ONE-POT WHITE BEAN PASTA
This quick white bean pasta makes a wonderful One-pot family meal ready in less than 15 minutes. It's everything you want in a pasta dish: it's comforting, packed with fresh ingredients, BIG flavor, protein, veggies, and it's no fuss.

Steps:
- Warm the olive oil in a large pot over medium heat. Add the minced garlic and cook until fragrant and smells good, about 45 seconds.
- Add paprika, chili flakes, beans, black pepper, and give a good stir.
- Add hot water or low sodium vegetable broth, salt, turn to high heat and bring to the boil.
- Stir in pasta, reduce the heat to medium-low, cover with a lid and cook stirring frequently. The amount of liquid is enough to partially cover the pasta (but keep an eye on it to make sure the pasta doesn't stick to the bottom of the pot, and add a touch of water if needed).
- In the last 2 minutes of the pasta's cooking time, add fresh spinach, a handful at a time, and cherry tomatoes. Stir until the spinach is wilted, it takes a couple of minutes.
- Turn off the heat, finish the dish with freshly grated parmesan, and give a good stir until the cheese melts and the pasta looks well combined (taste and adjust the season according to your taste if needed).
- Serve immediately with a drizzle of extra virgin olive oil, more freshly ground black pepper and parmesan cheese if you like. Enjoy!

- In large skillet, heat oil.
- Add garlic and tomatoes.
- Cook & stir until tomatoes are slightly soft, about 2 minutes.
- Add beans, broth & spinach & cook until spinach just wilts, stirring constantly.
- Season with salt and pepper.
- Meanwhile, cook pasta according to package directions.
- Drain pasta and add to skillet.
- Add in cheeses, toss lightly & serve immediately.

FARFALLE WITH SPINACH AND GARBANZO BEANS

- Heat 1 teaspoon oil in heavy large nonstick skillet over medium heat. Add onion and garlic and sauté until tender, about 10 minutes. Pour in chicken broth and simmer until liquid is reduced by half, about 4 minutes. Add garbanzo beans and spinach and boil 1 minute. Transfer spinach mixture to large bowl. Add pasta. Drizzle pasta with remaining 2 teaspoons olive oil and toss. Season pasta generously with pepper; sprinkle with grated Parmesan and toss well. Serve.

- Halve squash lengthwise; discard seeds. Place squash on a microwave-safe plate, cut side down. Microwave, uncovered, on high until tender, 9-11 minutes. Cool slightly. Meanwhile, in a 6-qt. Dutch oven or stockpot, cook pasta according to package directions. Drain; return to pot., In a large skillet, heat oil over medium-high heat; saute mushrooms and onion until tender. BOWTIE PASTA WITH WHITE KIDNEY BEANS & SPINACH
Sounds odd, but this recipe is so good. I'm not cooking for a while due to the heat. So no picture right now! But as soon as it cools down, I'm making this again and will post what it looks like. Years ago I found it in a magazine while waiting in the Dr's office and made a copy and brought it home and tried it.

Steps:
- 1. In large saucepan, cook pasta as directed on package.
- 2. Just before draining pasta, stir the spinach into the cooking pasta; leave in only until it wilts.
- 3. Drain pasta and spinach and return to saucepan and keep warm.
- 4. Meanwhile,add oil and heat over medim-high heat in a skillet
- 5. Add onion and cook until golden brown, 10 to 12 minutes.
- 6. In a bowl or large measuring cup, mix broth, cornstarch, salt and crushed red pepper and stir to mix.
- 7. Add to skillet along with beans and cook over med heat until sauce boils and thickens slightly, about one minute.
- 8. Add sauce to pasta and spinach in saucepan and toss to mix well.
- 9. Sprinkle with Romano cheese and serve. May use Parmesan if prefered.
