Here's a really quick and simple recipe for some delicious southern fried comfort food. Next to fried chicken, these Southern Fried Pork Chops are a long time family favorite. It really is the "other white meat" as the Pork Council tells us.

Number Of Ingredients 10

4 Center Cut Pork Chops about 1/2 inch thick each.
1 Cup of All Purpose Flour
2 Tablespoons of Corn Starch
1 Egg
2 Tablespoons of Buttermilk
1 teaspoon of Garlic Powder
1/2 teaspoon of Salt
1/2 teaspoon of Black Pepper
1/2 teaspoon of Paprika
Cooking oil for frying.

Steps:

  • Begin by making the breader.
  • In a small mixing bowl, add the Flour, Corn Starch, Garlic Powder, Salt, Black Pepper and Paprika. Stir all ingredients well. Set aside.
  • Prepare the egg wash next.
  • Break one egg into a small low sided dish.
  • Add the buttermilk. Use a fork and stir mixture well.
  • Setup your dredge station for convenience.
  • One at a time, dip a pork chop in the flour and coat both sides.
  • Dip the chop into the egg mixture, coat both sides well.
  • Lift and let any excess drip off.
  • Place the chop back into the flour mixture and coat both sides and edges.
  • Place about 1/2 inch of cooking oil in a skillet over medium heat.
  • Test the oil before adding the chops to fry.
  • Gently lower the chops into the hot cooking oil, one at a time.
  • Watch the bottoms of the chop and when they start to brown, flip the pork chops over. Don't overcrowd the skillet.
  • Let the chops fry for about 6-8 minutes or until done but not over cooked.
  • Remove the cooked chops from the skillet, place on a paper towel lined plate and let drain.
  • Serve warm and Enjoy.

BEER BATTERED PORK

2 pounds pork shoulder, cut in 2" inch pieces
2 eggs
1 teaspoon baking powder
1 1/2 cups flour
1/2 cup beer

Steps:

  • In a large bowl, mix all ingredients except pork.
  • mix until all ingredients are combined into semi-thick batter.
  • add the pork to the batter, five or six pieces at a time. Take care to coat each piece with batter.
  • Carefully add the battered pork to a deep fryer or a pot of oil set at 375 degrees. Do not crowd the pan.
  • Fry until puffed up and a golden brown. Using a food thermometer, the internal temperature must be at least 145 degrees.
  • Drain on paper towels. Dip in my Garlic Aioli Sauce and enjoy!

CRISPY PAN-FRIED PORK CHOPS

Coat pork chops with breadcrumbs and herbs and then crisp them to perfection in a skillet.

1/3 cup all-purpose flour, for dredging
2 large eggs
Kosher salt and freshly ground black pepper
1 1/2 cups fresh breadcrumbs
1/4 teaspoon dried oregano
1/4 teaspoon dried thyme
4 bone-in pork chops, about 1/2-inch thick and patted dry (about 11/2 pounds total)
Extra-virgin olive oil, for shallow frying
Cooked spinach, for serving
Lemon wedges, for serving

Steps:

  • Put the flour in a shallow dish. Break the eggs into another shallow bowl and whisk with 1 teaspoon salt and a few grinds of pepper. Mix the breadcrumbs with the oregano and thyme in a third shallow bowl.
  • Dredge a pork chop in the flour, shaking off the excess, dip it into the eggs and then coat evenly with the breadcrumbs. Set aside on a piece of wax paper or baking sheet. Repeat with the remaining pork chops.
  • Heat a large skillet over medium heat with enough oil to come halfway up the sides of the chops (about 1/4 cup). When the oil shimmers, add the chops and fry until golden brown and crispy, 3 to 4 minutes on each side. Drain on paper towels briefly. Serve hot with cooked spinach and lemon wedges.

Batter
2 large eggs, beaten
1/4 cup cornstarch
1/4 cup all-purpose flour
1 pound boneless pork loin, cut into1-inch pieces
Sauce
3 tablespoons water
2 tablespoons ketchup
2 tablespoons fresh pineapple juice, or juice from the canned pineapple, or substitute orange juice
1 1/2 tablespoons cider vinegar
1 tablespoon Worcestershire sauce
1 tablespoon soy sauce
2 tablespoons sugar
2 cups peanut or vegetable oil for frying, plus 1 tablespoon for stir-frying
1 tablespoon minced garlic
1 teaspoon minced fresh ginger
1 cup fresh or canned bite-size pineapple chunks
Special equipment
Instant-read oil thermometer

Steps:

  • 1. Prepare the batter: In a medium bowl, stir together the eggs, cornstarch, and flour. The batter should be liquidy enough to coat the pork. If the batter looks too dry, add 1 to 2 tablespoons of water and stir again. Add the pork and stir gently to coat. Let stand at room temperature for 10 minutes.
  • 2. Prepare the sauce: In a small bowl, stir together the water, ketchup, pineapple juice, cider vinegar, Worcestershire sauce, soy sauce, and sugar until the sugar is dissolved. Set aside.
  • 3. Heat the peanut oil in a wok until it registers 350°F on an instant-read oil thermometer. Working in 2 or 3 batches, add the first batch of pork cubes and fry until golden brown on the outside and cooked through, 4 to 5 minutes. Remove the pork with a slotted spoon and drain on a plate lined with paper towels. Remove any excess bits of batter from the oil with a slotted spoon or fine-mesh strainer. Continue frying the rest of the pork.
  • 4. Transfer the oil to a heat-proof container. (It will take about 1 hour to fully cool, after which you can transfer it to a container with a tight lid to dispose of it.) Wipe up any food remains in the wok with paper towels, being careful not to touch the metal directly with your hands.
  • 5. Heat the remaining 1 tablespoon oil in the wok or a skillet over medium-high heat. Add the garlic and ginger and stir-fry until just aromatic, about 20 seconds. Add the pineapple and the sauce and stir to coat the vegetables. Let the sauce simmer for 2 to 3 minutes to allow the pineapple to become tender (about 1 minute for canned pineapple). Return pork to the wok and toss until well coated with the sauce. Transfer to a plate and serve.

