Here's what you need: sweet potato, olive oil, raw walnut, black beans, cremini mushroom, kosher salt, cooked quinoa, McCormick® chili powder, McCormick® Smoked Paprika, Mccormick® ground cumin, Stubb's® Original BBQ Sauce, burger buns, butter lettuce leaves, avocado, shredded red cabbage

1 cup sweet potato, peeled and sliced into 1/4 in thick half moons
3 ½ tablespoons olive oil, divided
⅔ cup raw walnut
1 can black beans, drained, rinsed, and air-dried
2 cups cremini mushroom, washed and stemmed
1 ¼ teaspoons kosher salt, divided, plus more to taste
1 cup cooked quinoa, cooled, divided
2 ½ teaspoons McCormick® chili powder, plus more to taste
1 teaspoon McCormick® Smoked Paprika, plus more to taste
1 teaspoon Mccormick® ground cumin, plus more to taste
1 cup Stubb's® Original BBQ Sauce, divided
4 burger buns, sliced and toasted
4 butter lettuce leaves
1 avocado, peeled, pitted, and thinly sliced
1 cup shredded red cabbage

Steps:

  • Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.
  • Arrange the sweet potato in a single layer on one third of the baking sheet. Drizzle with ½ tablespoon of olive oil and toss to coat. Bake for 10 minutes, then remove the baking sheet from the oven and spread the walnuts next to the sweet potatoes, taking up another third of the baking sheet. Return to the oven for 5 minutes, then remove the baking sheet from the oven. Flip the sweet potatoes and stir the walnuts, then spread the black beans in a single layer on the remaining third of the baking sheet. Return the baking sheet to the oven and bake for another 5 minutes, until the black beans are dry and cracked open, the walnuts are golden brown, and the sweet potatoes are cooked through and browning around the edges. Remove from the oven and set aside to cool slightly. Leave the oven on.
  • Heat 1 tablespoon of olive oil in a large cast iron skillet or grill pan over medium-high heat. Add the mushrooms and ¼ teaspoon salt and cook for 4-5 minutes, stirring occasionally, until the mushrooms are browned and have shrunk to half of their original size. Transfer the mushrooms to a bowl. Set aside the pan for cooking the burgers (no need to wipe it out).
  • Add the roasted black beans and walnuts to a food processor and pulse 3-4 times, until the mixture is just crumbly (do not overprocess). Add the mushrooms, sweet potatoes, ½ cup quinoa, McCormick® Chili Powder, McCormick® Smoked Paprika, McCormick® Ground Cumin, remaining teaspoon of salt, and ¼ cup Stubb's® Original BBQ Sauce and pulse until the sweet potatoes and mushrooms are broken down into smaller pieces and the mixture is well combined but still has some texture; do not overprocess into a paste.
  • Transfer the black bean mixture to a large bowl and stir in the remaining ½ cup quinoa. Season with more salt, chili powder, paprika, and/or cumin to taste.
  • Line the baking sheet with a clean sheet of parchment paper.
  • Using a ½-cup measuring cup and wet hands, pack the black bean mixture into the measuring cup, then tap out onto the palm of one hand. Use the other hand to gently press into a ½-inch-thick patty. Carefully place on the prepared baking sheet, then repeat to make 3 more patties. Chill the patties in the refrigerator, uncovered, for 30 minutes.
  • In the same pan used for the mushrooms, heat the remaining 2 tablespoons of olive oil over medium-high heat until shimmering. Carefully add the burgers to the pan and cook for 8-10 minutes, carefully flipping halfway, until browned on both sides. Brush the top of each patty with 1 tablespoon of Stubb's® Original BBQ Sauce, then transfer the pan to the oven for 10 minutes, or until the sauce starts to brown.
  • To assemble, place a leaf of butter lettuce on the bottom half of a toasted bun, then top with a black bean patty, ¼ of the avocado, and ¼ cup red cabbage and drizzle with 2 tablespoons of Stubb's® Original BBQ Sauce. Finish with the top bun. Repeat with the remaining ingredients.

1 large sweet potato
1 cooking spray
2 (15 ounce) cans black beans, rinsed and drained
½ cup quick cooking oats
¼ cup chopped onion
1 tablespoon Dijon mustard
1 teaspoon ground cumin
¼ teaspoon freshly grated ginger
¼ teaspoon salt
1 pinch ground cinnamon

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Poke a few holes into sweet potato with a fork; place on a greased baking sheet.
  • Bake in the preheated oven until sweet potato can be easily pierced with a fork, 35 to 45 minutes. Remove from oven and cool until easily handled. Reduce heat to 350 degrees F (175 degrees C). Spray a baking sheet with cooking spray.
  • Peel sweet potato and place into a large bowl. Add black beans and mash with a whisk or fork. Add oats, onions, Dijon mustard, cumin, ginger, salt, and cinnamon and mix until well combined. Shape mixture into 6 patties with wet hands and place onto prepared baking sheet.
  • Bake in the preheated oven until cooked in the center and crisp on the outside, about 8 minutes on each side.

