EASY FRIED SCALLOPS



Easy Fried Scallops image

I experimented with some ways to cook scallops one night with my family. This was everyone's favorite and it has become a regular dish at our family fry nights. If serving as a main dish, make twice as many servings as people (about 8 scallops per person).

vegetable oil for frying
2 cups buttermilk
2 cups all-purpose flour
½ tablespoon salt
½ tablespoon ground black pepper
12 large fresh scallops

Steps:

  • Heat oil in a deep-fryer or large saucepan to 400 degrees F (200 degrees C).
  • Pour buttermilk into a bowl. Combine flour, salt, and pepper in a separate bowl.
  • Immerse 4 or 5 scallops in the bowl of buttermilk. Transfer to the flour mixture; roll around until thickly coated.
  • Lower scallops gently into the hot oil. Cook until golden and crispy, 3 to 4 minutes. Drain on a plate lined with paper towels. Repeat with remaining scallops.

1 pound scallops
Batter
3 tablespoons oil
1 large egg, beaten
1/2 cup milk
1 cup all-purpose flour
2 teaspoons granulated sugar
1/2 teaspoon salt
1/2 teaspoon fresh ground black pepper
oil for deep frying

Steps:

  • Preheat oil to 365 degrees F in a deep fryer or deep saucepan. Whisk together egg, milk and oil in a bowl. Sift together flour, sugar, salt and pepper. Add to egg mixture and beat until smooth. Dip scallops into batter. Fry a few scallops at a time for 2 to 3 minutes (depending on size) or until golden brown. Turn as needed. Drain on paper towels. Serve with tartar sauce.

It's hard to say how many this serves, because it depends on what your making and how lg. the pieces being covered are, so the servings may be off. You can use this batter for just about anything you want deep fried... Cooking time is per batch that you are frying. This is my cousin Sheila's recipe that she kindly shared with me! Enjoy!

1/2 teaspoon salt
1/4 teaspoon pepper
1 cup flour, I use Gold Medal
1/2 teaspoon baking powder
3/4 cup milk

Steps:

  • Add salt and pepper to flour and baking powder.
  • Mix egg and milk together.
  • Combine all, and mix well.
  • Dip seafood in batter, and then deep fry in hot oil, at 350, until seafood is no longer opague color in the middle, and/or batter is a golden brown, approximately 3-5 minutes.
  • Drain on paper towels, and serve hot.

FRIED SEA SCALLOPS

This is my kid's favorite dish to order at our favorite seafood restaurant in coastal North Carolina. They are so good! This isn't a copy cat recipe, just me trying to mimick an awesome dish. I think I've come close!

12-14 fresh or frozen sea scallops, thawed and patted dry
1 egg
1/2 c milk
1 c flour
1/4 tsp salt
dash(es) ground pepper
canola oil for frying

Steps:

  • 1. Heat 1 inches of oil in a deep skillet.
  • 2. Meanwhile, whisk together milk and eggs until smooth. Pour into a shallow bowl.
  • 3. Sift together flour, salt, pepper in a shallow bowl.
  • 4. Roll Scallops in flour, dip in egg wash and then roll in flour again.
  • 5. Gently place scallops into the hot oil. Cook until golden and crispy, about 2 minutes per side. Drain on wire rack or paper towels.
  • 6. Sprinkle with a bit more salt if desired.

DEEP-FRIED SCALLOPS

These fried scallops are coated with seasoned flour and bread crumbs and deep fried to perfection. Serve with a quick tartar sauce or cocktail sauce.

3 to 4 cups vegetable oil (or amount needed for deep frying)
2 cups sea scallops
1 cup all-purpose flour
1 teaspoon salt
1 teaspoon paprika
1/4 teaspoon black pepper (freshly ground)
2 large eggs
3 tablespoons milk (or water)
1 1/2 cups bread crumbs (fine dry)

Steps:

