BEAN CABBAGE SOUP
I used to love my Italian grandmother's homemade minestrone. She was very particular about ingredients and where she bought them. Since I cook for only my husband and myself, I have simplified her recipe and cut down on the amounts. If I do say so myself, it's almost as good as Nonna Teresa's.

Steps:
- In a saucepan, saute celery and onion in oil for 2-3 minutes. Add garlic and saute for 1 minute. Add the zucchini, potato and carrot; saute for 3 minutes. Stir in the beef broth, beans, basil and pepper. Bring to a boil. Stir in cabbage. , Reduce heat; cover and simmer until potatoes are tender, about 20 minutes. Just before serving, stir in rice and cheese.

Steps:
- Heat the oil in a large saucepan over medium heat.
- Add in the onion, carrot, and garlic; cover and cook 5 minutes or until softened.
- Transfer the cooked vegetables into a 6-quart slow cooker.
- Add in the cabbage, potato, beans, stock, and thyme; season to taste with salt and pepper.
- Cover and cook on LOW for 8 hours.
- Just before serving, stir in the liquid smoke (if using), and parsley; taste to adjust seasonings.

- In saucepan, cover beans with cold water and add salt to taste. Boil gently until beans are tender, set aside.
- Meanwhile, heat half of the olive oil. Sauté celery, carrot, onion, garlic, sage, rosemary and oregano until softened. Add cabbage, reduce heat to low and simmer, 5 minutes.
- Add beans and the water. Increase heat to high and bring to a boil. Reduce heat and simmer 15 minutes. Serve drizzled with remaining olive oil.

CABBAGE BEEF SOUP
Very yummy soup that has always been a hit! Main ingredients include ground beef, cabbage, tomato sauce, kidney beans and onion. I promise you won't regret making it!

- Heat oil in a large stockpot over medium high heat. Add ground beef and onion, and cook until beef is well browned and crumbled. Drain fat, and transfer beef to a slow cooker. Add cabbage, kidney beans, water, tomato sauce, bouillon, cumin, salt, and pepper. Stir to dissolve bouillon, and cover.
- Cook on high setting for 4 hours, or on low setting for 6 to 8 hours. Stir occasionally. Enjoy!

- Heat olive oil in a large stock pot.
- Saute onions and garlic just until soft and transparent. Remove with a slotted spoon and set aside.
- Add sausage chunks to pan and brown all over, about 3-5 minutes.
- Return onions and garlic to pan.
- Add remaining ingredients.
- Bring to a boil, stirring often to keep from burning.
- Reduce heat, simmer 45-60 minutes stirring occasionally.
- Adjust seasonings to taste.

BEAN AND CABBAGE SOUP
Really any kind of beans can be used in place of the white kidney beans, but we like those the best. You can make this using all broth if desired. I like to add in the carrots towards the end of the cooking time, as I find they become too soft, but of coarse you may add them in at any time. I have even thrown in some leftover chicken or turkey towards the end of cooking time...Serve the soup with large crusty buns to dip in the broth, you will love this, it is delicious!

- In a large Dutch oven or stockpot, cook bacon until crisp.
- Add in onion, garlic and celery; stir for 5-6 minutes.
- Add in cabbage.
- Add in water, broth, tomatoes (with juice) Tabasco sauce and tomato soup; bring to a boil, reduce heat and simmer covered for about 50-60 minutes (adding in carrots about the last 30 minutes of cooking time).
- Stir in beans and cooked shells; heat though for about 5 minutes.
- Serve topped with Parmesan cheese.
- **NOTE** a few teaspoons of sugar may be added if desired, it really helps improve the flavor of the soup, but this is only optional.
