Make a classic mango chutney to serve alongside curries, with cheese or in sandwiches. It makes a great gift for family and friends, and you can freeze it too

Yield Makes 3 x 300ml jars

Number Of Ingredients 13

6 firm but ripe mangoes (about 1.5kg)
500ml white wine vinegar
450g granulated sugar
1 tbsp cumin seeds
2 tsp coriander seeds
10 cardamom pods
2 tsp nigella seeds
½ tsp cayenne pepper
½ tsp turmeric
3 garlic cloves , crushed
8 whole cloves
thumb-sized piece of ginger , grated
1 fat red chilli , seeds removed and finely chopped

Steps:

  • Peel the mangoes and chop the flesh into blueberry-sized pieces. Pour the vinegar and sugar into a large pan and simmer gently, stirring until the sugar has dissolved. Increase the heat and bubble for 8-10 mins until reduced a little. Meanwhile, toast the cumin, coriander and cardamom in a dry pan until aromatic.
  • Tip the spices into a pestle and mortar and gently crush them, leaving the seeds with some texture. Remove the cardamom pods, leaving the seeds in the spice mix, and add to the vinegar mix along with the mangoes, the other ingredients and 2 tsp salt. Bubble over a medium heat for 1 hr 15 mins - 1 hr 35 mins, until thick and syrupy. Leave to sit for 10 mins.
  • Transfer the chutney into 2-3 sterilised jars while still hot. Seal the jars and leave to cool, then add labels. Store in a cool place for up to 2 years - the chutney will be best eaten after a few months, when the flavours have melded and mellowed.

4 mangoes, peeled, pitted, and chopped (4 cups)
3 tablespoons grated fresh ginger
1 onion, chopped
1 clove garlic, minced
1/2 sweet red pepper, seeded and chopped (about 1 cup)
1/2 cup raisins
1/3 cup sugar
2 teaspoons salt
1/2 cup white vinegar
1/3 cup water

Steps:

  • Mix all of the ingredients together in a noncorrosive saucepan. Bring to a boil over high heat, then reduce the heat to low and simmer for 1 hour and 15 minutes. Remove from the heat and allow the chutney to cool. Store in glass jars in the refrigerator up to six months.

You will not believe the deeply satisfying flavour of this stew. This is our favourite wintry stew dish - comfort food to the max. The cooking time is more or less accurate, but it really depends on the cut of meat used - not everyone used chuck, and then, not all chuck is the same! You really have to poke and prod and taste to get it to where you want it...but that's what cooking is all about, isn't it? ;-)

4 tablespoons olive oil
3 1/2 lbs boneless beef chuck roast, trimmed, cut into 2 1/2 inch pieces
4 cups chopped onions
2 cups good-quality red wine
1 (14 1/2 ounce) can diced tomatoes, undrained
1/2 teaspoon dried oregano
1/2 teaspoon dried basil
1/4 teaspoon thyme
1/2 cup hoisin sauce (this is the critical ingredient, don't leave it out!)
2 bay leaves
1 garlic clove, minced
1 lb slender carrot, peeled, cut diagonally into 1 inch lengths
1 tablespoon cornstarch, mixed with
1 tablespoon water
2 tablespoons chopped fresh parsley

Steps:

  • Heat 2 tablespoons olive oil in heavy large pot over high heat.
  • Sprinkle meat with salt and pepper.
  • Add meat to pot; saut� until brown on all sides, about 10 minutes.
  • Push meat to sides of pot.
  • Reduce heat to medium; add 2 tablespoons oil to pot.
  • Add onions; saut� until golden brown, about 15 minutes.
  • Mix meat into onions.
  • Add 1 cup wine, tomatoes with juices, garlic, herbs, hoisin sauce, and bay leaves.
  • Bring to boil.
  • Reduce heat to low, cover pot and simmer 45 minutes, stirring occasionally.
  • Add carrots and 1 cup wine.
  • Cover; simmer 30 minutes, stirring occasionally.
  • Uncover, increase heat to high; boil until sauce is slightly thickened, stirring occasionally, about 15 minutes longer.
  • Reduce heat to medium, add cornstarch mixture and simmer until sauce thickens, stirring occasionally, about 8 minutes.
  • Discard bay leaves.
  • Season stew with salt and pepper.
  • (Can be made 1 day ahead. Cool slightly. Chill uncovered until cold, then cover and keep refrigerated. Bring to simmer before serving, stirring occasionally.) Transfer stew to large bowl.
  • Sprinkle with parsley and serve.
  • Excellent with buttered egg noodles.

