BEET SALAD WITH HONEY-LAVENDER DRESSING

Beet Salad with Honey-Lavender Dressing image

The familiar beet-and-goat-cheese salad gets a fresh, vibrant update with Swiss chard and yellow and candy-striped beets tossed in a sweet, tangy honey-lavender dressing. Use a mandoline or other adjustable-blade slicer (or a sharp chef's knife) to thinly slice the baby beets.

Provided by Martha Stewart

Categories     Food & Cooking     Salad Recipes

Time 3h

Number Of Ingredients 15

6 medium beets (2 1/4 pounds total), preferably a mix of yellow and red
Extra-virgin olive oil, for drizzling
Coarse salt
1 tablespoon extra-virgin olive oil
2 medium shallots, thinly sliced (1 cup)
1/3 cup honey
1/2 teaspoon fresh lavender leaves
1 large egg yolk
2 tablespoons champagne vinegar
1 teaspoon Dijon mustard
1 cup safflower oil
2 bunches baby chard or 1 bunch Swiss chard (about 1 pound), stems removed, leaves torn into 1-inch pieces
1/2 cup pecans (2 ounces), toasted and salted
8 ounces fresh goat cheese, crumbled
2 baby Chioggia beets, scrubbed and thinly sliced

Steps:

  • Beets: Preheat oven to 350 degrees. Drizzle medium beets with olive oil in a baking pan; season with salt. Place in a single layer and add 1 cup water. Cover with parchment, then foil, and roast until knife-tender, about 1 1/2 hours. When cool enough to handle, rub off peels with paper towels (use a paring knife for tough spots); discard. Cut beets into bite-size pieces.
  • Dressing: Meanwhile, heat olive oil in a medium saute pan over low. Add shallots and cook, stirring occasionally, until softened, about 3 minutes. Add honey and lavender; simmer until lavender is fragrant, about 5 minutes. Let cool 5 minutes. Puree with yolk, vinegar, and mustard in a blender or food processor until smooth. With machine running, slowly add safflower oil until combined. (If dressing is too thick, add water, 1 teaspoon at a time.)
  • Salad: Combine roasted beets, chard, and pecans in a bowl. Lightly toss with 1/4 cup dressing. Place 1 tablespoon dressing on bottom of each plate, then add salad mixture and goat cheese, dividing evenly. Top with baby beets and serve, with remaining dressing on the side.

WHAT DRESSING GOES WITH BEET SALAD? (12 DRESSINGS)

From happymuncher.com
Cuisine American
Total Time 10 mins
Category Dressing
Published May 6, 2022
  • Balsamic vinaigrette. This dressing works well on any salad because it has a sweet and tangy flavor that pairs well with vegetables. It also has notes of garlic and red wine vinegar, which make it great for pairing with beets.
  • Blue cheese dressing. Blue cheese is made from cow’s milk, so vegans and those who are lactose intolerant should avoid it. However, blue cheese dressing goes well with many different types of foods, such as salads or pasta dishes.
  • Homemade Ranch Dressing. This recipe is fairly straightforward and easy to make. Just throw all of the ingredients into a bowl and whisk them together until they’re well-blended!
  • Honey Mustard Dressing. This dressing is also easy to make, but it does require some time in the refrigerator for the flavors to meld together properly (about 10 minutes).
  • Avocado Lime Dressing. This avocado-based dressing is light but flavorful at the same time—and it’s perfect for making sure that your salads don’t feel too heavy on their own!
  • Lemon Vinaigrette. If you’re looking for something bright and fresh, this lemon vinaigrette will definitely do the trick! It’s also super simple to make—just throw everything into a jar and shake!
  • Greek Dressing. This recipe is super flavorful and full of herbs like oregano and thyme—it’s sure to please even picky eaters! The only downside is that it takes some time to prepare since there are so many ingredients involved (about 20 minutes).
  • Caesar Dressing. This dressing is made with raw eggs—and while it’s perfectly safe when done right, it’s best if you use pasteurized eggs instead of fresh ones (you can find these at most grocery stores).
  • Salsa. This salsa recipe is super easy and quick to whip up—just toss all of the ingredients into a blender or food processor and blend until smooth! You can use this salsa as both a sauce for tacos or burritos, or as a dip for chips and vegetables.
  • Olive Oil. This dressing goes great with all sorts of salads, including beet salad! See also 14 Dressings that Go Well with Antipasto Salad. You can also use it as a dipping sauce for vegetables or pasta dishes if you want something lighter than mayonnaise-based dressings but still flavorful enough to make an impact on your meal.
