BURNT END MELT SANDWICH

Burnt End Melt Sandwich image

Provided by Food Network

Time 22h45m

Yield 1 sandwich

Number Of Ingredients 29

1 whole untrimmed packer brisket (roughly 12 pounds)
1/2 cup kosher salt
1/4 cup coarse ground black pepper
1/4 cup granulated garlic
1/2 cup Cajun spice
1 pint light brown sugar
1 pint Dignowity BBQ Sauce, recipe follows, plus additional for serving
1 ciabatta roll
1 portion Sharp Cheddar Mac and Cheese, recipe follows
2 slices green pear
Freshly shredded Cheddar, for topping
1 quart light brown sugar
5 cups ketchup
1 cup pineapple juice
1 cup molasses
1/2 cup liquid hickory smoke
1/4 cup dry mustard
1/8 cup kosher salt
4 teaspoons freshly ground black pepper
2 teaspoons granulated garlic
2 teaspoons Cajun spice
2 sticks unsalted butter
1 cup all-purpose flour
2 quarts whole milk
2 quarts grated sharp Cheddar
2 tablespoons kosher salt
1 tablespoon ground black pepper
1 tablespoon Cajun spice
5 quarts precooked elbow noodles

Steps:

  • Preheat a smoker for cooking at 225 degrees F.
  • Trim any excess fat from brisket. Sprinkle the brisket liberally with kosher salt. Stir together the black pepper, granulated garlic and 1/4 cup Cajun spice, then sprinkle all over the brisket. Place brisket fat-side up on a smoking tray and place in smoker. Add soaked and drained hickory wood chips and smoke until an instant-read thermometer inserted in the center registers 195 degrees F, about 12 hours.
  • Let the brisket rest and cool completely, preferably overnight.
  • Preheat the smoker for cooking at 250 degrees F. Cut the brisket into 1/2-inch cubes. Spread these cubes in an even layer on a sheet tray. Sprinkle with brown sugar, the remaining 1/4 cup Cajun spice and the BBQ Sauce. Mix thoroughly with your hands to ensure every piece is coated. Spread them out in an even layer and put the tray back in the smoker with fresh soaked wood chips to smoke for 2 hours. Remove from smoker.
  • Hollow out the ciabatta. Add Mac and Cheese, some brisket burnt ends, green pear, some Cheddar and BBQ Sauce. Close the sandwich and place on a flattop panini press until cheese melts, about 1 minute. (Save the remaining meat for another use.)
  • Combine light brown sugar, ketchup, pineapple juice, molasses, liquid smoke, mustard, salt, black pepper, granulated garlic, Cajun spice and 1 cup water in a stainless steel saucepan. Heat on low heat, stirring constantly and scraping the bottom with a wooden spoon so the sugars do not burn on the bottom of the pan, until it comes to a simmer. Simmer until desired consistency has been achieved, for about 1 hour. Allow to cool completely, then transfer to a clean plastic container or mason jar and store in the fridge.
  • Melt butter in a saucepan over medium heat. Add flour to hot melted butter and whisk constantly for 3 minutes. Slowly add milk while continuing to whisk, then continue to cook, whisking, until sauce is thickened and bubbling. Remove from heat and stir in Cheddar, salt, pepper and Cajun spice. Stir until smooth and velvety, then fold in precooked noodles. Return to low heat and stir constantly until noodles are heated through. Serve.

BBQ BRAISED BRISKET SANDWICHES

BBQ Braised Brisket Sandwiches image

Provided by Nancy Fuller

Categories     main-dish

Time 5h15m

Yield 6 servings

Number Of Ingredients 24

1 tablespoon chile flakes
1 tablespoon chili powder
1 tablespoon garlic powder
1 tablespoon onion powder
1 tablespoon paprika
1 tablespoon packed light brown sugar
Kosher salt and freshly ground black pepper
One 3-pound brisket
2 tablespoons olive oil
2 cups Nancy's Sweet and Tangy BBQ Sauce, recipe follows
1 tablespoon Worcestershire sauce
One 12-ounce bottle lager beer or chicken broth
6 ciabatta sandwich rolls
Mayonnaise, for serving
2 tablespoons butter
1/2 medium red onion, chopped
3 cloves garlic, minced
2 cups tomato sauce
1 cup ketchup
1/2 cup packed light brown sugar
1/4 cup white wine vinegar
2 teaspoons dry mustard powder
1/2 teaspoon cayenne pepper, plus more if needed
Kosher salt

Steps:

  • In a medium bowl, stir to combine the chile flakes, chili powder, garlic powder, onion powder, paprika, brown sugar and some salt and pepper. Rub the spice mix on the brisket to coat. Place in a large resealable bag or dish and refrigerate for at least 1 hour or up to overnight.
  • Preheat the oven to 325 degrees F and position a rack in the center of the oven.
  • Heat the olive oil in a large Dutch oven set over medium heat. Sear the brisket, fat-side down, until caramelized and browned, 6 to 8 minutes, then flip and cook another 5 minutes.
  • Pour in the Nancy's Sweet and Tangy BBQ Sauce, Worcestershire and beer. Bring to a simmer, then cover the pot and transfer to the oven. Cook until the brisket is tender and the internal temperature of the thickest part reads 185 degrees F on an instant read thermometer, about 2 hours 30 minutes.
  • Place the brisket on a cutting board to rest for 20 minutes, and reserve the cooking sauce. Slice the brisket thinly against the grain, then return the meat to the Dutch oven and coat in the sauce. Pile the meat onto the sandwich rolls, spread some mayo on one side of the roll and then drizzle some extra sauce over the meat to serve.
  • In a medium saucepan, heat the butter over medium heat. Add the onions and cook until soft and translucent, 4 to 5 minutes. Stir in the garlic and cook 1 minute, then whisk in the tomato sauce, ketchup, sugar, vinegar, mustard, cayenne and some salt. Bring to a boil, then reduce to a simmer and cook for 45 minutes.

CHIPOTLE BRISKET SANDWICH ON A CHEDDAR BISCUIT

Chipotle Brisket Sandwich on a Cheddar Biscuit image

Provided by Food Network

Categories     main-dish

Time 7h25m

Yield 6 to 8 sandwiches

Number Of Ingredients 25

4 yellow onions, 2 sliced and 2 finely diced
One 4-pound beef brisket (point-cut or flat-cut)
Kosher salt and freshly ground black pepper
12 cloves garlic, peeled
6 cups ale
2 tablespoons vegetable oil
4 large jalepenos, minced
3 to 4 chipotle peppers in adobo sauce, pureed
2 tablespoons granulated garlic
1 tablespoon smoked paprika
3 cups all-purpose flour, plus more for dusting
1 tablespoon baking powder
1 teaspoon baking soda
1 teaspoon kosher salt
1 cup (2 sticks) cold unsalted butter, cut into small cubes, plus more melted butter, for brushing
1 1/2 cups shredded Cheddar
1 1/2 to 2 cups buttermilk
1 cup homemade or store-bought guacamole
1/2 cup mayonnaise
3 to 4 chipotle peppers in adobo sauce, pureed
1/4 cup lemon juice
Kosher salt
2 tablespoons unsalted butter
2 yellow onions, sliced
6 to 8 slices white or yellow Cheddar

Steps:

  • For the brisket: Preheat the oven to 275 degrees F.
  • Lay the sliced onions in the bottom of a roasting pan. Place the brisket on top of the onions and season with salt and pepper. Top with the garlic cloves and ale. Cover tightly with foil and roast until tender, 5 to 6 hours. Loosen the cover and let cool to room temperature.
  • Heat the vegetable oil in a large saute pan over medium heat. Add the jalapeno and diced onion and cook until tender, 8 to 10 minutes. Add the pureed chipotle peppers and cook until warmed through, about 2 minutes. Remove from the heat and let cool to room temperature.
  • Remove any excess fat from the cooled brisket with a spatula. Slice the brisket across the grain into 1 1/2-inch-thick pieces and gently pull the meat apart by hand. Place the meat in a large bowl and season with the granulated garlic, paprika, 1 teaspoon pepper and 2 teaspoons salt. Add the cooked onion and jalapeno mixture and toss gently to combine.
  • For the biscuits: Increase the oven temperature to 375 degrees F and line a baking sheet with parchment paper.
  • Combine the flour, baking powder, baking soda and salt in a large bowl. Cut in the 2 sticks of cold butter until the mixture is crumbly, being careful not to overmix. Add the Cheddar. Add the buttermilk a little at a time, just until the mixture is combined and moist. Turn the mixture out onto a lightly floured surface. Gently roll or press the dough into a 1-inch-thick rectangle. Cut the dough into 4-by-4-inch squares or use a large biscuit cutter, place on the baking sheet and brush with the melted butter. Bake until golden brown, about 45 minutes. Brush with additional melted butter while the biscuits are still warm. Set aside.
  • For the chipotle sauce: Combine the guacamole, mayonnaise, chipotle peppers and lemon juice in a medium bowl and mix well. Season with salt, cover and refrigerate.
  • To serve: Heat the butter in a large saute pan over medium heat. Add the onions and cook, stirring occasionally, until deep golden brown, about 20 minutes.
  • Preheat the oven to 350 degrees F.
  • Loosely wrap the biscuits in foil and place in the oven until warm. For each sandwich, place 6 to 8 ounces of the brisket mixture in a small saute pan. Heat until very warm, stirring so the brisket does not brown. Turn off the heat and top with 1 slice of Cheddar and some caramelized onions. Cover the pan until the cheese melts. Cut the warm biscuit in half lengthwise and fill with the brisket mixture. Top with the desired amount of chipotle sauce and serve.