1 1/2 to 2 lb boneless pork chops, thin sliced
1 c milk
1 large egg
1 c self rising flour
1 tsp onion powder
1/2 tsp garlic powder
1 1/2 tsp chicken flavored base
3/4 tsp black pepper or to taste
oil for frying (i use canola)

Steps:

  • 1. Remove pork chops from package, wash and pat dry. Place pork chops on a cutting board. Using a meat mallet, pound both sides.
  • 2. In one bowl, add egg and milk. Mix with fork until smooth. In another bowl, add flour, chicken flavored base, and seasonings, mix well. Dredge pork chops in flour mixture, then dip in milk and egg mixture. Roll in flour mixture.
  • 3. Heat about 1" oil in heavy skillet (I use a cast-iron chicken fryer). When oil is hot, add pork chops, no more than 2 to 3 at a time. Fry about 3 to 5 minutes per side, until golden and juices run clear. Remove to serving platter. Repeat with remaining pork chops. Serve hot with your favorite side dishes.
  • 4. Chicken flavored base is a moist powder and it is available in most grocery stores in the soup/bullion aisle.

PAN-FRIED BREADED PORK CHOPS

Look for beautiful good-quality pork, such as Berkshire, and ask for center-cut loin chops with bone. For the bread crumbs, use day-old firm white sandwich bread or French loaf, cubed and whirled in a food processor, for about three cups of soft, fluffy crumbs. Dry, fine store-bought crumbs will not yield the same result. Make sure to fry these chops very gently over medium-high heat, to allow the bread-crumb coating to brown slowly, creating a crisp, golden crust. Serve with a tart salad or braised greens, such as broccoli rabe.

4 (8-ounce) center-cut pork chops, about 1/2-inch thick

3 cups fresh bread crumbs (from 8 slices crustless day-old sandwich bread)
1 cup clarified butter, extra-virgin olive oil or lard, plus more as needed

Steps:

  • Lay pork chops on a baking sheet, and season well on both sides with salt and pepper.
  • Combine eggs and milk in a low, flat bowl. Season with salt, pepper and the small pinch of cayenne.
  • Sprinkle flour generously over the chops on both sides, then shake off excess.
  • Submerge the floured chops in the egg mixture, and turn them over several times to coat well. Leave chops in egg mixture for 5 minutes.
  • Use your left hand to remove a chop from the batter and drain off excess liquid. Place chop on a baking sheet and, with your right hand, heavily sprinkle with bread crumbs on both sides. Repeat with remaining chops.
  • Sprinkle each chop again with crumbs, patting with your hand to make sure crumbs adhere and coat well. Refrigerate, uncovered, until ready to fry.
  • Set a wide cast-iron or other heavy skillet over medium-high heat. Add clarified butter to a depth of 1/2 inch. When butter is hot, lay in the chops without crowding, and let them fry very gently, about 4 to 5 minutes per side, until beautifully golden brown. (Turn down heat if they seem to be browning too fast.) If your pan is small, cook in 2 batches and keep finished chops warm in a 250-degree oven.
  • Blot cooked chops on paper towels. Transfer to a warm platter or individual plates. Serve with lemon wedges.

  • Take a large mixing bowl and add the flour and ½ tsp fine salt. Whisk together to incorporate the salt. Add the water and whisk until the batter is completely smooth and the flour is fully combined.
  • Take the oil and pour into a large, sturdy saucepan with high sides. Heat over a high heat until it reaches 200C. To fry your ingredients, dip them in the batter, allowing any excess to run off, and carefully place into the hot oil. Fry until the batter is a rich, golden brown and crisp. The fried ingredients will likely float on top of the oil when cooked, too. Remove from the oil using a slotted spoon and blot on kitchen towel before serving. Sprinkle with a little flaky sea salt to keep crisp. The batter does not keep well and is best made just before using.

We dont deep-fry a lot but when we do..we do a WHACK of stuff. I've tried numerous recipes and this by far is the cheapest, tastiest and works with everything. Fish and onion rings are phenomenol. Spices are to your own taste and can be adjusted to whatever taste you want. Believe me...I've added everything from curry to southwestern tastes, this 'basic' recipe is just a guideline to the spices and taste you are looking for. ENJOY, it's awesome.

1 cup flour
1/2 cup cornstarch
2 teaspoons baking powder
1 (12 ounce) can beer
1 tablespoon salt
1 tablespoon pepper
2 tablespoons garlic powder
2 tablespoons Mrs. Dash table blend seasoning
1 cup extra flour (for dredging)

Steps:

  • Mix all dry ingredients, except the extra flour, whisk together.
  • Add beer and only mix lightly.
  • DO NOT over mix. If there are flour lumps just squish with the back of a spoon.
  • You want the mix to be blended but not overmixed as it will not 'puff up' when deep-frying.
  • For fish,shrimp, and 'meaty or wet' items I usually towel dry them and dredge them in the additional flour.
  • Then dip and cover in mixture. Let the excess drip off and when putting any item in the deep fryer -- use tongs.and dip whatever you are deep frying in the oil for about 10 seconds, then release.
  • This prevents the food from sticking to the bottom of the fryer. (Took us a while to learn that technique).
  • When it comes to fish or something long or big -- I just put the first inch or 2 in and let it bubble for a few seconds so that I know it won't sink to the bottom and stick. (I truly hated that with deep frying).
