1 pound unsalted butter
1 pound plus 2 cups semisweet chocolate chips, divided
6 ounces unsweetened chocolate
6 extra-large eggs
3 tablespoons instant coffee powder
2 tablespoons real vanilla extract
2 1/4 cups sugar
1 1/4 cups flour, divided
1 tablespoon baking powder
1 teaspoon kosher salt
3 cups diced walnut pieces

Steps:

  • Preheat oven to 350 degrees F. Grease and flour a 13 by 18 by 1 1/2-inch sheet pan.
  • Melt together the butter, chocolate chips, and unsweetened chocolate on top of a double boiler. Cool slightly. Stir together the eggs, instant coffee, vanilla and sugar. Stir in the warm chocolate mixture and cool to room temperature.
  • Stir together the flour, baking powder and salt. Add to cooled chocolate mixture. Toss the walnuts and chocolate chips with flour to coat. Then add to the chocolate batter. Pour into prepared pan.
  • Bake for about 30 minutes, or until tester just comes out clean. Halfway through the baking, rap the pan against the oven shelf to allow air to escape from between the pan and the brownie dough. Do not overbake! Cool thoroughly, refrigerate well and cut into squares.
  • This was adapted from a recipe for chocolate globs in the Soho Charcuterie Cookbook.

Number Of Ingredients 14

1 pound unsalted butter
1 pound plus 12 ounces semisweet chocolate chips
6 ounces unsweetened chocolate
6 extra-large eggs
1 1/2 tablespoons instant coffee granules (I used decaf)
2 tablespoons pure vanilla extract
2 1/4 cups sugar
2 1/4 cups all-purpose flour
1 tablespoon baking powder
1 teaspoon salt
9 oz. Semisweet chocolate
1 cup whipping cream
2 tablespoons butter
Place all ingredients in saucepan over medium heat. Whisk until melted and combined. Pour over brownies after brownies are cooled slightly. Let sit for about 1 hour

Steps:

  • Preheat oven to 350 degrees F.
  • Butter and flour a 12 x 18 x 1-inch baking sheet.
  • Melt together the butter, 1 pound of chocolate chips, and the unsweetened chocolate in a medium bowl over simmering water. Allow to cool slightly. In a large bowl, stir (do not beat) together the eggs, coffee granules, vanilla, and sugar. Stir the warm chocolate mixture into the egg mixture and allow to cool to room temperature.
  • In a medium bowl, sift together 2 cups of flour, the baking powder, and salt. Add to the cooled chocolate mixture. Toss the remaining 1/4 cup flour and 12 ounces of chocolate chips in a medium bowl, then add to the chocolate batter. Pour into the baking sheet.
  • Bake for 20 minutes, then rap the baking sheet against the oven shelf to force the air to escape from between the pan and the brownie dough. Bake for about 15 minutes, until a toothpick comes out clean. Do not over bake!

2 cups butter
1 lb semi-sweet chocolate chips (original recipe calls for 28 oz., I feel that is too much but I will leave that up to you)
6 ounces unsweetened chocolate, chopped
6 large eggs
3 tablespoons instant coffee granules
2 tablespoons vanilla
2 1/4 cups sugar
1 cup flour
1/4 cup flour
1 tablespoon baking powder
1 teaspoon salt
4 cups chopped Oreo cookies (50 cookies)

Steps:

  • Preheat oven to 350°.
  • Butter and flour an 11" X 17" pan (I used a 9 X 13 and had thicker brownies).
  • In a heat-proof medium bowl set over a saucepan of simmering water, heat butter, chocolate chips and unsweetened chocolate until melted and smooth. Allow to cool slightly.
  • In a large bowl, whisk eggs, coffee, vanilla and sugar.
  • Blend chocolate mixture into egg mixture; cool to room temperature.
  • In a medium bowl, sift together one cup flour, baking powder and salt.
  • Add flour mixture to chocolate mixture. In a small bowl, stir Oreos and remaining 1/4 cup flour.
  • Add Oreo mixture to chocolate mixture.
  • Pour batter into baking pan and smooth top with a rubber spatula.
  • Bake 35 minutes or until a toothpick inserted 3-inches from center comes out clean; do not overbake.
  • Allow to cool. refrigerate, tightly wrapped, until cold; cut into squares.
  • Share them with your friends and they will be forever indebted to you!

1 1/2 tablespoons instant coffee granules, such as Nescafe
1 tablespoon pure vanilla extract
1 cup sugar
2 tablespoons sugar
1/2 cup all-purpose flour, plus 2 tablespoons, divided
1 1/2 teaspoons baking powder
1/2 teaspoon kosher salt
5 -6 ounces caramel sauce, such as Fran's
2 -3 teaspoons flaked sea salt, such as Maldon

Steps:

  • Preheat the oven to 350 degrees F. Butter and flour a 9 x 12 x 1 1/2-inch baking pan.
  • Melt the butter, 8 ounces of the chocolate chips and the unsweetened chocolate together in a medium bowl set over simmering water. Allow to cool for 15 minutes. In a large bowl, stir (do not beat) together the eggs, coffee, vanilla and sugar. Stir the chocolate mixture into the egg mixture and allow to cool to room temperature. (It is very important to allow the butter to cool before adding the chocolate chips, or the chips will melt and ruin the brownies.).
  • In a medium bowl, sift together 1/2 cup of the flour, the baking powder and salt and add to the chocolate mixture. Toss the remaining 6 ounces of chocolate chips and the remaining 2 tablespoons of flour in a medium bowl and add them to the chocolate mixture. Spread evenly in the prepared pan.
  • Bake for 35 minutes, until a toothpick comes out clean. Don't overbake!
  • As soon as the brownies are out of the oven, place the jar of caramel sauce without the lid in a microwave and heat just until it's pourable. Stir until smooth. Drizzle the caramel evenly over the hot brownies and sprinkle with the sea salt. Cool completely and cut into 12 bars.
