PRESSURE COOKER RED WINE-BRAISED BEEF SHORT RIBS RECIPE

Pressure Cooker Red Wine-Braised Beef Short Ribs Recipe image

While not a ready-in-30-minutes weeknight recipe, the pressure cooker still shaves off a significant amount of time on this short-rib classic.

Provided by Daniel Gritzer

Categories     Entree     Dinner     Mains

Yield 4

Number Of Ingredients 15

5 pounds (2.3kg) beef short ribs (see note)
Kosher salt and freshly ground black pepper
1 tablespoon (15ml) vegetable or other neutral oil
2 celery ribs (about 3 1/2 ounces; 100g each), cut into 1/2-inch dice
2 large carrots (about 8 ounces; 225g each), cut into 1/2-inch dice
1 large (14-ounce; 400g) yellow onion, cut into 1/2-inch dice
5 medium garlic cloves, smashed
2 tablespoons (30ml) tomato paste
1 (750ml) bottle dry red wine
2 cups (475ml) good-quality brown beef stock, brown chicken stock, white chicken stock, or store-bought chicken stock (see note)
1 packet unflavored gelatin, such as Knox (2 1/2 teaspoons; 10g), only if using store-bought stock
4 sprigs fresh thyme
2 bay leaves
1 (750ml) bottle ruby port wine
Slurry made from 1/2 teaspoon cornstarch mixed with 1 teaspoon water (optional)

Steps:

  • Pour off all but 2 tablespoons of fat from the pressure cooker. Return to the heat and add celery, carrot, onion, and garlic. Cook, stirring often, until browned, about 6 minutes. Stir in tomato paste and cook for 1 minute longer; lower heat at any point if the contents threaten to burn.
  • Return short ribs to pressure cooker along with any accumulated juices, nestling them into braising liquids. Add thyme and bay leaves, then set pressure cooker to high pressure; cook for 45 minutes starting from when the cooker reaches high pressure.
  • Meanwhile, in a large saucepan, bring port to a very gentle simmer, regulating heat to maintain that simmer. Cook, uncovered, until reduced to a syrup-like consistency and about 1/2 cup (120ml) in volume, about 1 hour. Set aside.
  • Depressurize pressure cooker and remove lid (we recommend allowing it to depressurize naturally as the fat from the beef can sometimes spray through the vent when allowed to depressurize rapidly, though it is possible to do a rapid depressurization if careful). Carefully remove short ribs from pressure cooker and transfer to a clean platter (they will be very tender, so the bones may slip out; try to hold them together as you transfer them). Tent ribs with foil.
  • Skim accumulated fat from surface of braising liquid and discard. Strain braising liquid through a fine-mesh strainer set over a large heatproof bowl, pressing on solids to extract as much liquid as possible; discard vegetables and aromatics.
  • Rinse out pressure cooker, then return strained braising liquid to it. Return to heat and bring to a gentle simmer, adjusting heat to maintain simmer. Simmer, uncovered, until braising liquid is reduced to 2 cups, about 1 hour; skim any foam that accumulates on the surface as needed. Add port wine reduction to braising liquids.
  • The sauce should be thick enough to coat the back of a spoon and leave a trail when you drag your finger through it. If it's still a little thin, whisk in the cornstarch slurry and bring to a simmer until thickened slightly.

BEEF SHORT RIBS BRAISED IN STOUT (PRESSURE COOKER)

BEEF SHORT RIBS BRAISED IN STOUT (PRESSURE COOKER) image

Categories     Beef     Braise     Dinner

Number Of Ingredients 15

1 lb beef short ribs
2 Tbs brown sugar
1/2 Tsp paprika
1/2 Tsp curry powder
1/2 Tsp cumin
1/2 Tsp black pepper
1/2 Tsp salt
1/4 Tsp mustard powder
Olive oil
1 onion, 1 carrot, and 1 celery rib, chopped
1 bay leaf
2 or 3 cloves of garlic, chopped
1/2 cup broth (chicken or beef)
1 bottle stout beer
1 small can of tomato sauce

Steps:

  • Pat the ribs dry with a paper towel and set aside. Combine all of the spices in a bowl and shake to mix thoroughly. Rub all sides of the beef ribs with the spice mixture and set aside, uncovered, in the fridge for about an hour (skip the resting period if you lack the time). Take a pressure cooker and set it over medium-high heat. Add a splash of olive oil, and when it's hot and shimmery, add the short ribs and brown for 1 minute per side (watch to make sure the spice mixture doesn't stick and burn). Remove the ribs to a plate, and add another splash of oil to the pot. Throw in your onion/carrot/celery mix, along with the bay leaf. Stir that up and let that cook for about 3 minutes, or until the onion looks softish. Throw the chopped garlic in, give it a stir, and let that go for a minute or two. Add all of your liquids at this time - the beer, the broth, and the tomato sauce, and stir up the bottom of the pot to get all the sticky stuff off and into the goop. Add the ribs to the sauce, turn the heat up, and lock the pressure cooker lid on. Bring the pressure cooker up to pressure, until the excess steam steadily escapes from the valve. Reduce the heat to medium, or to the point where the pressure is maintained, and cook for 40 minutes. Rapid-release the pressure, taste for salt, and serve.

STOUT-BRAISED SHORT RIBS WITH HORSERADISH & CARROTS

Stout-braised short ribs with horseradish & carrots image

Cook these stout-braised ribs low and slow to get lovely, tender meat. It's easy to portion, plus it looks great on the plate - perfect for a family feast

Provided by Tom Kerridge

Categories     Dinner

Time 4h

Number Of Ingredients 12

2 tbsp sunflower oil
4 short ribs on the bone
1 onion, chopped
3 celery sticks, chopped
4 bay leaves
1 tbsp dried mixed herbs
1 tbsp plain flour
2 tbsp brown sugar
500ml stout
300ml beef stock
3 tbsp horseradish cream
4 carrots

Steps:

  • Heat the oven to 160C/140C fan/gas 2. Heat the oil in a casserole dish and brown the short ribs well on all sides - this will take about 10 mins. Remove the ribs to a plate, then fry the onion and celery in the dish for 5 mins. Stir in the herbs and flour, and cook for a few minutes, then stir in the sugar, stout and stock, and bring to a simmer. Add the horseradish cream and some seasoning, then nestle the ribs into the sauce. Cover the pan and cook in the oven for 1 hr.
  • Peel the carrots, keeping them whole. Remove the stew from the oven, stir gently and add the carrots. Cover and return to the oven for 2 hrs more until the ribs are tender. You can now serve the stew in a rustic style, as is. Alternatively, gently remove the ribs and carrots to a board. Strain the sauce through a sieve into a saucepan and bring to the boil, skimming off any froth that rises to the surface. Simmer for 5 mins until reduced by a third. Tip the reduced sauce back into the casserole dish, add back the ribs and carrots, and simmer for a few minutes to reheat the meat. Divide between plates and serve.
