CREAMY DIJON ROSEMARY CHICKEN
Tender chicken breast in a creamy Dijon rosemary sauce = an easy to make fall comfort food dinner you'll be proud of.

Steps:
- Heat the olive oil and butter over medium-high heat in a large skillet.
- Cut the chicken breasts in half lengthwise so you're left with four thinner cutlets. Dredge each piece in flour.
- Fry the chicken for 5 minuter per side and then remove it from the pan and set it aside.
- Remove the rosemary needles from the stems and add the needles to the pan. Let the rosemary cook for about a minute.
- Add the wine, garlic, and Dijon mustard. Stir it until you have a smooth sauce, and then add the cream and chicken back in the pan. Cook for another 8-10 minutes over medium-low heat until the chicken is cooked through and the sauce has thickened. Season with salt and pepper as desired.

BEEKMAN'S LAVENDER - ROSEMARY CHICKEN
I picked this up at Beekman & Beekman website. They offer "pure varietal honeys". http://www.beekmanandbeekman.com/ It sounded SO good I wanted to save it for later! Prep time includes 3 hour marination time (it says 2-4 I picked 3 LOL) as well as how long I think it'll take to do the other stuff.

Steps:
- Pre-heat oven at 325°F.
- Combine the vinegar, sage honey, lavender, rosemary, pressed garlic, lemon juice and olive oil in a mixing bowl.
- Warm slightly if needed to blend.
- Gently pound the chicken breasts into a consistent thickness, approximately 1/4 inch.
- Place marinade and pounded chicken in Ziploc bag.
- Refrigerate for 2-4 hours.
- After the chicken has sufficiently marinated, remove from bag and lay skinned side down on flat surface.
- Salt and pepper and cover with a layer of ricotta cheese
- Place 1-2 oz of thinly sliced pancetta over the ricotta cheese
- Tightly roll the chicken breast.
- Bake covered in the oven for 25 minutes at 325°F.

- Preheat oven to 450 degrees F (230 degrees C).
- Combine chicken, onion, lemon slices, garlic, and rosemary together in a large bowl. Drizzle olive oil and sprinkle salt and black pepper over the chicken mixture; toss to coat. Spread chicken mixture out in the bottom of a baking dish.
- Bake in the preheated oven until no longer pink at the bone and the juices run clear, 45 to 50 minutes. An instant-read thermometer inserted into the thickest part of a thigh, near the bone, should read 165 degrees F (74 degrees C).

- Preheat oven to 350 degrees F (175 degrees C).
- Place chicken breasts in a 9x13 inch glass baking dish with a cover. Add oil, salt, and Cajun seasoning. Mix with your hands until chicken pieces are evenly coated.
