MARINATED GREEK BEEF SOUVLAKI SKEWERS (BEEF KABOBS) RECIPE

- To prepare this Greek beef souvlaki recipe, cut the beef into equal sized (3 cm/1 inch) cubes and set aside.
- Prepare the marinade for the beef kabobs. In a large bowl add all the ingredients for the marinade and the meat and blend to coat. Cover the bowl with plastic wrap and let them marinade for at least 1 hour in the fridge. Preferably leave them to marinade overnight so they soak up even more all those wonderful flavours.
- When you are ready to cook the kabobs, prepare the vegetables. Cut the peppers and onion into 3-3.5 cm equal wide squares. Place them in a bowl, drizzle with 1 tbsp olive oil and season with salt and ground pepper.

Steps:
- Combine spices and oil and press into meat on both sides.
- Cut meat into 1 inch cubes and toss with lemon juice and let stand for 5 minutes.
- Thread on skewers.
- Broil or grill for about 5 minutes, turnning once.
- Do not overcook.
- Combine sauce ingredients and serve with Souvlaki.

- 1. Marinade the beef in all of the other ingredients for at least 2 hours. 2. If making kebabs, skewer the beef. You can alternate the beef with chunks of vegetables like red bell peppers, mushrooms, onions, grape tomatoes, squash, zuccinni. 3. Grill the steaks or kebabs to desired doneness. Serve with white rice or pita bread, tsaziki sauce, and a greek salad.
BEEF SOUVLAKI

- Sandwiches 1. Heat broiler. In a large bowl, combine ground beef, Greek seasoning, garlic, lemon juice and salt and pepper. Divide into 16 pieces, shaping into balls, and thread onto 2 or 3 metal skewers. Coat broiler pan with nonstick cooking spray; place skewers on pan. Set aside. Sauce 2. Squeeze excess water from cucumber in paper towels. In a small bowl, stir cucumber, yogurt, mint, lemon juice, salt and pepper. Set aside. 3. Wrap pitas in foil and place in bottom of oven. Broil skewers for 4 minutes. Carefully flip over and broil an additional 3 minutes. Remove warmed pitas from oven. Top each with some sauce, shredded lettuce, 4 pieces meat and 2 tablespoons feta.
