ONE-PAN FABULOUS FISH

One-pan fabulous fish image

One-pan dishes like this are great, because they deliver a big flavour punch with minimal washing up. This five-ingredient wonder is all about beautifully fragrant, fluffy rice, perfectly steamed fish and soft, juicy cherry tomatoes, accompanied by a flavour-packed tapenade straight from your store cupboard.

Time 15m

Yield 4

Number Of Ingredients 5

300 g white basmati rice
6 heaped teaspoons green olive tapenade
350 g ripe mixed-colour cherry tomatoes
½ a bunch of fresh basil, (15g)
500 g white fish fillets, such as haddock, skin off, pin-boned, from sustainable sources

Steps:

  • In a large shallow casserole pan on a high heat, mix the rice with 2 heaped teaspoons of tapenade, then pour over 600ml of water.
  • Put the lid on and let it come to the boil while you halve the tomatoes and, in a bowl, mix them with 1 tablespoon each of olive oil and red wine vinegar.
  • Taste, season to perfection with sea salt and black pepper, and tear in most of the basil leaves.
  • Cut the fish into four equal-sized pieces and place in the pan, pushing them into the rice.
  • Scatter over the dressed tomatoes. Put the lid back on and boil for 10 minutes, or until the rice is cooked through, then remove the lid and cook for a further 2 minutes until all the liquid has evaporated.
  • Spoon the remaining tapenade over the fish, pick over the remaining basil leaves, drizzle lightly with extra virgin olive oil, and dish up.

PAN-FRIED BASA FILLETS WITH GARLIC POTATOES

Pan-fried basa fillets with garlic potatoes image

A speedy fish supper for two, this recipe uses budget-friendly basa fillets; a flaky white fish with a delicate flavour similar to cod. Served with lightly crushed garlic potatoes and a fresh and zesty chilli and coriander salsa, this makes a delicious dinner and is ready in just 15 minutes. What's more, it's high in protein and a source of vitamin C, too.

Provided by tsmiles

Time 15m

Yield Serves 2

Number Of Ingredients 10

350g (12 1/2oz) baby potatoes, quartered
1 tbsp extra-virgin olive oil
1/2 tbsp rice wine vinegar or white wine vinegar
1/2 lime, zested and juiced
1 red chilli, seeded and finely chopped
2 garlic cloves, crushed
3-4 tbsp roughly chopped coriander
1½ tbsp olive oil
3 tbsp plain flour
1 x 265g (9 1/2oz) pack skinless and boneless basa fillets

Steps:

  • In a medium pan of salted, boiling water, cook the potatoes for 12 mins, or until tender.
  • While the potatoes are cooking, make the salsa: in a bowl, combine the extra-virgin olive oil, vinegar, lime zest and half the lime juice, the chilli, half the garlic, and the coriander. Season and add extra lime juice to taste, if you like.
  • Heat 1 tbsp olive oil in a large frying pan over a high heat. Season the flour and use to coat the basa fillets, then add them to the pan. Fry for 30 secs over a high heat, then reduce the heat to medium-high and fry for a further 2 mins each side, or until golden and cooked through.
  • Drain the potatoes. Return to the pan, along with the remaining olive oil and garlic. Lightly crush with a potato masher or a fork, then divide between 2 plates. Top with the fish and drizzle over the chilli and coriander salsa.

SECOND TO NONE BAKED BASA

Second to None Baked Basa image

I went to my butcher's to try a new fish and he told me this basic recipe! Must say, the smell was great! The spice measurements are estimates because it's just sprinkling it on each side! It's also good to put some slices of ripe tomato on top before baking.
