How to Make German Noodles or Spaetzle or Spätzle image

The standard base recipe for a classic German noodle from Southern Germany. This recipe comes from Oma Nellie.

Number Of Ingredients 5

2 cups flour
1 tsp salt
2 eggs
1/2 to 3/4 cup water
1 Tbsp of butter (for serving)

Steps:

  • Mix flour and salt in a large bowl.
  • Make a well in the center of the flour and add eggs.
  • Using a sturdy wooden spoon mix together pulling in flour from the sides. Not all of the flour will be incorporated.
  • Gradually add just enough water to make a thick, sticky, stiff dough that incorporates all the flour. It will be a stretchy big lump.
  • Cover with towel and let rest at room temperature for 10 to 15 minutes.
  • Meanwhile bring a large pot of salted water to boil.
  • Fill spaetzle press or potato ricer with dough and press into boiling water. Only add one batch at a time to allow plenty of room for noodles to cook. Or, place a bit of dough at a time in a colander and push through holes using the back of a spoon.
  • Allow noodles to cook for 2 to 3 minutes until they rise to the top and float.
  • Remove with slotted spoon into a colander to drain well. Place in serving dish and add a pat of butter to prevent them from sticking.
  • If serving later, rinse freshly cooked spaetzle with cold water.

I FOUND this recipe in a farm newspaper, thought it sounded it good and it was. I have used it for years. I often fix it instead of potatoes. If the skin on the apples is a little tough, I peel the apples. Otherwise in they go, along with the apples. --Frances Rosselet, Defiance, Ohio

2 cups uncooked egg noodles
1 medium apple, chopped
1/4 teaspoon caraway seeds
2 tablespoons butter
2 tablespoons honey
1 tablespoon Dijon mustard

Steps:

  • Cook noodles according to package directions. Meanwhile, in a large skillet, saute apple and caraway in butter until apple is crisp-tender. Stir in the honey and mustard. , Drain noodles; stir into apple mixture. Cook until heated through.

My aunt gave me her recipe for Bavarian Casserole and she used cubed potatoes. It was reallky good but my husband loves sauerkraut and wondered whether I could replace the potatoes with that. I tried it and it was very good. I now make both but we usually end up with the sauerkraut one. This is a super easy casserole no matter how we make it.

28 ounces sauerkraut, drained
16 ounces kielbasa, sliced in angle cut rounds
12 ounces wide egg noodles, cooked and drained
1 (10 3/4 ounce) can mushroom soup, undiluted
3 tablespoons Dijon mustard
1 small onion, finely diced
1/2 lb swiss cheese, grated

Steps:

  • Preheat oven to 350.
  • Drain sauerkraut and spread in 13x9 pan.
  • Top with sliced Kielbasa.
  • Cook and drain noodles.
  • Spread over Kielbasa evenly.
  • In a bowl mix the soup, onion and dijon mustard.
  • Pour over top of casserole and spread evenly.
  • Top with the swiss cheese.
  • Bake 30-40 minutes until cheese is well melted and casserole is bubbly hot.

HOT GERMAN BUTTERED NOODLES



Hot German Buttered Noodles image

If you have ever been to the Bavarian inn in Frankenmuth MI this what they use on top of their hot buttered noodles (crushed Ritz buttery crackers). I can taste them just writing this. Yum Yum. I use Maggi brand chicken bullion cubes in the box of eight. You can usually find them in the Mexican section of your super market. They are extra large, really soft and dissolve easily. Do not add salt to this recipe, the bullion is loaded with it and most people use salted butter so you should be covered there. Use more butter if you like, 6 ozs seems just right for me. Enjoy

1/2 gallon water
2 chicken bouillon cubes
8 ounces extra wide egg noodles
1/2 cup water
6 ounces butter
1 teaspoon parsley
6 Ritz crackers, crushed

Steps:

  • Add 1 ½ bullion cubes to ½ gallon water in a medium pot, bring to a boil. Add noodles and set timer for 1 min longer than the longest time listed on the package, stir a couple of times while cooking.
  • While noodles are boiling add 1/2 cup water, 1/2 chicken bullion cube and butter to glass measuring cup. Microwave for 45 seconds on high, Stir. If the butter is not melted all the way microwave again for 30 seconds and mix well until bullion is dissolved.
  • When noodles are done drain water from pot but do not rinse, add butter mixture and parsley. Mix well until most liquid is absorbed, about a minute.
  • Serve immediately with crushed Ritz crackers on top.
