Steps:
- Heat oven to 350°F.
- Melt butter in oven proof 4-quart casserole dish or Dutch oven until sizzling; stir in garlic. Add beef roast. Cook over medium high heat, turning once, 7-9 minutes or until browned.
- Stir in all remaining ingredients. Cover; bake 1 1/2 -2 hours or until roast is fork tender.
- Slice meat. Serve with vegetable mixture.

- In a large bowl or shallow dish, combine flour, salt and pepper. Add beef slices, a few pieces at a time. Toss gently to coat., In a Dutch oven, heat oil over medium-high heat. Brown beef in batches. Add onion; cook and stir until tender, 3-4 minutes. Add garlic; cook 1 minute longer. Add tomatoes; bring to a boil. Reduce heat. Simmer, covered, stirring occasionally, until meat is tender, 10-15 minutes., Stir in green peppers, broth and Worcestershire sauce; simmer, covered, until peppers are tender, 10-15 minutes. - In a large cast-iron or other heavy skillet, cook beef over medium heat until no longer pink,6-8 minutes, breaking into crumbles; drain., Add tomatoes, broth, chili powder, salt and garlic powder; bring to a boil. BEEF WITH RED AND GREEN PEPPERS CHINESE STYLE

Steps:
- Core and remove the seeds from the red and green peppers. Cut peppers into thin strips about 1 1/2 inches long.
- Slice the meat across the grain into thin strips 1 1/2 to 2 inches long. Place in a bowl and add the cornstarch, soy sauce and pepper flakes and 2 tablespoons of the oil. (The oil keeps the meat from sticking together while cooking.) Blend well and let stand 15 minutes.
- Heat the remaining oil in a wok or skillet large enough to hold the ingredients. When the oil is very hot add the meat and cook, stirring, about 30 seconds until separated. Drain the meat in a sieve over a bowl to catch the drippings and reserve the oil.
- Wipe out the wok and return 2 tablespoons of the oil to it. Heat the oil and add the peppers, scallions and garlic. Cook over high heat until crisp and tender, about 1 minute. Add the sugar, wine, chicken broth and salt if desired. Add the beef and cook quickly, stirring, until just heated through. Serve immediately.

BEEF WITH TOMATO AND GREEN PEPPERS
Steps:
- 1. Carefully slice beef into thin bite size pieces about 1x1 inches.
- 2. Be sure you slice beef across the grain, otherwise the beef will become tough after cooking.
- 3. Marinate meat in soya sauce, wine, salt for a few minutes.
- 4. In the meantime slice tomatoes, green peppers and the onion. Then mince the garlic.
- 5. Make up corn starch solution (mix the cornstarch with the 1/2 cup of water).
- 6. Have sugar on hand.
- 7. Heat oil up in wok until smoking.
- 8. Stir fry beef quickly in it for no longer than 3 minutes.
- 9. Remove beef to a platter.
- 10. Reserve. (If beef is allowed to remain cooking in wok with other ingredients, it will become hard and tough.)
- 11. Add green peppers and tomatoes to wok.
- 12. Add sugar, cook tomatoes down until juice forms in bottom of wok (about 3-5 minutes cooking time).
- 13. Add beef back into wok.
- 14. Stir all ingredients up so that it is mixed.
- 15. Add corn starch solution, cook 1 minute.
- 16. Shut burner off, serve dish immediately.
