GARLIC BREAD SPREAD
I must say this recipe goes great with most Italian dishes. I usually make it with chicken Parmesan. Delicious!!

- Preheat oven to 350 degrees F (175 degrees C).
- In a bowl, mix together the butter, Parmesan cheese, garlic, marjoram, basil, fines herbs mix, oregano, black pepper, and parsley until thoroughly combined. Split the Italian bread loaf in half lengthwise, and spread each half generously with the butter mixture.
- Bake the garlic bread on the top rack of the preheated oven until the butter mixture melts and bubbles, 10 to 15 minutes; turn on the broiler, and broil until the bread is your desired shade of golden brown, 1 to 2 more minutes.

This garlic and basil spread gives ordinary sandwiches a kick.

- Combine basil leaves, garlic, and red pepper flakes in a food processor or blender. Pulse 3 to 4 times. Slowly pour in canola oil and olive oil and blend until thick and creamy, about 30 seconds. Add additional oil if needed to make the spread smoother.

- separate and peel cloves of garlic.
- In saucepan of boiling water, blanch garlic for 1 minute, drain (or if preferred, roast garlic).
- In food processor or blender or bowl, and using a fork, mash garlic, beans, oil, vinegar, salt and pepper until smooth.
- Stir in basil.

- In a microwave-safe bowl, combine the butter, parsley, basil and garlic. Cover and microwave until butter is melted. Stir in cheese., Cut the bread in half lengthwise; place cut side down on an uncovered grill over medium heat for 2 minutes or until lightly toasted. Brush cut side with the butter mixture. Grill or broil 1-2 minutes longer.

BASIL SPREAD FOR SANDWICHES
This basil spread is great on sandwiches instead of using plain mayo. The Wholefoods market I go to uses it on some of their sandwiches but I have not made it myself. The recipe comes from their "American Summer Style" recipe booklet. In the booklet it is used on their grilled veggie sandwich but I have had it on their salmon sandwich among many others and it is very good.
