BARBECUE BEEF CUPS
This is a quick and easy recipe given to me by a friend. My family loves it.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Grease the cups of a muffin pan.
- In a large heavy skillet over medium heat, cook beef until evenly brown. Drain excess fat. Stir in barbeque sauce and dried onion. Simmer for a few minutes over low heat.
- Flatten each biscuit, and press into cups of the prepared muffin pan. Make sure the dough comes to the top of the pan. Spoon a portion of the meat mixture into each dough cup.
- Bake in preheated oven for 12 minutes. Sprinkle with cheese, and bake for 3 more minutes.

- In a large skillet, cook beef over medium heat until no longer pink, breaking into crumbles; drain. Stir in the spaghetti sauce; cook over medium heat for 5-10 minutes or until heated through. , Press biscuits onto the bottom and up the sides of greased muffin cups. Spoon 2 tablespoons beef mixture into the center of each cup. , Bake at 375° for 15-17 minutes or until golden brown. Sprinkle with cheese; bake 3 minutes longer or until cheese is melted.

- Preheat oven to 375°. Mix the first 5 ingredients. Add beef; mix lightly but thoroughly. Press about 1/3 cupful into each of 12 ungreased muffin cups., Bake 15 minutes. Brush tops with 3 tablespoons ketchup; bake until a thermometer reads 160°, 5-7 minutes. If desired, serve with additional ketchup. , Freeze option: Bake meat loaves without ketchup; cover and freeze on a waxed paper-lined baking sheet until firm. Transfer meat loaves to an airtight freezer container; return to freezer. To use, partially thaw in refrigerator overnight. Place meat loaves on a greased shallow baking pan. Spread with ketchup. Bake in a preheated 350° oven until heated through.

SPICY BEEF IN LETTUCE CUPS
Just about any large leaf lettuce can be used to create cups or folded packets for this spicy Szechuan-style dish of ground beef. The filling is also good on flour tortillas or pita pockets with shredded lettuce. It makes a great warm weather light dinner, perfect for sharing with friends! This recipe was printed in the food section of the December 17, 2008 Houston Chronicle and was adapted from "Quick and Easy Chinese".

Steps:
- In a small bowl,combine soy sauce,sherry,cornstarch, sugar and salt; stir well and set aside.
- In a medium bowl, use a spoon to break up the ground beef; gently mix in soy-sauce mixture. Set aside 10 to 15 minutes.
- Heat wok or large, deep skillet over medium-high heat until very hot.
- Add oil and swirl to coat pan; add ginger and garlic.
- Cook for about 1 minute, stirring, until fragrant but not browned.
- Crumble in beef, and use spatula or large slotted spoon to break it up and spread meat over pan to help it cook evenly.
- Cook until it changes color on one side, 1 to 2 minutes.
- Turn meat and cook another minute undisturbed.
- Toss well, using a spatula to break up any large chunks.
- When meat is cooked, add pepper flakes and scallions, then toss well.
- Add sesame oil and remove from heat, tossing until sesame oil is well blended.
- Transfer meat to serving plate; serve hot,warm or at room temperature.
- Arrange lettuce cups on serving platter; fill each with a spoonful of beef or provide lettuce cups and plate of beef and let guests assemble lettuce packets themselves.

- Preheat oven to 375.
- Brown beef, drain off fat.
- Return beef to skillet add ketchup, brown sugar, vinegar, chili powder, onion salt, garlic powder and pepper.
- Let simmer 5 minutes.
- Spray muffin tins with Pam*.
- Press biscuits in tin, pressing to cover bottom and sides.
- Spoon about 1/4 cup (approximately) of meat mixture into each biscuit lined cup.
- Top with cheese.
- Bake for 18-20 minutes or until golden brown.

BEEF BISCUIT CUPS
These have reached comfort food status in my house. Very easy to make, spices can be added to personal taste, same with types of cheese, sauce, etc. This can easily be adjusted to a lower fat version by adjusting the ground beef fat content, biscuits and cheese. I am sure there are lots of these recipes or similar variations floating around the Zaar.

This is a great recipe, easy to make, and popular with kids! You can use different flavors of barbecue sauce and different kinds of refrigerator biscuits as well (although I recommend the Pillsbury Grands sized ones as easiest to use).

- In a skillet over medium heat, cook beef until browned; drain off drippings.
- Stir in the barbeque sauce and onion; simmer on low for 10 minutes.
- Flatten each biscuit with your hand or a rolling pin and press into the cups of the muffin tin; the dough needs to come to the top of each cup.
- Place a portion of the beef mixture into each dough cup.
- Bake at 350 degrees for 12 minutes.
- Remove from oven, sprinkle each cup with grated cheese, and bake for an additional 3 minutes or until cheese is melted.
- Makes 4 to 6 servings.
