VIRGINIA'S GREEN BEANS PROVENCAL



Virginia's Green Beans Provencal image

Salt
1 1/2 pounds haricots verts, ends trimmed
1 tablespoon olive oil
1 clove garlic, very finely chopped
2 tomatoes, diced
15 kalamata olives, pitted and halved
2 tablespoons freshly chopped basil leaves
1 tablespoon red wine vinegar
Freshly ground black pepper

Steps:

  • Prepare an ice-water bath by filling a large bowl with ice and water
  • Bring a large pot of salted water to a rolling boil over high heat. Add the beans and cook until crisp-tender, about 2 minutes. Drain well in a colander, then set the colander with beans in the ice-water bath, making sure the beans are submerged. Drain the beans, shaking off the excess water.
  • In the same pot, heat the oil over low heat. Add beans, garlic, tomatoes, olives and basil, and toss to combine. Drizzle vinegar over beans and toss to coat. Taste and adjust for seasoning with salt and pepper. Serve hot, warm, or cold.

2 tablespoons olive oil
1 chopped onion
2 cloves garlic, sliced
1/4 teaspoon red pepper flakes
Salt and freshly ground black pepper
2 cups kale, washed, stems trimmed and chopped
1 (15- ounce) can cannellini beans, drained
3/4 cup chicken stock

Steps:

  • Heat olive oil over medium heat in a large Dutch oven.
  • Add onion and garlic slices. Saute until tender about 3 minutes. Add the red pepper flakes and salt and pepper; stir until fragrant. Add the kale and let saute until it cooks down slightly. Add the beans and the chicken stock.
  • Cover and let cook for 10 minutes.

1 1/2 tablespoons olive oil
1 small onion, thinly sliced crosswise into half-moons
1 tablespoon minced garlic (about 2 cloves)
1 head escarole, washed well and stems trimmed
1 1/2 cups chicken stock
1/2 teaspoon dried thyme
3/4 teaspoon salt
1 can (15 1/2 ounces) cannellini or other white beans, drained and rinsed
Grated Parmesan cheese, for garnish

Steps:

  • In a large nonstick skillet, heat oil over medium-high heat. Add onion, and cook, stirring occasionally, 2 minutes. Add garlic, and cook 2 minutes more. Add escarole, and stir slowly, allowing it to wilt slightly. Add chicken stock, thyme, and salt; reduce heat to medium-low. Simmer for 15 minutes. Stir in the beans, and continue to simmer until most of the liquid is absorbed and the greens are tender, 3 to 5 minutes. Remove from heat. Serve warm, garnished with grated Parmesan cheese.

1 teaspoon salt
2 heads escarole, cut into 2-inch pieces
¼ cup olive oil
3 cloves garlic, pressed
1 teaspoon salt, or more to taste
½ teaspoon black pepper
¼ teaspoon red pepper flakes
1 (15 ounce) can cannellini beans, drained and rinsed
1 tablespoon Parmesan cheese, or to taste

Steps:

  • Pour enough water into a large pot to be about 2 inches deep; bring to a boil. Stir 1 teaspoon salt into the boiling water; add escarole. Cook the escarole at a boil, pushing the escarole further into the water as it wilts, until it is fork-tender, 3 to 5 minutes; drain.
  • Pour olive oil into the pot and place over medium heat. Cook and stir garlic, 1 teaspoon salt, black pepper, and red pepper flakes in hot oil until the garlic is soft, 3 to 5 minutes. Stir drained escarole and cannellini beans into the garlic mixture; cook and stir until the beans are hot, 5 to 10 minutes. Sprinkle Parmesan cheese over the mixture just before serving.

1/4 cup olive oil
1 cup diced onion
1 tablespoon minced garlic
8 cups chicken stock
1 (14 1/2 ounce) can diced tomatoes
1 teaspoon granulated sugar
1/4 teaspoon red pepper flakes, to taste
1/2 teaspoon salt
1/2 teaspoon pepper
3/4 teaspoon herbes de provence
2 (15 ounce) cans great northern beans, drained
2 (15 ounce) cans red kidney beans, drained
2 bunches collard greens, cut into 2 inch pieces, washed and dried

Steps:

  • Heat oil in a large Dutch oven over medium heat. Add onions and cook until just soft. Add garlic and cook, stirring constantly, until garlic just begins to brown. Add the stock, beans and kidney beans. Bring to a boil. Reduce heat to low and simmer 30-45 minutes. Add greens and cook until just tneder, another 5-10 minutes.
  • Serve over rice with Parmesan cheese if desired.

