Perfect 3-Bean Salad image

Three bean salad is versatile, and it's a snap to fix. Take it along to a cookout, potluck, or tailgating party. It's always a hit.

1 (15-ounce) can cut green beans
1 (15-ounce) can cut yellow wax beans
11 (15-ounce) can red kidney beans (or white)
1/2 cup chopped bell pepper (green or multiple colors)
1/2 red onion (about 1 cup sliced)
1/2 cup apple cider vinegar
1/3 cup vegetable oil
1/2 cup granulated sugar
3/4 teaspoon salt
1 teaspoon pepper

Steps:

  • Drain the canned green and yellow beans in a colander ; transfer them to a large serving bowl.
  • Drain the kidney beans in a colander; run cold water over them until it runs clear. Add the kidney beans to the bowl with the green and yellow beans.
  • Remove the stem and seeds from the bell pepper and chop it. Peel the red onion and slice it thinly. Add the bell pepper and onion to the beans.
  • In a small bowl, combine the vinegar, oil, sugar, salt, and pepper; whisk until smooth. Pour the dressing mixture over the vegetables and then toss gently to coat.
  • Toss the salad until the ingredients are thoroughly coated with the dressing. Cover and chill for at least 4 hours.
  • Toss again just before serving.

2 pounds fresh green beans, trimmed
3 tablespoons olive oil, divided
3/4 teaspoon salt, divided
2 tablespoons white wine vinegar
2 tablespoons snipped fresh dill or 2 teaspoons dill weed
1-1/2 teaspoons Dijon mustard
1-1/2 teaspoons sugar
1/4 teaspoon pepper

Steps:

  • Preheat oven to 400°. In a large bowl, toss beans with 1 tablespoon oil and 1/2 teaspoon salt. Transfer to 2 ungreased 15x10x1-in. baking pans., Roast 30-35 minutes or until beans are tender and lightly browned, stirring occasionally., In a small bowl, whisk vinegar, dill, mustard, sugar, pepper and the remaining oil and salt until blended. Transfer beans to a large bowl. Drizzle with vinaigrette and toss to coat.

10 slices bacon
2 tablespoons vinegar
½ cup mayonnaise
2 tablespoons white sugar
1 (15.25 ounce) can kidney beans, drained and rinsed
1 ½ cups shredded cabbage
½ cup diced celery
2 tablespoons chopped fresh parsley
⅓ cup finely chopped onion
1 teaspoon salt
1 dash ground black pepper

Steps:

  • In a skillet over medium heat, cook the bacon until crisp. Drain, cool, and crumble.
  • In a small bowl, whisk together the vinegar, mayonnaise, and sugar.
  • In a large bowl, mix the bacon, kidney beans, cabbage, celery, parsley, and onion. Season with salt and pepper. Pour the vinegar dressing mixture over the salad, and toss to coat. Refrigerate at least 1 hour before serving.

1/4 cup mayonnaise
1/4 cup olive oil

5 cups mixed baby greens
1 15-ounce can small white beans, rinsed, drained
2/3 cup chopped drained roasted red peppers from jar
1/3 cup chopped red onion
1 12-ounce can chunk light tuna
2/3 cup Kalamata olives or other brine-cured black olives, pitted, halved

Steps:

  • Whisk first 4 ingredients in small bowl. Season dressing with salt and pepper. (Can be made 1 day ahead. Cover; chill.)
  • Toss greens in large bowl with enough dressing to coat. Place greens in center of 4 plates. Toss beans, red peppers and onion in medium bowl with enough dressing to coat. Top greens with bean mixture, then tuna, dividing equally. Garnish with olives and serve.

Number Of Ingredients 14

1/4 lb canned navy beans
4 medium potatoes, peeled and chopped
3 ounces snow peas, halved
6 slices bacon, chopped
lettuce, torn into medium sized pieces
3 medium red peppers, quartered
1/3 cup olive oil
3 tablespoons olive oil
1 tablespoon balsamic vinegar
1 teaspoon balsamic vinegar
1/2 teaspoon sugar
1 ounce freshly grated parmesan cheese
2 green onions, chopped (white part only) (optional)
salt & freshly ground black pepper, to taste

Steps:

  • Drain and rinse navy beans and set aside.
  • Place potatoes in a steamer basket over boiling water.
  • Cover pan and steam 10 minutes or until tender.
  • Remove potatoes and place snow peas in steamer basket, steam for 10 minutes or until tender.
  • Cool potatoes and peas.
  • Cook bacon in a dry pan, stirring occasionally, until browned. (** or roast the bacon; place on baking sheet, single spaced, and brown in 400ºF oven for about 15 minutes.).
  • Remove to paper towel-lined plate and cool.
  • Combine lettuce, beans, potatoes and snow peas and bacon in a bowl and toss well.
  • Take quartered peppers and remove seeds and membranes.
  • *Grill peppers in 400ºF oven, skin side up, until skin blisters and blackens. (About 20 to 25 minutes.).
  • Peel off skin and discard.
  • Process peppers until smooth.
  • Combine peppers and next 3 ingredients in a jar with a tight-fitting lid and shake well.
  • Taste both the salad and the dressing for seasoning, and add if needed.
  • Sprinkle with onions, if desired and then drizzle salad with dressing and cheese.
