GREEK-STYLE VEGETABLE KEBABS WITH ORZO AND FETA
Suitable sides for the vegetables and pasta are grilled pita bread and assorted olives. End with baklava and fresh apricots.

Steps:
- Prepare barbecue (medium-high heat). Blend vinaigrette and mint in small bowl for dressing. Cook orzo in medium saucepan of boiling salted water until just tender but still firm to bite; drain. Return orzo to same pan. Mix in 3 tablespoons dressing. Season with salt and pepper.
- Thread bell pepper, eggplant and zucchini onto 4 metal skewers; brush with dressing. Grill vegetables until tender and just charred, turning and brushing often with dressing, about 12 minutes.
- Divide orzo between 2 plates. Place vegetable skewers atop orzo. Sprinkle with cheese and serve.
BEEF KABOBS & PARMESAN ORZO
This is a wonderful meal! It is also easy & quick, it can be prepared in less than 30 minutes, as well. Make a nice green vegetable or salad and some warm bread or raolls and you are set.

Steps:
- Soak 8-inch skewers in water 10 minutes; drain.
- Cut beef steak into 1 inch pieces.
- Combine 1 Tablespoon basil, dressing and garlic in large bowl.
- Add beef, onions, & bell peppers; toss to coat.
- Cook orzo according to package directions; drain.
- Toss with basil, cheese and oil; keep warm.
- Alternately thread beef, onions and peppers evenly onto bamboo skewers.
- Place on grid over medium ash-covered coals.
- Grill, uncovered, 8-10 minutes for medium rare to medium doneness, turning occasionally.
- Serve on orzo.

- Preheat grill to medium-high. Remove the kebabs from the dish; discard the marinade. Grill the kebabs, turning once, to desired doneness, 6 to 8 minutes total. To grill over your campfire, hold the skewers over the flames (but do not let the flames touch the food), turning regularly, until the meat is cooked to your liking, about 15 minutes for medium.
