BANGERS & MASH (SAUSAGE WITH ONION GRAVY)



Bangers & Mash (Sausage with Onion Gravy) image

Recipe video above. Everybody loves a good sausage recipe, and this is the great British classic! Affectionately known as "Bangers and Mash" to Aussies and Brits, this is so easy to make, you will never ever use a store bought gravy powder!

1/2 tbsp oil
8 sausages of choice ((Note 1))
1 large onion (, halved and finely sliced (yellow, white or brown) (Note 2))
2 garlic cloves (, minced)
3 tbsp flour ((plain))
2 cups beef stock/broth
1/4 tsp salt
1/2 tsp black pepper
Mashed potato
Peas

Steps:

  • Cook sausages: Heat oil in a large skillet / fry pan over medium high heat. Add sausages and cook, turning, until browned as much as possible all over and cooked through. Cook time will differ depending on sausage size - mine take around 8 minutes.
  • Remove sausages onto a plate. Turn heat down to medium.
  • 2 tbsp oil remaining: You need around 2 tbsp oil left in the skillet. If you have much less, add a bit of butter or oil.
  • Saute onion and garlic: Add onion and garlic, cook until golden brown - around 4 minutes.
  • Cook off flour 2 minutes: Add flour and mix through. Then cook, stirring constantly for 2 minutes.
  • Gradually add beef stock: Add about 3/4 cup of beef broth and mix into the onion so it becomes a sludge. Then add remaining beef broth and mix until combined. If it's lumpy, use a whisk to help make it smooth.
  • Thicken gravy: Simmer, stirring, for 2 to 3 minutes until the gravy thickens but is slightly thinner than you want - it will thicken more as you serve it.
  • Season: Add salt and pepper. Stir, taste, then add more salt if you want.
  • Serve sausages with plenty of gravy, with mashed potato and peas on the side. (Low carb option - Creamy Cauliflower Mash)

This freezes well.surprize company with home made sausage. My husband grandparents escaped and came across the Atlantic the beginning 1900. They brought this recipe to Dickinson, ND got free land set up a farm and made everything from scratch, raising 10 children.

2 lb ground beef
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp cracked black pepper
1 tsp ground cumin
1/4 tsp savory season
1/2 tsp oregano, dried
1/2 tsp celery powder
1/2 tsp fennel seed
1/2 tsp chili flakes
1 tsp sage, dried
1 tsp marjoram, dried
1/2 tsp turmeric, ground
1/2 tsp paprika
1/2 tsp salt

Steps:

  • 1. MIX all spices together. ADD ground beef and blend well.
  • 2. ROLL sausage in 5 X 1 1/2 inch logs, ROLL up with foil, close ends. REFREGERATE up to 24 hours to let flavors season.
  • 3. HEAT oven. BAKE 350 for 30 minutes on cookie sheet WITH the foil on.
  • 4. (you can make patties and cook sooner if desired also beef can be 80/20 or lean also this is very good remove from foil and lightly fry...serve with breakfast, dinner, on a bun.)

  • In a medium bowl, combine the ground chuck with the sausage just until they are thoroughly mixed. Form the meat into four 4-inch patties, about 3/4 inch thick. Season the patties with salt and pepper.
  • In a large cast-iron skillet, heat the olive oil until shimmering. Add the patties to the skillet and press down slightly with a spatula to flatten them to a 1/2-inch thickness. Cook the patties over moderately high heat until very crusty on the bottom, 2 to 3 minutes. Flip the patties and cook until well browned, about 2 minutes more. Top each patty with 2 slices of the Monterey Jack cheese and add the water to the skillet. Cover the skillet and cook over moderate heat until the cheese slices are melted and the burgers are cooked all the way through, 1 to 2 minutes.
  • Set the cheeseburgers on the toasted buns and top with the cilantro leaves and sliced pickled peppers. Close the burgers and serve right away.
