillo Sauce
Special Equipment
A 5- to 6-quart pot; a deep-fat thermometer

Steps:

  • Peel potatoes, then cut lengthwise into 1/3-inch-thick sticks, submerging in a large bowl of ice water. Rinse potatoes in several changes of cold water in bowl (more ice isn't necessary) until water is clear. Drain in a large colander.
  • Spread potatoes out in a single layer on several layers of kitchen towels to drain, then pat dry.
  • While potatoes are being rinsed and dried, heat 2 inches oil slowly in a 5- to 6-quart pot over medium-low heat until thermometer registers 300°F.
  • When oil is ready, increase heat to high and fry potatoes in four batches, stirring occasionally, until just cooked through but still white, about 3 minutes. (Adjust heat to keep oil as close to 300°F as possible and return oil to 300°F between batches.) Transfer fried potatoes with a slotted spoon to a baking sheet lined with dry towels to drain. When all potatoes are fried once, cool potatoes to room temperature, about 30 minutes.
  • Reheat oil over medium-high heat until thermometer registers 375°F. Fry potatoes again in four batches, stirring, and adjusting heat to keep oil as close to 375°F as possible, until deep golden, 3 to 4 minutes. (Return oil to 375°F between batches.) Transfer with slotted spoon to dry towels to drain briefly, then season with salt and serve immediately, with sauce(s) for dipping.

This is taken from De Vlaamse Pot by Marie Cattoor. In Belgium everyone eats French Fries (which are actuallly Belgian) with homemade mayonnaise so here is a recipe so you can make your own.

2 egg yolks
1 tablespoon Dijon mustard
2 tablespoons fresh lemon juice
salt & pepper
1 tablespoon cold water
400 ml salad oil

Steps:

  • In a medium sized bowl place the egg yolks and the mustard, together with a Tablespoon of cold water. Beat this with a hand mixer until it is well blended. While continuing to beat the mixture bit by bit add the salad oil. If the mayonnaise becomes too thick, add a little more water. Still beating the mixture add the lemon juice and then taste to see if seasoned properly. If not add more salt & pepper to taste. Store the mayonnaise in the refrigerator in a covered bowl.

1/2 lb asparagus
1 cup panko breadcrumbs
1/4 cup low-fat mayonnaise
cooking oil
ice cube, in water in a large bowl
1 cup low-fat mayonnaise
1 -2 chopped canned chipotle chile in adobo

Steps:

  • Blanch asparagus in boiling water about 2 minutes.
  • Immediately drain and put asparagus in ice water to stop cooking.
  • This will help keep a slight crunch to the asparagus and keep it bright.
  • Dry asparagus thoroughly with paper towels.
  • Use a little of the reduced fat mayonnaise to coat each asparagus spear, then roll in panko breadcrumbs.
  • You can refrigerate at this point if needed.
  • Mix mayonnaise and chipotle together with a whisk or in blender.
  • Use 1-2 depending on how spicy you like it.
  • Heat about 1 inch of oil heat to 370 F in a frying pan, put in asparagus but don't crowd.
  • Turn to brown on all sides.
  • Drop some dip into the bottom of a champagne flute, add 3-5 asparagus and serve.

Belgian Fries with Bacon Dust and Chipotle Mayo Dipping Sauce image

There is a restaurant in Portland, ME called Nosh. They're fairly new but got notoriety on the Mav Vs Food show on the Travel Channel, most notably for their bacon dusted fries. I went there about a month ago just to sample these. I couldn't find a recipe anywhere for the dust, which is very similar in texture to powdered sugar. So, I got to thinking....food processor, and voila, we have a winner! Like Heaven on Earth.

3-4 cup(s) vegetable oil, for frying
2 pound(s) potatoes (idaho, russet, or yukon gold), peeled, rinsed, and dried
1 pound(s) bacon
1/2 cup(s) mayonaise
1 - chipotle pepper, chopped
2 - drops tabasco sauce
1/2 teaspoon(s) cumin

Steps:

  • For the french fries: Pour enough oil into a deep fryer or deep sauce pan to reach at least halfway up the sides of the pan,but not more than three-quarters of the way up. Heat the oil to 325 degrees.
  • Cut the potatoes into sticks 1/2 inch wide and 2 1/2 to 3 inches long. Dry all the pieces thoroughly in a clean dish towel. This will keep th oil from splattering. Divide the potato sticks into batches of no more than 1 cup each. Do not fry more than one batch at a time.
  • When the oil has reached the desired temperature, fry the potatoes for 4 to 5 minutes per batch. They should be lightly colored, but not browned. If your fryer has a basket, simply lift it out the remove the fried potatoes. Otherwise, use a long-handled skimmer to lift out the potatoes. Be sure to bring the temperature of the oil back to 325°F in between batches. At this point the fries can rest for several hours at room temperature until you are almost ready to serve them.
  • For the second frying: Heat the oil to 325°F. Fry the potatoes in 1-cup batches until they are nicely browned and crisp, 1 to 2 minutes. Drain on fresh paper towels or brown paper bags and place in a warmed serving bowl lined with more paper towels. Sprinkle with bacon dust and serve with the chipotle mayo dipping sauce and/or ketchup.
  • For the Bacon Dust: Preheat oven to 350 degrees. Line a tray with parchment paper, then line each slice of bacon on tray and bake for 15-20 minutes until crisp and dry.
  • Transfer to a paper towel-lined plate and allow to cool. Crumble and put in the food processor and pulvarize into a fine consistancy.
  • Put fries, in batches, in paper bag with portions of the bacon dust and shake to coat.
  • For the Chipotle Mayo: Combine mayo, chipotle pepper, tabasco, cumin & adobe sauce, or if you can the chipotle peppers already in a can in the Mexican food section of your grocery store, you can use that.

Taste of 2008! This is a nice change from regular fries and these definitely will tempt your taste buds. Served along with a nice spicy chipotle mayonnaise it satisfies many cravings! Although these fries are done in the oven if you prefer you can deep fry for a more crispy effect. Enjoy!

sweet potato
olive oil
2 tablespoons ground coriander
1 tablespoon ground fennel
1 tablespoon ground oregano
3/4 teaspoon ground chili pepper flakes (or to taste)
2 tablespoons salt
1/2 cup mayonnaise
1 chipotle pepper
1 tablespoon adobo sauce
2 drops Tabasco sauce
1/2 teaspoon cumin

Steps:

  • Preheat oven to 425°.
  • Mix together seasoning. In a bowl combine 1 Tbsp oil and 2 tsp seasoning per sweet potato. Toss and place on greased baking pans. Making sure that potatoes are spread out in pan. Bake for 30-40 minutes turning every 10 minutes.
  • Serve with chipotle mayonnaise to prepare mayonnaise combine mayonnaise,* chipotle pepper, 1 tbsp adobe sauce and 2 drops Tabasco sauce. (*I use Chipotle peppers in a can that are in the adobe sauce already, found usually in Mexican food aisles of the supermarket).
  • *Save remaining seasoning mixture in ziploc bag for next time.