  • Gather ingredients.
  • If scallops are quite large, cut them so the sizes are fairly uniform.
  • Rinse the scallops under cold water and pat them dry with paper towels. Remove the tough white side muscle if not already removed.
  • Heat about 2 to 3 inches of vegetable oil in a deep, heavy cast-iron skillet, saucepan, or deep fryer to 350 F.
  • Line a baking pan or baking sheet with 2 or 3 thicknesses of paper towels and set aside.
  • In a bowl, combine flour, salt, paprika, and black pepper.
  • In another bowl, whisk eggs with the milk.
  • Put the fine breadcrumbs in a third bowl.
  • Dip a few of the scallops in the seasoned flour mixture, then in the egg mixture, and then roll them in the breadcrumbs to coat. Repeat with the remaining scallops.
  • Once the oil has reached the temperature (350 F), add several scallops―about 6 to 10 depending on the pan size―to the hot oil and fry until golden brown, about 1 1/2 to 2 minutes. Take care not to overcook. They should be warm in the middle, but still moist.
  • Remove them from the oil with a metal slotted spoon and transfer them to the paper-towel-lined pan. Shake the pan gently for a few seconds so the scallops roll around and excess oil is absorbed.
  • Repeat with subsequent batches.
  • Serve immediately with your choice of cocktail sauce , rémoulade sauce , or tartar sauce. Enjoy.

1 cup self rising flour, split in half
1/4 cup self-rising yellow cornmeal
1 can beer
5 -6 dashes hot sauce
salt and pepper
oil (for frying)

Steps:

  • Rinse the scallops and drain to a towel.
  • In a large bowl, mix 1/2 cup of the flour, the corn meal, hot sauce, salt and pepper with enough beer to make a batter a little thinner than a pancake batter.
  • Put the remaining flour in a plastic bag, add the scallops, close the bag and shake well to coat them evenly.
  • Remove batches of the scallops, coat well in the batter and fry in the pre- heated oil until golden brown.
  • Remove the scallops from the oil and drain on paper towels.
  • These go great with batter fried okra, a big baked potato and Cocktail Sauce on the side.

  • Mix bread crumbs, salt, and pepper in a resealable plastic bag.

2 cups milk
1 cup all-purpose flour
3 large eggs
4 tablespoons melted butter, divided
1 tablespoon butter
6 ounces medium shrimp - peeled, deveined, and cut into 1/2-inch pieces
6 ounces bay scallops
1 teaspoon butter
1 cup sliced mushrooms
½ cup thinly sliced green onions
4 tablespoons butter
4 tablespoons all-purpose flour
1 cup milk, or more as needed
1 cup chicken broth
⅓ cup grated Swiss cheese
¼ cup dry white wine
1 tablespoon sherry
salt and ground black pepper to taste

Steps:

  • Combine milk, flour, eggs, and melted butter in a blender. Process until smooth, for at least 1 minute. Set aside and let rest for 30 minutes.
  • Coat a crepe pan or nonstick small skillet with melted butter. Pour in 1/4 cup crepe batter and swirl the pan until entire bottom is covered in a thin layer of batter. Cook until small brown spots appear on the bottom of the crepe, 1 to 2 minutes.
  • Loosen crepe carefully from the pan using a spatula and gently flip to brown the other side, 1 to 2 minutes more. Slide crepe onto a plate. Repeat with remaining batter, re-buttering the pan as needed and stacking crepes onto the plate.
  • Melt 1 tablespoon butter in a skillet over medium heat. Add shrimp and scallops and cook until shrimp are bright pink on the outside and scallops are golden, 2 to 3 minutes. Remove from skillet.
  • Melt 1 teaspoon butter in the same skillet and increase heat to medium-high. Add mushrooms and green onions; saute until mushrooms are tender, 3 to 4 minutes. Remove from heat.
  • Melt 4 tablespoons butter in a saucepan over medium heat until bubbling. Whisk in flour until mixture becomes paste-like and lightly golden, about 2 minutes. Add milk and chicken broth and whisk until sauce is smooth and thickened. Thin out with more milk if needed.
  • Add Swiss cheese, wine, and sherry to the sauce; stir until cheese melts. Season with salt and pepper. Reserve 2/3 cup sauce. Add shrimp, scallops, mushrooms, and onions to the remaining 1/3 of the sauce and stir until heated through.
  • Spoon about 1/4 cup of the filling across the lower third of each crepe. Roll crepes up jellyroll-style and serve at the table with the reserved sauce.
