This zesty dish is a favorite of mine because it has a wonderful Southwestern taste and is easy to prepare. I serve it on nights when we have only a few minutes to eat before running off to meetings or sports events. -Joan Hallford, North Richland Hills, Texas

1 pound ground beef
1 small onion, chopped
1 can (15 ounces) pinto or black beans, rinsed and drained
1 can (10 ounces) diced tomatoes and green chiles, undrained
1 can (2-1/4 ounces) sliced ripe olives, drained
1-1/2 teaspoons chili powder
1/2 teaspoon salt
1/8 teaspoon pepper
3 drops hot pepper sauce
4 flour tortillas (8 inches)
1 cup shredded cheddar cheese
Minced fresh cilantro, salsa, sour cream, shredded lettuce and chopped tomatoes, optional

Steps:

  • Cut four 20x3-in. strips of heavy-duty foil; crisscross so they resemble spokes of a wheel. Place strips on the bottom and up the sides of a 5-qt. slow cooker. Coat strips with cooking spray., In a large skillet, cook beef and onion over medium heat until meat is no longer pink; drain. Stir in the beans, tomatoes, olives, chili powder, salt, pepper and hot pepper sauce. Spoon about 1-2/3 cups into prepared slow cooker; top with one tortilla and 1/4 cup cheese. Repeat layers three times., Cover and cook on low for 4-5 hours or until heated through. Using foil strips as handles, remove the tortilla stack to a platter. If desired, sprinkle with cilantro and serve with salsa, sour cream, lettuce and tomatoes.

When it opened in 1991, this family-owned sandwich shop was the first to serve authentic cemitas poblanas in L.A. Owner Abraham Quitl tops his homemade sesame rolls (baked daily) with meats like pulled pork and barbacoa, plus avocado, onions, jalapeños and queso blanco. Abraham makes this milanesa with breaded beef, and while he recommends using traditional cemita, he says a hard sesame seed roll will do.

4 thin beef bottom round or knuckle steaks (about 6 ounces each)
Seasoned meat tenderizer, for sprinkling
2 large eggs
1 1/2 cups milk
1/2 cup fresh breadcrumbs
1/2 cup store-bought breadcrumbs (such as Bimbo or El Mexicano)
2 pinches of dried Italian seasoning
1 pound lard, for frying
4 cemita or other sesame rolls, split and toasted
2 avocados, pitted, peeled and sliced
Kosher salt
Olive oil, for drizzling
Diced yellow onions and pickled red jalapeños, for topping
16 thin slices queso blanco or queso fresco
Handful of shredded or pinched queso Oaxaca
Papalo herbs, for topping (optional)

Steps:

  • For the milanesa: Put the meat on a large plate, sprinkle all over with meat tenderizer and refrigerate for 30 minutes.
  • Whisk the eggs in a medium bowl, then whisk in the milk. In another bowl, mix both breadcrumbs and the Italian seasoning. Dip the meat in the egg mixture and soak it for 15 seconds, then remove and dredge in the breadcrumb mixture to coat on both sides. Transfer to a plate and refrigerate for at least 10 minutes.
  • Melt the lard in a large skillet over medium-high heat until hot. Add the breaded meat and cook until golden brown, flipping halfway through, about 3 minutes. Transfer the milanesa to a paper towel-lined plate to drain.
  • Place the milanesa on the bun bottoms. Lay the avocado over each milanesa, then season with salt and drizzle with olive oil. Top with yellow onions and pickled jalapeños, then add the queso blanco or queso fresco, followed by the queso Oaxaca. Sprinkle with herbs, if using, then add the bun top.

Four 4-ounce chicken cutlets (about 1/4-inch thick)
Salt and freshly ground black pepper
1 cup all-purpose flour
1 cup plain breadcrumbs
2 large eggs, beaten
Vegetable oil, for frying
4 bolillo or telera rolls or French bread
Mayonnaise, optional
Twelve 1/4-inch slices avocado
12 slices pickled jalapeno or 4 canned chipotles in adobo
12 thin slices white onion
Eight 1/4-inch slices tomato
4 leaves iceberg lettuce
8 lime wedges, for garnish

Steps:

  • Sprinkle the cutlets with salt and pepper all over. Put the flour on a plate and season with salt and pepper. Put the breadcrumbs in a second plate and the beaten eggs in a shallow bowl. Dip the cutlets into the flour, then the eggs and finally into the breadcrumbs, pressing down on both sides so that the breadcrumbs adhere to the meat.
  • Heat enough oil in a large skillet to come 1/3-inch up the sides of pan until a deep-frying thermometer inserted in the oil reaches 350 degrees F. Working in two batches, pan-fry the cutlets until golden, about 2 minutes per side. Using a slotted spoon, transfer to some paper towels to drain.
  • To assemble the sandwiches, halve the rolls horizontally. Pull out the soft center of the bread slices and discard. Place the cutlets on the bottom halves of the rolls and top with mayonnaise if using, the lettuce, tomato, avocado, onion and jalapeno. Arrange the sandwiches on serving plates and garnish with lime wedges.

