BEEF TENDERLOIN WITH HONEY PEACH SAUCE
I cut this out of our Sunday newspaper. I hope to make this sometime this month, and when I do I will add more comments. I was really intrigued by this recipe, very different, but with great possibilities.

Steps:
- Preheat oven to 425.
- Sprinkle with salt and pepper.
- Bake 30 to 40 minutes or until thermometer reads 140 for medium rare.
- Remove from pan.
- Cover and let stand 15 minutes.
- Meanwhile for sauce, combine pineapple juice, lemon juice and cornstarch in saucepan.
- Add butter, honey, and bouillon granules.
- Cook and stir until thickened and bubbly.
- Cook and stir 2 minutes longer.
- Stir in peaches, heat through.
- Thinly slice meat across grain.
- Serve with sauce.

- Sprinkle steaks with salt and pepper. In a large skillet, heat 2 tablespoons butter over medium-high heat. Add steaks; cook 4-6 minutes on each side or until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°). Remove from pan; keep warm., In same pan, heat 1 tablespoon butter over medium heat. Add onion; cook and stir 4-6 minutes or until tender. Stir in stock; bring to a boil. Cook 1-2 minutes or until liquid is reduced by half. Stir in mustard; remove from heat. Cube remaining butter; stir into sauce just until blended. Serve with steaks.

Steps:
- Blend salt and peppercorns in a spice grinder.
- Rub the beef with olive oil and season with the salt and pepper mixture. Place in a roasting pan and roast in a 400 degree oven for about 50 minutes, or until the internal temperature reaches 135 degrees (medium rare). Remove from oven and allow to rest for at least 15 minutes.
- Thinly slice the beef and arrange on a serving platter.
- In a large bowl, mix together the mustard, wasabi, and honey.
- Serve tenderloin slices with sauce and your choice of breads.

- Preheat oven to 350 degrees F (175 degrees C).
- Place roast into a shallow, glass baking dish. Pour soy sauce and melted butter over the tenderloin.
- Bake in preheated oven for 10 minutes, then turn the roast over, and continue cooking 35 to 40 minutes, basting occasionally until the internal temperature of the roast is at 140 degrees F (60 degrees C) for medium.
