BEER-BRAISED PORK CHOPS

This is a quick and easy recipe that results in tender and flavorful pork chops.

4 tablespoons all-purpose flour
½ teaspoon salt
1 teaspoon ground black pepper
4 boneless pork chops, 1/2-inch thick
1 tablespoon butter
1 tablespoon olive oil
1 cup beer
2 tablespoons red wine vinegar
2 tablespoons stone ground mustard
2 tablespoons brown sugar
2 tablespoons finely chopped fresh rosemary

Steps:

  • Combine flour, salt, and pepper in a large resealable plastic bag. Add pork chops and shake well to coat thoroughly.
  • Melt butter in a large skillet over medium-high heat. Add olive oil and heat until sizzling. Add pork chops in a single layer. Saute until browned on one side, 1 1/2 to 2 minutes. Turn pork chops over and cook for an additional 1 1/2 to 2 minutes. Transfer pork chops to a plate.
  • Add beer, vinegar, mustard, brown sugar, and rosemary to the skillet and mix well. Bring to a boil over medium-high heat. Return pork chops to the skillet, cover, and reduce heat to medium-low. Simmer until pork chops are no longer pink in the center, 10 to 12 minutes. An instant-read thermometer inserted into the center should read 145 degrees F (63 degrees C).
  • Transfer pork chops to a plate. Increase heat to medium and boil pan juices in the skillet until thickened, whisking often, about 3 minutes. Top pork chops with sauce.

1 cup water
1 cup lager beer
4 teaspoons kosher salt
1 1/2 tablespoons dark brown sugar
1 tablespoon molasses
1 cup ice cube
4 (6 ounce) thick center-cut pork loin chops
4 teaspoons minced garlic
3 teaspoons fresh coarse ground black pepper
2 teaspoons dried sage

Steps:

  • Combine the water, beer, salt, brown sugar and molasses in a large bowl. Stir until salt and sugar dissolve. Stir in the ice.
  • Place the pork chops in large resealable plastic bag. Pour beer brine over the pork chops and seal the bag. Refrigerate for at least 4 hours or overnight, turning occasionally.
  • Preheat the grill to medium-high.
  • In a small bowl, combine the garlic, black pepper and sage.
  • Remove the pork chops from the brine and rub them with the garlic mixture.
  • Grill the pork chops for 6 to 8 minutes per side, until they are cooked through.
  • Transfer the chops to a platter and let them rest for a minute or two before serving.

I found this recipe on Epicurious several years ago, it always satisfies. A little extra work is SOOO worth it in the end. Use a dark lager and get the good thick chops. Yummm-O Prep time does not include marinating time.

3 tablespoons mild-flavored molasses (light)
1 cup ice cube
6 center-cut pork chops, 1-1/4-inch thick
7 large garlic cloves, minced
3 teaspoons fresh coarse ground black pepper
2 teaspoons salt
2 teaspoons dried sage

Steps:

  • Combine 2 cups water, beer, 1/4 cup coarse salt, sugar, and molasses in large bowl.
  • Stir until salt and sugar dissolve.
  • Stir in ice.
  • Place pork chops in large resealable plastic bag.
  • Pour beer brine over pork chops; seal bag.
  • Refrigerate 4 hours, turning bag occasionally.
  • Prepare barbecue (medium-high heat). Remove pork chops from beer brine; pat dry.
  • Mix garlic, pepper, 2 teaspoons salt, and sage in small bowl.
  • Rub garlic mixture over both sides of pork chops.
  • Grill pork chops until instant-read thermometer inserted into center of chops registers 145°F to 150°F, about 10 minutes per side, occasionally moving chops to cooler part of rack if burning.
  • Transfer chops to platter; cover with foil, and let stand 5 minutes.
  • Serve.

1 (12 ounce) can beer
1 tablespoon red wine vinegar
3 tablespoons dark corn syrup
2 tablespoons prepared mustard
4 large cloves garlic, minced
1 teaspoon dried sage
1 tablespoon salt
1 tablespoon ground black pepper
1 small onion, cut into thick slices
8 (1-inch thick) center-cut pork chops

Steps:

  • Whisk the beer, wine vinegar, corn syrup, mustard, garlic, sage, salt, and black pepper together in a bowl; pour into a resealable plastic bag. Add the onion and pork chops, coat with the marinade, squeeze out excess air, and seal the bag. Marinate in the refrigerator for 12 hours.
  • Preheat an outdoor grill for medium heat, and lightly oil the grate.
  • Remove the pork chops and onions from the marinade and set aside on a platter. Drain the marinade through a fine-mesh strainer, discarding the strained liquid. Spread the garlic mixture caught in the strainer over the pork chops. Wrap the onions in aluminum foil.

1 teaspoon Italian seasoning
1/2 teaspoon pepper
1 rack pork spareribs (3 to 4 pounds)
1 bottle (12 ounces) beer
2/3 cup barbecue sauce

Steps:

  • Rub the salt, Italian seasoning and pepper over ribs and place in a shallow roasting pan; add beer. Cover and bake at 325° for 2 hours or until tender., Drain ribs. Spoon some of the sauce over ribs. Using long-handled tongs, moisten a paper towel with cooking oil and lightly coat the grill rack. 4 (1-inch thick) pork chops
3 (12 fluid ounce) cans or bottles root beer
salt and pepper to taste
1 cup beef stock
2 tablespoons brown sugar
½ teaspoon chipotle-flavored hot sauce
2 teaspoons Worcestershire sauce
1 pinch salt, to taste

Steps:

  • Place the pork chops in a dish; pour 2 cans of the root beer over the chops. Place in refrigerator to marinate at least 2 hours. Remove the pork chops from the root beer; season with salt and pepper.
  • Combine the remaining can of root beer, the beef stock, brown sugar, hot sauce, and Worcestershire sauce in a saucepan over medium heat; simmer the mixture until it reduces to about 3/4 cup. Set aside.
  • Preheat an outdoor grill for medium-high heat, and lightly oil the grate.