2 tablespoons canola oil
1 egg
1/4 cup dry bread crumbs
1 (1/2-pound) flank steak, pounded flat to 3 by 4 by 1/8 inches
1 French bread roll
2 tablespoons mayonnaise
1/2 avocado, cut into 4 slices
1/2 tomato, thinly sliced
1/4 cup mesclun greens
1/2 red onion, thinly sliced
1 pickled jalapeno

Steps:

  • In a skillet, heat 2 tablespoons of oil.
  • In a shallow bowl, lightly beat the eggs. In another shallow bowl, put the bread crumbs. Dip the beef in the egg, then in bread crumbs, carefully coating both sides.
  • Saute the meat in the hot oil until the bread crumbs are browned on both sides, about 3 minutes per side. Remove the meat from the oil, but keep the skillet and oil warm. Cut the meat into 1/2-inch strips.
  • Cut the roll in half lengthwise and pull out the soft center from both sides. Cover the bottom side with mayonnaise and beef strips. Place 4 ripe avocado slices on the other side and spread the slices, like a thick butter. Layer 4 slices of tomato on top of the beef and cover with a mound of mixed greens, some sliced onion, and the pickled jalapeno.
  • Put the torta back in the skillet and brown the roll, pressing down with a spatula. When brown on both sides, cut and serve.

For Cracker Meal:
40 saltine crackers
1 teaspoon Mexican oregano
1/2 teaspoon pepper
1/2 teaspoon garlic powder
1/2 teaspoon smoked paprika
1/2 teaspoon cumin
1/4 teaspoon Cayenne pepper
I don't add any extra salt because the crackers are already salted
You will also need:
1 pound beef for milanesa, 3 steaks sliced thin
beef, such as top round can be used, pounded out thin
Salt and pepper
3 large eggs, lightly beaten
2 cups chopped or shredded lettuce
2 Roma tomatoes, sliced
1 large avocado, sliced
1 cup red onions, sliced thin
Handful of chopped cilantro
1/2 cup canola or olive oil
1 cup refried beans
6 rolls for tortas, bolillos or sub rolls (6 inches)
1 cup of your favorite salsa

Steps:

  • 1. Add the crackers to the food processor, along with the spices listed. Pulse, then process on high until you get a fine cracker meal. Transfer to a shallow dish, set aside. 2. Season the beef lightly with salt and pepper and transfer to a plate until ready to use. In another shallow dish, lightly beat the eggs. Prep your vegetables, cover until ready to use. 3. Preheat 1/2 cup of oil to medium heat for 5 minutes. Dip the beef into the egg to cover, then coat with cracker meal using hands to gently press onto beef. 4. Once oil is hot, cook the milanesa for about 3 minutes per side or until golden brown. Try not to move it too much or the breading may come off. Transfer to a plate and cover loosely with foil paper to keep warm. When you are frying the last piece, heat the refried beans until warm. 5. Slice the milanesa in half so you have 6 equal pieces.To the roll, spread with refried beans, lettuce, tomato, avocado, beef milanesa, onions and salsa. Serve with crispy potato wedges. Tips: To quick-pickle the red onions, squeeze the juice of 1 lemon over the onions. Add 2 tablespoons of olive oil and season with salt and pepper to taste. Do this first thing so the onions have time to pickle while you cook. If you don't eat beef, this recipe can also be prepared with chicken.

1 cup all-purpose flour, for dredging

Vegetable oil, for shallow frying
4 Bolillo or Telera rolls or French bread
Chipotle Mayonnaise, recipe follows
4 lettuce leaves optional
Eight 1/4-inch slices tomato
Twelve 1/4-inch slices avocado
12 thin slices white onion
12 pickled jalapeno slices or 4 canned chipotles in adobo
8 lime wedges, for garnish
1 canned chipotle chile in adobo sauce or 1/2 teaspoon hot sauce
1 teaspoon fresh lime juice
1/4 cup mayonnaise
Salt and freshly ground black pepper

Steps:

  • Season the cutlets with salt and pepper, to taste. Put the flour in a dinner plate and season with salt and pepper. Put the bread crumbs in a second plate and the beaten eggs in a shallow bowl. Dip the cutlets into the flour, then the eggs and finally into the bread crumbs, pressing down on both sides so that the bread crumbs adhere to the meat.

1 large egg
1/2 cup all-purpose flour
1/4 teaspoon salt (to taste)
1/8 teaspoon fresh ground pepper (to taste)
1/2 cup fine breadcrumbs
4 thin boneless beef steaks (1/4 inch) or 4 cube steaks, pounded thin (1/4 inch)
vegetable oil (for frying)
1 lime, quartered

Steps:

  • Pound boneless steaks thin, ¼ inch.
  • In a shallow soup plate or pan, beat the egg very well. In a second shallow pan mix the flour, salt, and pepper. Put the bread crumbs in a third shallow pan. Line up the bowls in this order: flour, egg, crumbs.
  • Dust the meat lightly with flour, dip into the beaten egg, and coat with bread crumbs. Put the breaded meat on a plate lined with wax paper and refrigerate about 1 hour.
  • In a large nonstick skillet, heat oil to a depth of about ¼ inch.
  • Fry the meat until brown and crisp, 3 to 4 minutes on each side. Squeeze lime juice over each piece of meat, if desired.
