Time 3h5m

Yield 6 servings

Number Of Ingredients 28

1 cup kosher salt
1 cup light brown sugar
3 cloves garlic, smashed
2 bay leaves
4 pounds bone-in chicken thighs and drumsticks (about 6 of each)
4 pounds bone-in chicken thighs and drumsticks (about 6 of each)
2 tablespoons ancho chile powder
2 tablespoons granulated garlic
2 tablespoons kosher salt
1 1/2 tablespoons ground cumin
1 tablespoon onion powder
1 teaspoon ground cinnamon
1 teaspoon freshly ground black pepper
2 teaspoons canola oil
1 yellow onion, diced
3 cloves garlic, minced
1 cup canned diced tomatoes
3 ounces bittersweet chocolate, chopped
2 tablespoons chopped toasted almonds
1 teaspoon ground cinnamon
1 teaspoon ground cumin
2 dried ancho chiles, rehydrated
2 canned chipotle peppers in adobo, with 1 tablespoon of the liquid
1 cup low-sodium chicken stock
1/2 cup currants
Chopped fresh cilantro, for garnish
Lime wedges, for garnish
Steamed white rice, for serving

Steps:

  • For the brine and chicken: In a medium saucepan, combine 1 cup water, the salt, sugar, garlic and bay leaves. Bring to a simmer to dissolve the sugar and salt. Once boiling, remove from the heat and add 3 cups ice. Once the liquid is cool, pour into a freezer bag. Add the chicken to the brine, making sure it is completely submerged. Refrigerate for 1 hour.
  • For the dry rub: Combine the ancho chile powder, granulated garlic, salt, cumin, onion powder, cinnamon and black pepper together and toast in a dry pan until fragrant, 1 to 2 minutes.
  • Remove the chicken from the brine and pat dry. Sprinkle the chicken on all sides with the dry rub, massaging the spices into the meat and ensuring that all sides are completely coated. Return to the refrigerator and marinate for 1 hour.
  • For the mole sauce: In a medium saute pan over medium heat, add the canola oil and onions and cook until translucent, 3 to 4 minutes. Add the garlic and cook for another minute. Stir in the tomatoes, chocolate, almonds, cinnamon, cumin, ancho chiles and chipotles with their liquid and simmer for 5 minutes. Transfer the mixture to a food processor, add in the chicken stock and puree until smooth. Add the currants and process again. Set half of the sauce aside for serving and reserve the other half for basting the chicken.
  • Preheat a grill to medium-high heat. Grill the chicken, turning occasionally, until the internal temperature reaches 165 degrees F, 10 to 15 minutes per side. Using a silicone pastry brush, baste with the mole sauce for the final 5 to 8 minutes of cooking time.
  • Garnish with cilantro and lime wedges. Serve with steamed white rice and extra mole sauce slathered over the top.

CHICKEN MOLE

Chicken Mole image

This chicken mole uses traditional Mexican ingredients like dried chilies, chocolate and almonds to create an irresistible dish with big flavor. Poached chicken gets simmered in the thick sauce and served with a sprinkle of sesame seeds.

Provided by Food Network Kitchen

Time 1h10m

Yield 4

Number Of Ingredients 21

3 guajillo chilies
3 ancho chilies
2 large tomatoes, cored
1/2 medium onion, peeled, cut into wedges
6 garlic cloves, unpeeled
1 1/2 cups low-sodium chicken broth
4 ounces Mexican chocolate, chopped
2 tablespoons whole almonds, toasted
1 teaspoon dried oregano, preferably Mexican
1/2 teaspoon ground cinnamon
Pinch ground cloves
1 slice stale white bread
1 canned chipotle in adobo sauce
3 tablespoons vegetable oil
Kosher salt
1 quartered poached chicken (See recipe below)
Toasted sesame seeds, for garnish
[For Serving:] Hot cooked rice (optional)
1 small onion, halved
One 3 -to -4 pound chicken, quartered, fat trimmed
4 cups low-sodium chicken broth

Steps:

