BEEF SKEWER IN KOREAN-INSPIRED MARINADE



Beef Skewer in Korean-Inspired Marinade image

6 tablespoons Soy Sauce
3 tablespoons Water
2 tablespoons Sugar
2 tablespoons Honey
2 tablespoons Mirin
4 cloves Garlic, minced
1 1/2 pounds Beef Rib Eye, boneless 1/8" slices
1 teaspoon Sesane seeds
1 piece Scallions,thinly sliced

Steps:

  • 1. In large owl, combine soy sauce, water, sugar, honey, mirin and garlic. Add sliced beef; toss to combine. Cover and refrigerate at least 30minutes or up to 24 hours.
  • 2. Grease the grill and preheat to medium-high. Thread beef onto skewers, being careful not to pack too closely.
  • 3.Grill skewers about 3-4 minutes per side until beef is nicely charred. Sprinkle with sesame seeds and scallions. Serve with lettuce leaves as wrappers, bell pepper and cucumbers as filling.

Fantastic Korean-Style Marinade for Beef Pork or Chicken image

There should be enough marinade for about 2-1/2 pounds of beef or chicken you may double the marinade ingredients but keep the fresh garlic and green onion at the same amount --- the meat needs to come down to almost room temperature before grilling so plan well ahead, also there is a marinating time of 8-24 hours, you may omit the cayenne completely if desired or adjust to suit heat level.

3/4 cup soy sauce
3/4 cup water
3 tablespoons white vinegar
1/4 cup brown sugar
2 tablespoons honey (or use white sugar)
2 tablespoons sesame oil
3 -4 tablespoons minced fresh garlic
2 green onions, chopped
1/2 teaspoon coarsley ground black pepper
1 pinch cayenne pepper (or to taste adjust to suit heat level)

Steps:

  • In a bowl whisk together all marinade ingredients together until the sugar granules are completely dissolved.
  • Pour the marinade over the meat and turn to coat.
  • Cover with plastic wrap and refrigerate for 8-24 hours.
  • Remove the meat and shake off excess marinade.
  • Place the meat in a pan and allow to come down to room temperature (this will take a few hours).
  • Grill as desired.

This popular dish can be found on the menu at virtually every Korean restaurant in Manhattan. The beef is topped with various accompaniments such as a few raw garlic slices, kimchi (assorted spicy pickles), and steamed white rice, then wrapped in lettuce and eaten with your hands.

Number Of Ingredients 10

1/4 cup soy sauce
1 tablespoon sugar
2 teaspoons Asian sesame oil
1 bunch scallions (white and pale green parts separated from greens), minced (1/2 cup)
1 tablespoon minced garlic
1 tablespoon minced peeled fresh ginger
3 tablespoons sesame seeds, toasted
1 lb flank steak, cut across the grain into very thin slices (no more than 1/8 inch thick)
1 tablespoon vegetable oil
Accompaniments: butter lettuce or other soft-leaf lettuce; thinly sliced garlic; packaged kimchi*; steamed white rice

Steps:

  • Stir together soy sauce, sugar, sesame oil, white and pale green scallions, garlic, ginger, and 2 tablespoons sesame seeds in a bowl until sugar is dissolved. Add steak and toss to coat, then marinate 15 minutes.
  • Heat vegetable oil in a 12-inch heavy skillet over high heat until just smoking, then add steak in 1 layer and sauté, turning over occasionally, until browned and just cooked through, about 5 minutes total. Transfer to a platter and sprinkle with scallion greens and remaining 1 tablespoon sesame seeds, then serve with accompaniments.

  • If using wooden skewers, soak 6 skewers in water in a 9x13 baking dish so that they are completely submerged for at least 30 minutes and ideally for 1 1/2 hours.
  • TENDERIZER: in a food processor, combine the ingredients for the tenderizer and pulse until a thick paste forms. Set aside.
  • KOREAN BEEF KABOBS: in a large bowl combine the soy sauce, light brown sugar, and sesame oil and whisk until the sugar dissolves. Add the tenderizer and stir to combine. Add in the scallions along with the diced sirloin steak and stir so the meat is covered with the prepared marinade. Refrigerate for at least 30 minutes and up to 1 1/2 hours.
  • GRILLING: Skewer the bell peppers, onions, pineapple, and cubed sirloin onto the prepared skewers in whichever order you prefer. I used about 3-4 cubes of steak per skewer alternating with the veggies/pineapple. Heat an indoor/outdoor grill for several minutes and grill to desired doneness, or for about 8-10 minutes for medium-well. Sprinkle with sesame seeds and scallions before serving.
