BAVARIAN BEEF PIE
I found this recipe in an old church cookbook of my grandmother's when I as in 4-H. With its combination of ingredients and spices, it has a unique flavor that receives rave reviews when we fix it for family and friends.

Steps:
- In a small bowl, combine flour and salt; cut in the shortening until crumbly. Stir in 1 egg yolk and vinegar. Gradually add water, tossing with a fork until dough forms a ball. Divide dough in half so that one portion is slightly larger than the other. Cover and refrigerate for 30 minutes or until easy to handle., Meanwhile, in a small skillet, brown beef in oil. Remove with a slotted spoon; set aside. In the same skillet, saute the potato, onion and apple in butter for 2-3 minutes or until onion is tender. Stir in garlic; cook 1 minute longer. Stir in flour until blended. Add the bouillon, seasonings, beef and 1/2 cup water. Bring to a boil; cook and stir for 2 minutes or until thickened., On a lightly floured surface, roll out larger portion of dough to fit a 7-in. pie plate. Transfer pastry to pie plate. Trim pastry even with edge. Fill with beef mixture. Roll out remaining pastry to fit top of pie. Place over filling. Trim, seal and flute edges. Cut slits in pastry., Beat remaining egg yolk and water; brush over pastry. Bake at 375° for 30-35 minutes or until golden brown.

VANILLA BAVARIAN CREAM PIE
This pie is a delicate taste treat delight! Also good served with sliced strawberries.

Steps:
- Soften gelatin in cold water. Scald the milk.
- In a mixing bowl, mix together sugar and cornstarch. Add eggs and mix thoroughly. Add milk and softened gelatin, stirring constantly.
- Cook custard in double boiler over hot water until it thickens and coats spoon. Remove from heat. Add ice cream while custard is hot. Cool thoroughly.
- Add vanilla. Whip the cream, and fold 1 1/2 cups into cooled custard. Pour filling into pie shell, and refrigerate until set. Garnish with remaining whipped cream.

BAVARIAN BEEF DINNER
I've had this recipe for quite a number of years. I won second place with it in a cooking contest sponsored by our local newspaper.

- In a Dutch oven, brown beef in oil. Add the beef broth, onions, garlic and seasonings. Cover and simmer for 2-1/2 hours or until beef is tender; reduce heat. , Combine flour and water until smooth; gradually stir into the beef mixture. Cook and stir for 2 minutes. Add sour cream and heat through (do not boil). Serve over rice with sauerkraut on the side.

CHOCOLATE BAVARIAN PIE
This recipe came from my grandmother, Effie McGregor Reinecke. It is a family favorite and my kids just love it. I am putting it here for safe keeping.

Steps:
- Crust.
- Crush up the package of Chocolate Wafers (Save 1/4 cup crushed wafers for the topping).
- Add the 1/3 cup melted butter to the crushed up Chocolate Wafers.
- Press mixture into the bottom of an 9 x 9 pyrex dish.
- Chill while making the filling.
- Soften gelatin in water.
- Combine egg yolks, sugar and salt, then slowly add scaled milk.
- Cook in a double boiler until the mixture coats a spoon,about 10 minutes stirring occasionally. Do not overcook.
- Add softened gelatin and mix well, then cool the mixture.
- Add the vanilla.
- Fold in the beaten egg whites and whipped cream.
- Pour mixture onto the Chocolate Wafer crust.
- Sprinkle the 1/4 cup of dry Chocolate Wafers over the top.
- Chill throughly.

- Stir crushed chocolate wafer crumbs, 1/4 cup white sugar, and softened butter together in a bowl. Press into an 8-inch pie plate. Refrigerate until set, at least 15 minutes.
- Pour water into a bowl and sprinkle gelatin over the top; let sit until gelatin softens, 5 to 10 minutes.
- Heat milk in a saucepan over medium heat until bubbling. Beat egg yolks and 1/2 cup white sugar together in a bowl. Pour hot milk into egg yolk mixture in a steady stream, whisking constantly. Return egg mixture to saucepan over medium heat and cook, stirring constantly, until mixture thickens slightly, about 4 minutes. Remove from heat.
- Stir gelatin mixture into egg-yolk mixture until gelatin melts and custard is well-combined; cool to room temperature. Stir in peppermint extract and vanilla extract.
- Beat egg whites in a glass or metal bowl until stiff peaks form. Lift your beater or whisk straight up: the egg whites will form sharp peaks.
- Beat heavy cream in a chilled glass or metal bowl until medium-soft peaks form. Fold egg whites and whipped cream into custard. Pour custard into prepared crust. Sprinkle with crushed peppermint candy and grated chocolate. Chill pie in the refrigerator until set, 8 hours to overnight.

BAVARIAN BEEF
A tasty beef dish from the crock pot. The steps may look tedious, but they are not at all. This is a good dish to try with a hearty rye or pumpernickel bread.

Steps:
- Trim fat from roast.
- In a large skillet, brown roast on all sides in hot oil.
- Meanwhile in place carrots, onions, 3/4 pickles, and celery in crock pot.
- Place meat on top of veggies, cutting the roast to fit, if necessary.
- In a small bowl, combine wine or broth, mustard, pepper, cloves and bay leaves.
- Pour over meat.
- Cover and cook on LOW for 8 to 10 hours; or HIGH for 4 to 5 hours.
- Remove meat from pot and place on platter, keeping warm.
- For gravy: transfer the cooking liquid to a 2 quart saucepan.
- Skim off fat and remove bay leaves.
- Stir together the flour and the remaining 2 tablespoons wine or broth.
- Stir into the gravy mixture.
- Cook and stir over medium heat until thickened an bubbly.
- Add vegetables and stir one or two more minutes more to warm up vegetables.
- Serve the meat with vegetable gravy and noodles.
- Garnish with chopped pickles and bacon.