1 1/2 medium sweet potatoes, halved lengthwise
1/4 teaspoon salt
3/4 teaspoon onion powder
3/8 teaspoon garlic powder
3/4 teaspoon chili powder
1/4 teaspoon dried oregano
1 1/2 teaspoons cumin powder
1/4 teaspoon black pepper
0.75 (15 ounce) can black beans, rinsed and drained
1/4 cup mayonnaise
3/4 teaspoon chili-garlic sauce
1/4 of a lime, juice of
buns or lettuce wrap
lettuce, tomatoes, avocados, radishes

Steps:

  • Cook sweet potatoes in 400 degree oven, cut side down for 30 minutes.
  • While the sweet potatoes are baking, make the chili lime mayo. In a small bowl, mix together the mayo, chili garlic sauce and lime juice. Set aside.
  • In a small bowl, add salt, onion powder, garlic powder, chili powder, oregano, cumin powder and black pepper. Mix together and set aside.
  • In a large bowl, add black beans and cooked sweet potatoes. Mash until consistency is only slightly chunky. Some beans will be completely mashed and others will not. This will help create a nice texture.
  • Add in cooked quinoa and spices. Mix together with hands and form into 8 burger patties, about 1/3 cup of mixture each.
  • Place burger patties on a large baking sheet covered in parchment paper. Spray with olive oil and bake in 400 degree oven for 20 minutes. Flip over, spray other side with olive oil and bake for another 10 minutes.

Sometimes a good vegetarian burger can be better than any beef burger. I think this one I made is pretty flavorful, and it's also fairly healthy. The leftovers freeze OK, but the patties are best reheated in an oven instead of a microwave.

2 (15 ounce) cans black beans, rinsed & drained
1 large sweet potato, peeled & cubed & cooked (just boiled and drained is fine)
1 egg, lightly beaten
2 tablespoons tahini
1 tablespoon agave syrup (or light sweetener of choice)
2 -3 teaspoons adobo seasoning (or favorite spice blend or salt & pepper)
1/4 teaspoon cayenne pepper
1/4 cup flour
1 cup panko breadcrumbs
1 -2 tablespoon sunflower oil
8 hamburger buns, sliced or 8 pita bread
2 avocados, peeled & cored & sliced
Dijon mustard, to taste

Steps:

  • In a large bowl, mash beans and potato together with a potato masher.
  • Stir in egg, tahini, syrup, seasonings and flour. Mix well Form mixture into eight same-sized patties. If mixture is too moist to handle, add a tad more flour.
  • Coat patties in Panko. You want them to be well-coated.
  • Heat sunflower oil in a skillet over medium-high heat. Add the patties in batches and cook until browned on both sides, about 10 minutes. Transfer to a plate lined with paper towels until all patties are cooked.
  • Serve inside hamburger buns or pitas. Top with sliced avocados and smears of Dijon mustard, or any topping you like.

Summer is here at last! I'm craving all the summer foods including veggie burgers. I do buy some store-bought ones but I'm super picky about ingredients so sometimes I just prefer to make my own. I love BBQ flavor so I created this burger to use BBQ sauce. It's smokey and a tad sweet. Yummm! My favorite toppings for these are tomato, onion (would be great sautéed), avocado, bread and butter pickle chips and yellow mustard. They would also be great with coleslaw on them or on the side.

1 small sweet potato, baked whole and cooled
1 (15 ounce) can black beans, drained and rinsed or 1 1/2 cups cooked black beans
1/2 cup breadcrumbs
1/2 cup brown rice
1/4 cup finely chopped onion
2 garlic cloves, minced
1 tablespoon vegan worcestershire sauce
1 tablespoon low sodium soy sauce
2 tablespoons barbecue sauce (plus a little extra for glazing)
1 teaspoon salt
1/4 teaspoon black pepper
1 teaspoon smoked paprika (optional)
1/2 teaspoon dried chipotle powder (optional)

Steps:

  • Scoop the sweet potato flesh out of the skin into a large bowl. Discard the skin. Add black beans to bowl and use a potato masher to mash everything together. Some whole beans are ok.
  • Add remaining ingredients and stir until everything is well combined. Chill mixture in the refrigerator for 2 hours. Don't skip this! It will help the patties stay together better.
  • Preheat oven to 400 degrees.
  • Form mixture into 6 patties and place on a large parchment lined baking sheet. Brush tops with olive oil. Bake for 25 minutes.
  • Remove from oven. Brush tops with BBQ sauce. Flip over and brush other side with BBQ sauce. Return to oven and bake for 15 minutes. Remove from oven and let stand 5-10 minutes without touching them. This will help them to set.
  • Enjoy on a bun with toppings.
