To make the red wine sauce, heat the port and wine in a pan over a medium-high heat until reduced by half. Add the veal jus or beef stock and reduce again by half.
To make the salsa verde, place all the ingredients except the oil and mustard onto a large chopping board. Chop the herbs until finely chopped, then chop the anchovies and capers.
To cook the celeriac, heat the olive oil in a large heavy-based saucepan, then add the celeriac, garlic and chopped thyme. Season with salt and pepper and cook for 5 minutes, stirring often.
To cook the beef fillet, mix the butter with the crushed garlic and fresh thyme. Cover the beef fillet with the butter mixture, then wrap the fillet with the slices of Parma ham.
When you're ready to cook, preheat the oven to 220C/200C Fan/Gas 7. Place the beef fillets on a roasting tray and cook in the oven for 5 minutes, then turn the oven off and leave the fillets in the oven for another 2 minutes – this should cook the beef to medium rare.

Pepper the fillet, wrap in Parma ham. Heat the oil, place the fillet seam-side down in the hot oil, fry for approx. 5 mins., turning frequently. Marinate for approx. 2 mins. on a rack (with an oven tray beneath) in the centre of an oven preheated to 180°C. Reduce the temperature to 100°C, marinate for approx. 30 mins. until the core temperature is 55°C. Remove and leave to rest for approx. 5 mins.
Bring the cream to the boil. Add the Parmesan, reduce over a low heat until thick and creamy, season with salt. Set aside a few basil leaves to garnish, finely chop the rest.
