Shrimp Orzo with Feta image

Tender, hearty and flavorful, this recipe is one of my favorites! Garlic and a splash of lemon add to the fresh taste and heart-healthy benefits of shrimp. -Sarah Hummel, Moon Township, Pennsylvania

1-1/4 cups uncooked whole wheat orzo pasta
2 tablespoons olive oil
2 garlic cloves, minced
2 medium tomatoes, chopped
2 tablespoons lemon juice
1-1/4 pounds uncooked shrimp (26-30 per pound), peeled and deveined
2 tablespoons minced fresh cilantro
1/4 teaspoon pepper
1/2 cup crumbled feta cheese

Steps:

  • Cook orzo according to package directions. Meanwhile, in a large skillet, heat oil over medium heat. Add garlic; cook and stir 1 minute. Add tomatoes and lemon juice. Bring to a boil. Stir in shrimp. Reduce heat; simmer, uncovered, until shrimp turn pink, 4-5 minutes., Drain orzo. Add orzo, cilantro and pepper to shrimp mixture; heat through. Sprinkle with feta cheese.

1 regular-size foil oven cooking bag
cooking spray
1/2 cup uncooked orzo pasta
2 teaspoons olive oil, divided
1 cup diced tomato
3/4 cup sliced scallion
1/2 cup crumbled feta cheese
1/2 teaspoon grated lemon, rind of
1 tablespoon fresh lemon juice
1/4 teaspoon salt
1/4 teaspoon fresh ground pepper
3/4 lb large shrimp, peeled and deveined
1/4 cup chopped fresh basil

Steps:

  • Preheat oven to 450 degrees.
  • Spray the inside of the foil bag with cooking spray and place on a large shallow baking pan.
  • Cook the pasta in boiling water for 5 minutes.
  • Drain.
  • Place the pasta in a large bowl and stir in 1 teaspoon of the oil and the next 7 ingredients.
  • Place the orzo mixture in teh foil bag.
  • Combine the shrimp and basil.
  • Arrange shrimp mixture on the orzo.
  • Fold edges of bag to seal.
  • Bake at 450 degrees for 25 minutes.
  • Cut open the bag with a sharp knife (watch out for the steam) and peel the foil back.
  • Drizzle with remaining 1 teaspoon of oil.
  • Serve.

3/4 cup orzo pasta, uncooked
2 teaspoons olive oil
4 roma tomatoes, chopped
1 bunch green onion, chopped
2 ounces feta, crumbled
1/2 teaspoon lemon rind, grated
1 tablespoon lemon juice, fresh
1/4 teaspoon salt
1/4 teaspoon black pepper
1 lb large shrimp, peeled
1/4 cup basil, fresh and chopped

Steps:

  • Preheat oven to 450 degrees.
  • Place shrimp in bowl, mix with 1 teaspoon of oil and basil; let sit.
  • Coat piece of tin foil with cooking spray, place on cookie sheet.
  • Cook pasta in boiling water 5 minutes, omitting salt and fat; drain. Place pasta in large bowl.
  • Stir in 1 teaspoon oil and next seven ingredients. Place orzo mixture on tin foil. Place shrimp mixture on orzo.
  • Cover foil and shrimp/orzo mixture with another piece of foil, and secure it around baking sheet. Bake at 450 degrees until done (25 minutes plus minus depending on your oven).