1 lb fresh green beans, trimmed and broken in 2-in lengths
1/4 cup water
2 -4 teaspoons olive oil
1/2 cup sliced green onion
4 garlic cloves, minced
2 tablespoons shallots, minced
1 1/2 cups grape tomatoes, halved
2 teaspoons fresh rosemary, or
1/2 teaspoon dried rosemary
2 tablespoons minced fresh basil, or
2 teaspoons dried basil
salt and pepper

Steps:

  • Place the green beans and water in a large skillet.
  • Bring to a boil, cover and reduce heat; steam 5 to 8 minutes or until crisp tender.
  • Drain well and set aside.
  • Over medium-high heat, heat oil in skillet; add rosemary until fragrant.
  • Add onion, garlic and shallots; saute 1 minute.
  • Add green beans; saute 3 minutes.
  • Add tomatoes and basil; saute 2 minutes.
  • Serve.

1 pound pork roast, diced
3 teaspoons minced garlic
1 (15 ounce) can gandules (pigeon peas), drained (such as Goya®)
1 cup recaito (such as Goya®)
1 (1.41 ounce) package sazon seasoning with achiote
1 (5 ounce) jar pitted green olives
3 cups long grain rice, rinsed
water as needed

Steps:

  • Heat a large stockpot over medium-high heat. Add pork and saute until browned, about 7 minutes. Stir in garlic and heat until fragrant. Add gandules, recaito, sazon seasoning, and olives. Reduce heat and simmer for about 10 minutes.
  • Add rice to the pot and stir to coat. Add 1 1/2 cans' worth of water; bring to a boil and cover. Simmer until rice has absorbed most of the liquid and formed a "crust" on the bottom, 20 to 30 minutes. Stir mixture near the top, avoiding the crust, after 20 minutes.

Braised White Beans and Greens With Parmesan image

Inspired by the Italian dish of sautéed puntarelle (a Italian variety of chicory) and white beans, this recipe makes a satisfying vegetarian main course or a hearty side dish for roast chicken or sausages. It opts for canned white beans, for the sake of weeknight convenience, and Swiss chard, which is much milder than puntarelle and easier to find in the U.S. Kale or escarole would also work well, if that's what you've got. On that note, grated Pecorino Romano cheese gives the broth a more pungent element, but Parmesan will work in its place. Serve in shallow bowls with toasted country bread to mop up the garlicky broth.

1 large or 2 small bunches escarole, kale or Swiss chard, stems removed (10 to 12 ounces)
2 (15-ounce) cans cannellini beans, rinsed
2 cups low-sodium vegetable or chicken broth

1 tablespoon lemon juice
1/2 cup shredded mozzarella (optional)
3 tablespoons grated Pecorino Romano or Parmesan, plus more for serving

Steps:

  • In a 12-inch skillet or Dutch oven, heat the olive oil over medium. Add the fennel, onion and rosemary, and cook for 4 to 6 minutes, stirring occasionally, until tender. Add the garlic and red-pepper flakes and cook until fragrant, about 1 minute.
  • Begin adding handfuls of the greens, cooking and stirring until leaves wilt.
  • Add the white beans, broth and 1/4 teaspoon black pepper, and stir to combine. Bring to a boil, then turn the heat to low and simmer, mashing some of the beans with a wooden spoon, until the liquid has reduced and thickened, 6 to 8 minutes.
  • Off the heat, stir in the lemon juice, then the mozzarella, if using, and Pecorino Romano. Taste and season with salt and pepper. Divide among shallow bowls and top with more Pecorino Romano. Serve with toasted bread and a dish of red-pepper flakes on the side.

This is a go to recipe for me for pot luck. It is always a hit. Even among people who don't think they like beans or greens. If I make it as a side dish instead of a main, I substitute quartered sauteed mushrooms for the Italian sausage. The Kale is one of the big bags in the produce section. Of course, you can chop your own. I also roast my own garlic on the weekends and save in a jar. It's really worth it for this dish. This is great on it's own, on top of or with with slices of crusty bread. It's hard to mess this dish up. Just don't under cook the kale or it will be too tough.

1 (16 ounce) bag kale (can sub raw baby spinach, do not pre cook)
3 (12 ounce) cans cannellini beans, rinsed
4 large shallots, chopped (can sub onion)
2 -3 tablespoons roasted garlic (can sub sauteed garlic)
1 lb Italian sausage (or mushrooms)
olive oil
sea salt
black pepper
red pepper flakes (optional)

Steps:

  • Simmer kale in a large pot of salted water until al dente, drain.
  • (Can refrigerate kale after cooked for dish preparation at another time.).
  • Pre-heat a large pot or frying pan. Add olive oil to taste.
  • Saute chopped shallot until translucent.
  • Remove skin from the Italian sausage, Break up into bite sized chunks.
  • Add sausage to the shallots and brown / cook sausage completely.
  • Add drained beans to the sausage.
  • Add roasted garlic, sea salt and pepper to taste and stir / flip mixture gently while cooking for 5 minutes.
  • If the beans start to stick, add a little water.
  • Add cooked kale.
  • Add a little water to make a small amount of thick sauce.
  • Cover with a lid and simmer for 5 minutes or until ready to serve.
  • Also very good made a head and reheated.
  • It will keep for a week.