  • Split, stem, and seed the chilies. Toast them in a medium dry skillet over medium-high heat, flipping and flattening with a spatula, until fragrant, about 30 seconds per side. Transfer the chilies to a bowl, cover with very hot water, and set aside until soft and pliable, about 30 minutes and then drain.
  • Adjust the oven rack to its highest position and preheat the broiler to high. Put the tomatoes, onion, and garlic on a foil-lined baking sheet. Broil the vegetables until the skins are charred and the garlic is soft, flipping as needed, about 8 minutes for the tomatoes and onions and 3 minutes for the garlic. Cool and then squeeze the garlic out of their skins, and put in a blender along with the drained chiles, tomatoes, onion, 3/4 cup chicken broth, chocolate, almonds, oregano, cinnamon, cloves, bread and chipotle en adobo. Blend until smooth.
  • Heat the oil in a large Dutch oven over medium-high heat. Carefully add the mole mixture and cook, stirring, until thick and fragrant, about 5 minutes. Whisk in the remaining chicken broth. (The mole sauce can be made to this point a day ahead and refrigerated.)
  • Add the chicken to the sauce and simmer until the chicken is heated through, about 20 minutes. Transfer to a serving dish, scatter the sesame seeds over top and serve with rice if using.
  • Put the onion and chicken in a medium saucepan. Cover with the broth and 2 cups of water. Bring to a boil, then lower the heat to a simmer and cover. Cook until the chicken is just firm to the touch, about 25 minutes. Remove the pan from the heat, uncover, and cool the chicken in the liquid for about 30 minutes.
  • Transfer the chicken to a large dish or bowl to cool completely, then cover and refrigerate until ready to use. Strain the broth and store, covered, in the refrigerator for 3 days or freeze for later use. Remove any fat from the surface of the broth before using.

PULLED CHICKEN GUMBO

Pulled Chicken Gumbo image

Simmer a thick, rich broth with celery, onion and bell pepper and load it with shredded chicken.

Provided by Food Network Kitchen

Time 1h40m

Yield 4-6

Number Of Ingredients 11

4 tablespoons vegetable oil
6 chicken thighs or leg quarters
Kosher salt and freshly ground black pepper
6 tablespoons all-purpose flour
3 cloves garlic, minced
2 ribs celery, chopped
2 scallions, thinly sliced, green and white parts kept separate
1 small green bell pepper, chopped
1 onion, chopped
4 cups chicken stock
1 tablespoon seafood seasoning, such as Old Bay

Steps:

  • Heat the oil in a large soup pot or Dutch oven over medium-high heat. Sprinkle the chicken on all sides with salt. Add the chicken skin-side down to the pot and cook until browned, about 6 minutes. Flip and cook 2 more minutes; transfer to a plate. Remove the crispy chicken skin, slice and reserve on the side for garnish.
  • Lower the heat to medium-low and stir in the flour, cooking until the resulting paste (roux) turns brown and smells of roasted peanuts, 12 to 15 minutes.
  • Add the garlic, celery, scallion whites, bell peppers and onions and cook until softened, about 6 minutes. Add the stock, seafood seasoning and 1/2 teaspoon black pepper. Return the chicken to the pot, bring to a simmer and cook until the meat is falling-off-the-bone tender, about 1 hour 10 minutes.
  • Remove the chicken and set aside until cool enough to handle. Shred into bite-size pieces, discarding the bones, and return the meat to the pot.
  • Ladle the gumbo into a soup bowl and garnish with the scallion greens and sliced chicken skin.

PUMPKIN SEED CHICKEN MOLE

Pumpkin Seed Chicken Mole image

Provided by Food Network

Categories     main-dish

Time 1h30m

Number Of Ingredients 18

1/2 cup raw pumpkin seeds or pepitas
1 teaspoon cumin seeds
1/2 teaspoon cracked black pepper
1/2 teaspoon dried Mexican oregano
10 tomatillos, husked, washed and quartered
1 serrano chile
2 garlic cloves, peeled
2 romaine lettuce leaves
1/8 teaspoon ground cinnamon
1 bunch cilantro, stems and leaves
1 bunch cilantro, stems and leaves
2 radish tops
1 small onion, quartered
1 1/2 teaspoons salt
2 tablespoons olive oil
2 cups chicken stock
3 large skinless, boneless chicken breasts, split
1 bunch radishes, thinly sliced, for garnish

Steps:

  • In a dry cast-iron skillet toast pumpkin seeds, cumin seeds, pepper and oregano over a low heat, shaking the pan occasionally. Heat until aromas are released, about 5 minutes. Remove before seeds begin to brown and set aside to cool. In a blender grind mixture until a powder forms. In blender or food processor puree tomatillos, serrano chile, garlic, lettuce, cinnamon, cilantro, radish tops, onion and salt until smooth. Preheat oven to 350 degrees. In a large saucepan heat olive oil over a high heat. Carefully, pour in pureed tomatillo mixture, and let sizzle for 30 seconds. Stir in stock. Reduce heat and simmer for 10 minutes. Turn up the heat to high and bring to a boil. Stir in ground nut mixture and remove from the heat. Puree in a food processor or blender, in batches, if necessary. Pass through a fine strainer, pressing with the back of a ladle to extract all the juices, into a 13 x 10-inch flameproof baking dish. Place the chicken breasts in the sauce and bring to a boil over moderate heat. Cover with foil and bake for 20 minutes. Serve the chicken and sauce over a bed of white rice. Sprinkle radish slices over the top.
