I have made this beans and franks casserole several times, and it's always a hit. The kid-pleasing combo has a sweet flavor from the baked beans and the corn bread topping. The recipe saves on pans to wash if all were cooked separately. -Roxanne VanGelder, Rochester, New Hampshire

Yield 2 casseroles (4 servings each).

Number Of Ingredients 8

2 packages (8-1/2 ounces each) cornbread/muffin mix
1 can (28 ounces) baked beans
4 hot dogs, sliced
1/2 pound sliced bacon, cooked and crumbled
1 cup ketchup
1/2 cup packed brown sugar
1/2 cup chopped onion
2 cups shredded part-skim mozzarella cheese

Steps:

  • Prepare cornbread batter according to package directions; set aside. In a large bowl, combine the beans, hot dogs, bacon, ketchup, brown sugar and onion. Transfer to 2 greased 8-in. square baking dishes. Sprinkle with cheese; top with cornbread batter., Cover and freeze 1 casserole for up to 3 months. Bake the second casserole, uncovered, at 350° for 40-45 minutes or until a toothpick inserted in the center comes out clean. , To use frozen casserole: Remove from the freezer 30 minutes before baking. Cover and bake at 350° for 40 minutes. Uncover; bake 15-20 minutes longer or until heated through.

3 tablespoons chopped onion
1 (16 ounce) can baked beans with pork
1 (16 ounce) package frankfurters, sliced
⅓ cup brown sugar
1 teaspoon prepared mustard
1 teaspoon celery salt

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Melt butter in a skillet over medium heat. Saute onions in butter until tender. Stir in the baked beans and sliced frankfurters. Season with brown sugar, mustard and celery salt. Transfer to a 2 quart casserole dish.
  • Bake for 40 minutes, stirring occasionally.

A must try! There are tons of recipes for baked beans but these will really stand out and how great...they freeze beautifully! I call them 3 way because you can really use any 3 kinds of beans you like. AND once combined you have 3 options to choose what to do with them. I adapted this recipe to suit my family and the freezer. The original is from Beyond Macaroni and Cheese.

1 lb turkey, ground
1 cup onion, chopped
3 cups great northern beans
2 cups kidney beans
2 cups pinto beans
2 cups honey barbecue sauce
1 tablespoon mustard
1 teaspoon garlic powder
3/4 cup brown sugar

Steps:

  • Brown meat and onion together.
  • Mix in remaining ingredients.
  • At this point you can:.
  • -Cool completely and place in (2) large freezer bags and freeze:.
  • -Place in a crock pot for several hours.
  • -Put in a baking dish and bake at 350 for an hour and a half.
  • If frozen, thaw and cook following step 2 or 3.

1 (15 ounce) can baked beans, drained
1/2 cup spaghetti sauce
1 small onion, diced
1 cup cheddar cheese, shredded
4 -6 frankfurters, sliced

Steps:

  • Mix beans, spaghetti sauce, onion and sliced frankfurters in ungreased 1 1/2 qt.baking dish.
  • Top with cheese.
  • Bake uncovered for 30 minutes in a 350 degree oven until mixture is bubbly.

My adaptation of this classic. I add a few things for taste. You can use any kind of baked beans and hot dogs you like; in my house, I only use Heinz Vegetarian Beans and Hebrew National 97% Fat-Free Hot Dogs.

1 teaspoon olive oil
1/2 onion, diced
2 garlic cloves, minced
2 (16 ounce) cans vegetarian baked beans (such as Heinz)
1 (28 ounce) can diced tomatoes, drained
2 tablespoons spicy brown mustard
2 teaspoons prepared white horseradish
1 tablespoon brown sugar
1/2 teaspoon dried thyme
1 bay leaf
10 kosher fat-free hot dogs, sliced on an angle

Steps:

  • In a saucepan, heat oil until it shimmers. Add onion and saute until soft, about 2 minutes. Add garlic and saute until fragrant, about 1 minute.
  • Add remaining ingredients and stir well. Cook at a simmer 20-30 minutes until the flavors are melded and everything is hot.

1 1/4 cups hungry jack instant potato flakes
1 cup pillsbury best all-purpose flour or 1 cup unbleached flour

3/4 cup milk
2 tablespoons margarine or 2 tablespoons butter, melted
1 (8 ounce) can cream-style corn
1 egg
1 tablespoon mccormick or schilling parsley flakes

Steps:

  • Heat oven to 400 degrees.
  • Combine all ingredients except Topping in ungreased 3-quart casserole or 13 x 9-inch baking dish.
  • (Lightly spoon flour into measuring cup; level off.) Combine all Topping ingredients except parsley flakes; blend well.
  • Drop by spoonfuls around edge of casserole; sprinkle with parsley flakes.

1 (16 ounce) can butter beans or 1 (16 ounce) can lima beans, rinsed and drained

2 tablespoons cider vinegar
1 tablespoon mustard