This is the last of 3 recipes featuring Indian cuisine that I found in 1 of my Grandparents.com Newsletters. Mango chutney was described as the ultimate in Indian condiments & excellent w/grilled meats (sauces too I have recently discovered). Best of all is that it's so easy to make in a std slow cooker. This recipe comes from Anupy Singla's fabulous cookbook The Indian Slow Cooker: 50 Healthy, Easy, Authentic Recipes & she added that it's good just mixed w/basmati rice as a side-dish. I allowed 15 min for ingredient prep, but there is no other real prep. I suggest you make this recipe to enjoy w/the Indian dishes you'll be making during the Tour. :-)

5 mangoes (ripe, peeled, pitted & chopped, about 3 cups)
1 piece ginger (2-inch, peeled & grated or pureed)

1 cinnamon stick (3-inch)

3/8 cup white vinegar
1/2 cup brown sugar

Steps:

  • Put everything in the slow cooker & mix well (A 3 1/2 qt sized slow cooker was recommended).
  • Cook on high for 6 hrs, until the mixture thickens. Serve on the side of Indian dishes.

STIR FRIED BEEF WITH MANGO



Stir Fried Beef With Mango image

An Oriental combination that is refreshingly different. You'll need a wok to cook this. From a book of Chinese cooking.

225 g filet of beef
1 tablespoon red wine
1 tablespoon soy sauce
1 teaspoon cornflour
1/4 teaspoon sugar
1/4 teaspoon black pepper
1 large mango, cut into 1/4 inch slices
4 tablespoons peanut oil or 4 tablespoons vegetable oil
1 tablespoon fresh ginger, shredded
1 tablespoon spring onion, thinly sliced

Steps:

  • Cut beef into thin bite-sized slices.
  • Combine marinade ingredients in a bowl, add beef and marinade for 20 minutes.
  • Set wok over a high heat.
  • Add oil and wait until it's almost smoking, then reduce heat to moderate.
  • Add beef and ginger and stir-fry for 1-2 minutes and remove with slotted spoon.
  • Toss the mango slices in the hot oil then return the beef and ginger to wok along with the spring onions.
  • Stir over the heat about 1 minute.
  • Serve over rice.

3 unripe mangoes (about 3 pounds total)
1/2 cup distilled vinegar
1/3 cup sugar plus additional to taste if mango is very sour
1 1/2 teaspoons salt, or to taste
1/4 cup raisins
For seasoning paste
a 1-inch piece fresh gingerroot, peeled
2 fresh Thai (bird) chilies or 1 fresh jalapeño chili
5 garlic cloves
1 teaspoon ground cumin
1 teaspoon ground coriander seeds
1/2 teaspoon ground turmeric
3-inch piece cinnamon stick
2 star anise
2 tablespoons corn or safflower oil

Steps:

  • Peel mangoes and cut into 1/2-inch cubes. In a small bowl toss mangoes with vinegar, sugar, salt, and raisins.
  • Make seasoning paste:
  • Cut gingerroot into 4 pieces. For a milder chutney, wearing rubber gloves, remove seeds and veins from Thai chilies or jalapeño. To a food processor with motor running add gingerroot, chilies, and remaining seasoning paste ingredients, 1 at a time through feed tube, and purée to a paste.
  • Heat a 4-quart heavy kettle over moderately low heat until hot. Cook seasoning paste, cinnamon stick, and star anise in oil, stirring frequently, 10 minutes, or until very fragrant. Stir in mango mixture and simmer, covered, over low heat, stirring occasionally, until mangoes are tender, about 30 minutes. Discard cinnamon stick and star anise and cool chutney completely. Chutney keeps, covered and chilled, about 1 month.
