1 1/2-2 lbs chuck roast
3 tablespoons olive oil
2 tablespoons mustard
1 teaspoon paprika
1/2 teaspoon coarse salt
1/2 teaspoon black pepper
12 ounces beer
2 tablespoons flour
2 tablespoons tomato paste
1 cup beef broth (or chicken)
1 large onion
6 carrots

Steps:

  • Heat oil in pressure cooker ( medium).
  • Brown beef on both sides, then remove and set aside.
  • Add to same pan: small amount of beer and loosen/stir up bits.
  • Add flour and tomato paste to pan and cook over medium for one minute.
  • Place the meat and everything else ( and the rest of the beer ) in the pan.
  • Close this lid and cook on high pressure for about 1 hour.
  • Let pressure come down naturally.
  • Serve over rice or noodles.

1 fresh beef brisket (2-1/2 to 3 pounds)
2 teaspoons liquid smoke, optional
1 teaspoon celery salt
1/2 teaspoon pepper
1/4 teaspoon salt
1 large onion, sliced
1 can (12 ounces) beer or nonalcoholic beer
2 teaspoons Worcestershire sauce
2 tablespoons cornstarch
1/4 cup cold water

Steps:

  • Cut brisket in half; rub with liquid smoke if desired, celery salt, pepper and salt. Place brisket fatty side up in a 6-qt. electric pressure cooker. Top with onion. Combine beer and Worcestershire sauce; pour over meat. Lock lid; close pressure-release valve. Adjust to pressure-cook on high for 70 minutes. Allow pressure to naturally release for 10 minutes; quick-release any remaining pressure. If brisket isn't fork-tender, reseal cooker and cook for an additional 10-15 minutes. , Remove brisket, cover with foil and keep warm. Strain cooking juices, then return juices to pressure cooker. Select saute setting and adjust for medium heat; bring liquid to a boil. In a small bowl, mix cornstarch and water until smooth; gradually stir into juices. Cook and stir until sauce is thickened, about 2 minutes. Serve sauce with the beef.

1 ½ teaspoons garlic powder
1 ½ teaspoons onion powder
1 (12 ounce) bottle beer

Steps:

  • Place brisket fat-side up on a rack inside an electric pressure cooker. Sprinkle garlic powder and onion powder over brisket; pour beer into the pot.
  • Seal pressure cooker and cook beef on the "meat" setting according to manufacturer's instructions, about 1 hour 30 minutes. Allow pressure to release naturally according to manufacturer's instructions.
  • Transfer brisket to a cutting board. Remove top layer of fat from the brisket. Slice across the grain using an electric knife.

1 beef top sirloin steak (1 pound), cubed
1/2 teaspoon salt
1/4 teaspoon pepper
1/3 cup dry red wine or beef broth
1/2 pound sliced baby portobello mushrooms
1 small onion, halved and sliced
2 cups beef broth
1 tablespoon Worcestershire sauce
3 to 4 tablespoons cornstarch
1/4 cup cold water
Hot cooked mashed potatoes

Steps:

  • Select saute setting on a 6-qt. electric pressure cooker and adjust for medium heat. Add 2 teaspoons oil. Sprinkle beef with salt and pepper. Brown meat in batches, adding oil as needed. Entered for safe-keeping, from "Quick Cuisine" by Kuhn Rikon. This recipe calls for the vegetables and sauce to be pureed after cooking, to be used as a sauce over the meat. Personally, I would prefer it chunky. The sauce is also good served over vegetables, especially mashed potatoes. I hear Chimay beer from Belgium is the best.

1 lb beef top round steak or 1 lb flank steak, pounded into thin 3x4-inch pieces
2 tablespoons dijon-style mustard
salt & freshly ground black pepper
1 teaspoon paprika
2 tablespoons olive oil
12 ounces dark beer
2 tablespoons flour
1 tablespoon tomato paste
1 cup beef broth
1 medium onion, peeled and chopped
2 carrots, peeled and sliced
1 leek, white part only, sliced

Steps:

  • Mix mustard, salt, pepper and paprika together and spread both sides of each piece of beef with mixture. (The beef can be marinated for 15 minutes to 2 hours in the refrigerator, covered.).
  • In a 2-quart Pressure Frypan, heat 1 tablespoon oil.
  • Brown each piece of beef over high heat. Remove and set aside. Add more oil as needed until each piece is browned.
  • Add a small amount of the beer to pan and stir to loosen any brown bits that may be sticking. Stir in flour and tomato paste, adding beer to make paste-like consistency.
  • Place beef back in pan on top of the paste mixture. Add onion, carrots, leek, remaining beer and broth.
  • Close lid and bring pressure to 1st red ring (low pressure) over high heat. Adjust heat to stabilize pressure at 1st red ring. Cook for 15 minutes.
  • Remove from heat and use Natural Release Method.
  • Remove beef. Puree vegetables in a food processor, blender or mill.
  • Adjust seasoning to taste.
  • Arrange beef on warm platter and cover with pureed vegetable sauce.

This beef stew was made for us when we were just infants, my mother used to put it in the blender for us as babies. To this day it reminds me of home. The pressure cooker makes the meat fall apart tender and cooks up in 20 minutes.

1 tablespoon vegetable oil
1 small onion, diced
2 pounds cubed beef stew meat
5 carrots, peeled and diced
8 medium baking potatoes, peeled and cubed
2 cubes beef bouillon
2 cups water
2 teaspoons cornstarch
2 teaspoons salt, or to taste

Steps:

  • Heat the oil in the bottom of the pressure cooker over medium-high heat. If your cooker has an insert, remove it and cook directly in the bottom of the pot. Add the onion and beef, and cook until browned on the outside.
  • Stir in the water, bouillon cubes and carrots, close the lid, and secure the pressure regulator. Heat until you start to hear sizzling, then reduce the heat to medium, and set your timer for 20 minutes. If you have an adjustable pressure regulator, set it for 10 pounds of pressure.
  • Meanwhile, place the potatoes in a saucepan with enough water to cover. Bring to a boil, and cook until tender, about 10 minutes. Drain. This whole process should take about the same amount of time as the rest of the stew.
  • When the 20 minutes are up, release the pressure from the pot according to the manufacturer's instructions - mine needs to sit under cold running water for 5 minutes until the lid can be released.
  • Remove the lid, and place the pot over medium heat. Bring to a boil. Stir the cornstarch into a small amount of cold water to make a slurry. Stir this into the stew, and cook for a few minutes. Add the potatoes to the stew, or place them in serving dishes, and ladle the stew over them.
