BASIL TOMATO PORK CHOPS

These pork chops are moist and tender, cooked in a vegetable sauce.

Number Of Ingredients 11

2 tablespoons Land O Lakes® Butter
1 teaspoon finely chopped fresh garlic
8 (1/2-inch thick) pork chops
1 (28-ounce) can whole tomatoes, undrained, cut up
1 teaspoon dried basil leaves
1 teaspoon salt
1/2 teaspoon pepper
1/2 cup water
3 tablespoons cornstarch
1 medium green bell pepper, cut into rings
1 medium onion, cut into rings

Steps:

  • Melt butter in 12-inch skillet until sizzling; stir in garlic. Add 4 pork chops. Cook over medium-high heat, turning occasionally,4-6 minutes or until browned on both sides. Remove from pan; set aside. Repeat with remaining pork chops.
  • Return pork chops to pan. Stir in tomatoes, basil, salt and pepper. Cook over medium-high heat 3-4 minutes or until mixture comes to a boil. Reduce heat to low. Cover; cook, stirring occasionally, 50-60 minutes or until pork chops are no longer pink. Remove pork chops; keep warm.
  • Stir together water and cornstarch in small bowl. Stir cornstarch mixture into hot cooking liquid with wire whisk; add green pepper and onion.
  • Increase heat to medium-high. Cook, stirring occasionally, 5-6 minutes or until mixture is thickened and vegetables are crisply tender. Serve sauce over pork chops

1/4 cup packed brown sugar
1-1/2 teaspoons dried basil
1/2 teaspoon salt
1/2 teaspoon chili powder
2 tablespoons canola oil, divided
4 boneless pork loin chops (1/2 inch thick and 4 ounces each)

Steps:

  • Mix first 4 ingredients; gradually stir in 1 tablespoon oil (mixture will be crumbly). Rub over both sides of pork chops., In a large skillet, heat remaining oil over medium heat; cook chops until a thermometer reads 145°, 4-6 minutes per side. Let stand 5 minutes before serving.

4 bone-in ribeye (rib) pork chops, ¾-inch thick
Basil-Garlic Rub:
2 cloves garlic, peeled
1 cup fresh basil, packed
2 tablespoons lemon juice, fresh
2 tablespoons extra virgin olive oil
1 teaspoon coarse salt
½ teaspoon black pepper, freshly ground

Steps:

  • With machine running, drop garlic through feed tube of food processor to mince. Stop, add fresh basil, and process until chopped. Add lemon juice, oil, salt and pepper and process to make thin wet rub. Spread both sides of pork chops with basil mixture. Let stand 15 to 30 minutes.
  • Prepare a medium-hot fire in grill. Brush the grate clean and oil the grate. Grill chops, over direct heat, turning once, to medium rare doneness, 5 to 6 minutes per side, or until the internal temperature reaches 145°F, followed by a 3-minute rest time.

4 (8 ounce) pork chops
1 lime, juiced
4 cloves garlic, minced
¼ cup chopped fresh basil
salt and black pepper to taste

Steps:

  • Toss the pork chops with the lime juice in a bowl until evenly covered. Toss with garlic and basil. Season the chops to taste with salt and pepper. Set aside to marinate for 30 minutes.
  • Preheat an outdoor grill for medium heat, and lightly oil the grate.
  • Cook the pork chops on the preheated grill until no longer pink in the center, 5 to 10 minutes per side. An instant-read thermometer inserted into the center should read 145 degrees F (63 degrees C).

8 pork chops, 1/2 inch thick
1 (28 ounce) can whole tomatoes

Steps:

  • In large skillet or Dutch oven, melt butter.
  • Add garlic and saute for 1 minute.

  • Cover and cook over low-medium heat until pork chops are cooked through and tender (about 50 minutes).
  • Remove pork chops from pan and keep warm.
  • In small bowl, combine water and cornstarch, then pour into hot cooking liquid.
  • Add onions and green peppers, cooking over medium-high heat for 5-6 minutes, or until vegetables are crisp-tender.
  • Place pork chops on serving platter or dinner plates and pour sauce over the top, garnishing with fresh basil if desired, and serve.
