This is a recipe that I put together, out of several different ones. It's very easy and very good.

3 cups all-purpose flour
¾ teaspoon salt
1 teaspoon baking soda
2 cups white sugar
1 teaspoon ground cinnamon
1 cup chopped walnuts
3 eggs, beaten
1 cup vegetable oil
2 cups mashed very ripe banana
1 (8 ounce) can crushed pineapple, drained
2 teaspoons vanilla extract
1 cup flaked coconut
1 cup maraschino cherries, diced

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease two 9x5 inch loaf pans.
  • In a large mixing bowl, combine the flour, salt, baking soda, sugar and cinnamon. Add the walnuts, eggs, oil, banana, pineapple, vanilla, coconut and cherries; stir just until blended. Pour batter evenly into the prepared pans.
  • Bake at 350 degrees F (175 degrees C) for 60 minutes, or until a tooth pick inserted into the center of a loaf comes out clean. Cool in the pan for 10 minutes, then remove to a wire rack to cool completely.

3 cups flour
2 cups sugar
1 teaspoon baking soda
1 teaspoon cinnamon
1 cup chopped walnuts
1 cup coconut
2 teaspoons vanilla
3 eggs, beaten
1 1/4 cups vegetable oil
2 cups mashed bananas (4 large)
1 (8 ounce) can crushed pineapple (well drained)

Steps:

  • In large bowl combine flour, sugar, baking soda and cinnamon; stir in nuts and coconut.
  • Set aside.
  • In separate bowl, combine remaining ingredients and stir until just moist.
  • Mix together dry ingredient mixture and wet ingredient mixture.
  • Pour into 2 *prepared loaf pans.
  • Bake at 350F for approximately 1 hour 15 minutes (depending on altitude).
  • Check center of loaf with toothpick and if it comes out clean, it�s done.
  • Cool before removing from pan (about 15 min).
  • * Prepared loaf pans: Line bottom with wax paper and grease and flour sides. Bottom will burn before cooked if not lined.

2 cups flour
1 teaspoon baking powder
½ teaspoon baking soda
¼ teaspoon salt
½ cup butter, softened
1 cup sugar
2 eggs
1 very ripe banana, mashed
20 oz can of crushed pineapple in juice, not drained
¼ cup shredded coconut, sweetened

Steps:

  • Preheat oven to 350°
  • In a large mixing bowl, combine the butter and sugar with an electric mixer on low speed until creamy.
  • Add eggs and continue to gently mix
  • Slowly mix in the mashed banana and pineapple
  • In a separate mixing bowl, combine the flour, baking powder, baking soda, and salt.
  • Add the dry ingredients to the wet ingredients
  • Stir in the shredded coconut
  • Pour batter into a loaf pan prepared with non-stick spray or parchment paper
  • Bake for 1 hour
  • All the bread to cool completely before removing it from the pan
  • Cut into slices and enjoy alone, with butter, or with ice cream!

ALOHA HAWAIIAN BANANA BREAD

I love this recipe because it uses really ripe bananas that you can catch on sale so it saves money and because Splenda works well in it. I've never tried the other national brands of artificial sweeteners, so I can't comment on how they'll work. You can also make this with regular sugar. If you do, OMIT the honey. Macadamias are very expensive, but wonderful in this recipe. Pecans and walnuts work just as well. Use either or a mixture of the two for an extra kick. Try it for breakfast with a cup of hot tea or coffee. This recipe yields 2 good size loaves so you can enjoy one now and freeze the other or pass it along to a friend.

3 cups all-purpose flour or 3 cups bread flour
3/4 teaspoon salt
1 teaspoon baking soda
2 cups Splenda sugar substitute
1 teaspoon ground cinnamon
1 cup chopped nuts (macadamias are preferred)
3 eggs, beaten
1 cup canola oil or 1 cup olive oil
2 cups mashed ripe bananas
1 (8 ounce) can crushed pineapple, in its own juice, drained
2 teaspoons vanilla extract
2 tablespoons honey
bakers joy cooking spray (or extra flour and shortening)

Steps:

  • Your will need two (8 1/2x4 1/2x3) loaf pans.
  • Preheat oven to 350 degrees.
  • Spray two (8 1/2x4 1/2x3) loaf pans with Bakers Joy (or grease and flour) and set aside.
  • In a medium bowl, combine the first 5 ingredients and stir with a wire wh.isk to blend well.
  • Stir in nuts to combine and set aside.
  • In another bowl, combine the eggs, oil, mashed bananas, pineapple, vanilla and honey (if you're using Splenda) Stir lightly just to mix.
  • Add the wet ingredients to the dry and mix only enough to moisten the dry.
  • DO NOT overmix or your bread will be tough and heavy.
  • Its ok to have some lumps.
  • Spoon the dough into the two pans,making sure to divide it equally between the two.
  • Bake for about 1 hour to 1 hour 10 minutes.
  • A good rule of thumb is to check after about 50 minutes.
  • Insert a toothpick or bamboo skewer into the center to test for doneness.
  • This bread will crack--don't worry.
  • Once done, remove to wire racks and cool for about 10-12 minutes in pans.
  • Turn the bread out carefully onto the racks.
  • Allow it to sit for about 15 minutes upside down, then carefully turn right side up to finish cooling.
  • As with any bread, slice with a serrated knife and enjoy.
  • Just a note--if you use Splenda or any artificial sweetener, the shelf life will be shorter and texture may not be the same than if you had used real sugar.

1/2 cup butter, softened
1 cup Domino® or C&H® Pure Cane Granulated Sugar
2 eggs
1 cup mashed ripe banana (about 2 to 3 medium)
1/2 cup sour cream
2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon salt
1 cup chopped macadamia nuts, toasted
2 tablespoons candied or crystallized ginger, optional

Steps:

  • In a large mixing bowl, cream butter and sugar until light and fluffy. Add eggs, beating well after each addition. Stir in bananas and sour cream. Combine the flour, baking powder, baking soda and salt. Stir into banana mixture just until moistened. Fold in nuts and ginger if desired., Pour into a greased 9-in. x 5-in. loaf pan. Bake at 350° for 50-60 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pan to wire rack to cool completely.

From a cookbook entitled "Food Editors' Favorites: Treasured Recipes". The bananas should be almost over-ripe. Be absolutely certain to use cake flour and sift three times like the recipe calls for. Sounds odd, I know, but the bread really doesn't turn out the same without doing that. It's like magic! :) This freezes very well.

1 cup margarine
6 very ripe bananas, mashed
4 eggs, well beaten
2 1/2 cups cake flour
1 teaspoon salt

Steps:

  • Preheat oven to 350 degrees Farenheit.
  • Cream sugar and margarine.
  • Add bananas and eggs.
  • Sift cake flour, salt, and baking soda 3 times.
  • Blend flour mixture into banana mixture, making sure not to overmix.
  • Turn batter into 2 greased 9x5x3-inch loaf pans.
  • Bake for 55 minutes, or until toothpick inserted in center of loaf comes out clean.
  • Turn out immediately to cool on wire rack.
