I found this recipe on the "Pork - The Other White Meat" website. It's tender, delicious and good to make when I want to get dinner on the table fast.

4 pork chops, rib or loin
flour
2 teaspoons butter
8 ounces sliced fresh mushrooms
1 onion, diced
8 ounces beer (or apple juice)

Steps:

  • Lightly flour 4 pork chops; brown in a little butter. Add sliced mushrooms and onion to pan and stir in 8 ounces beer or apple juice.
  • Bring to a boil, cover and lower heat. Simmer 8 minutes; season with salt and pepper to taste, and serve.

1 Tbsp. oil
4 boneless pork chops (1 lb.), 1/2 inch thick
2 cups water
1 pkg. (10.75 oz.) VELVEETA Shells & Cheese with Bacon
1 onion, sliced
1 Granny Smith apple, sliced

Steps:

  • Heat oil in large skillet on medium-high heat. Add chops; cook 4 to 5 min. on each side or until done (145ºF). Remove chops from skillet; cover to keep warm.
  • Add water to skillet. Bring to boil.
  • Stir in Pasta Shells, onions and apples; simmer on medium-low heat 10 min. or until pasta is tender and almost all the water is absorbed. Stir in Cheese Sauce and Bacon; top with chops. Cover; cook on low heat 5 min. or until heated through.

1 (32 ounce) bag refrigerated sauerkraut or 2 (14 ounce) cans sauerkraut, undrained
1 large unpeeled cooking apple, chopped (1 1/2 cups)
2 medium onions, chopped (1 cup)
1/3 cup uncooked regular barley (not quick-cooking)
8 pork loin or 8 pork chops, 3/4 inch thick
2/3 cup barbecue sauce

Steps:

  • Preheat oven to 350 degrees.
  • Mix sauerkraut, apple, onion, and barley in a ungreased 2 1/2-quart casserole or rectangular baking dish, 13x9x2 inches.
  • Place pork on sauerkraut mixture, Spoon barbecue sauce over pork.
  • Cover and bake 1 hour 15 minutes to 1 hour 30 minutes, uncovering the last 15 minutes, until pork is slightly pink when cut near the bone, barely is tender and liquid is absorted.