WOODROW'S COFFEE BBQ BRISKET SANDWICH

Woodrow's Coffee BBQ Brisket Sandwich image

Provided by Food Network

Categories     main-dish

Time 21h25m

Yield 5 servings

Number Of Ingredients 23

1/2 cup smoked paprika
1/2 cup brown sugar
1/4 cup chili powder
1/4 cup salt
1/4 cup black pepper
6 tablespoons granulated garlic
6 tablespoons onion powder
1 1/2- to 2 pounds beef brisket, preferably Angus
1 1/4 cups vegetable oil
1 tablespoon butter
1 clove garlic, chopped
1/2 shallot, chopped
1 quart BBQ sauce (any kind'll do)
2 cups your favorite coffee (brewed liquid, not grounds)
1 bay leaf
5 brioche burger buns
1/4 stick (2 tablespoons) butter, melted
Oil, for frying
1 Idaho potato, cut into thin shoestrings (use a mandoline if possible)
2 jalapenos, sliced thin
Salt and pepper
1 onion, sliced thin
5 slices yellow Cheddar (or your favorite cheese)

Steps:

  • For the BBQ rub: Mix together smoked paprika, brown sugar, chili powder, salt, pepper, granulated garlic and onion powder in a bowl. Set aside.
  • For the brisket: Trim excess fat from the outside of the brisket, keeping about 1/2-inch layer of fat on.
  • Chop up excess fat and place it in a pot with 1 cup of the vegetable oil. Cook over medium-low heat, stirring occasionally, until the fat starts to brown, 10 to 15 minutes. Turn off heat and let cool, then strain to remove all the fat chunks. Set aside.
  • Rub some of the remaining 1/4 vegetable oil all around the outside of the brisket. Rub brisket liberally with 3/4 cup BBQ rub (save remainder for another use). Rub the rest of the vegetable oil on top of the BBQ rub. (When putting rub on meat, just remember, "oil, rub, oil.")
  • Let the brisket rest, covered and refrigerated, overnight. (If you are in a hurry, you could let it sit in the fridge for a couple hours and it should turn out okay.)
  • Heat an outdoor grill to 350 degrees F. Preheat an oven to 200 degrees F.
  • Sear the outside of the meat on all sides on the grill. Since we are not using a smoker, it is important to get some open flame action to caramelize the outside of the meat so we get some smoke flavor. Cover the meat with foil or thick butcher paper and place in a hotel pan.
  • Transfer to the oven and roast for 12 hours or overnight. Let cool.
  • For the coffee BBQ sauce: Melt the butter in a saucepot, then add garlic and shallots. Cook, stirring, until they start to caramelize. Add the BBQ sauce, coffee and bay leaf and simmer on medium-low heat, stirring frequently, for about 30 minutes. Let cool, remove the bay leaf and puree in a blender (optional). Set aside.
  • Ready to make the sandwiches! Slice the brisket about 1/4-inch-thick and place in a large enough saute pan that each piece can be flat in the pan in a single layer. Add just enough BBQ sauce to come about halfway up the side of the meat. Heat the pan on medium to high heat. Meanwhile, split the burger buns. Toast the buns and add the melted butter to the insides.
  • Heat the oil in a deep-fryer to 350 degrees F.
  • Fry shoestring potatoes until they start to turn golden brown, then add the sliced jalapenos to the fryer and continue frying until the fries are golden and jalapenos are crispy but still bright green, 1 to 2 minutes. Let drain, then place in a bowl and season with salt and pepper. Set aside.
  • Meanwhile, pay attention to the brisket in the pan. Turn each piece over on the other side with tongs and continue searing.
  • Pour about 1/4 cup beef fat into another saute pan. Heat on medium-high heat and add the sliced onions. Cook the onions down until they start to get a dark caramelization-thing going on, then add salt and pepper to taste. Turn off heat, drain excess oil and set aside. At this point the brisket should be looking good. You want there to be a deep-dark crust forming on the outside.
  • Time to assemble! Place buns on a tray, lay your Cheddar down on the bottom, add the BBQ brisket on top, beef fat onions on top of the brisket, jalapeno shoestrings on top of the onions, put on your bun lids...DONE!
