GRILLED BARBECUE POTATO SALAD



Grilled Barbecue Potato Salad image

1 1/2 tablespoons olive oil, plus more for oiling the grill grates
2 pounds Yukon gold potatoes
1 teaspoon garlic salt
1/4 teaspoon black pepper
1/4 cup mayonnaise
1/4 cup KC-Style Chipotle BBQ Sauce, recipe follows, or store-bought chipotle BBQ sauce
1 tablespoon juice from a jar of pickled jalapenos (see Cook's Note)
1/2 pound cooked and crumbled bacon
1/2 cup chopped celery
1/4 cup sliced green onions (set a few aside for garnishing the top)
1 cup ketchup
1/2 cup dark brown sugar
1/4 cup pureed chipotle peppers in adobo
2 tablespoons Worcestershire sauce
1 tablespoon molasses
1 tablespoon cider vinegar
2 teaspoons ancho chile powder
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon cocoa powder
1/2 teaspoon liquid smoke
1/4 teaspoon dried oregano
1/4 teaspoon dried thyme
1/4 teaspoon mustard powder

Steps:

  • Preheat a grill to 400 degrees F using indirect heat. Oil the grill grates.
  • Cut the potatoes into 1-inch chunks and add to a bowl with the olive oil, garlic salt and pepper. Toss to coat. Place the potatoes directly on the oiled cooking grates (if needed, use a grill basket so the potatoes don't fall through). Cook, turning as needed, until done, about 30 minutes.
  • In a mixing bowl combine the mayonnaise, KC-Style Chipotle BBQ Sauce and jalapeno juice. Gently fold in the warm potatoes, bacon, celery and green onions. Garnish with a couple slices of green onion on top and serve immediately.
  • Mix together the ketchup, sugar, chipotle, Worcestershire, molasses, vinegar, ancho powder, salt, pepper, cocoa, liquid smoke, oregano, thyme and mustard powder in a saucepan and gently warm over medium heat, stirring continuously, until the sugar dissolves. Do not boil.
  • The sauce can be used immediately. The flavors will continue to meld if allowed to rest in the refrigerator overnight.

3 pounds baby Yukon gold potatoes
2 tablespoons kosher salt
8 slices thick-cut bacon
1/2 cup red wine vinegar
1 to 2 tablespoons honey
1 teaspoon red chile flakes
1 teaspoon dried dill
1 small red onion, thinly sliced
3/4 cup mayonnaise
1/4 cup BBQ sauce
2 tablespoons whole-grain mustard
1 to 2 tablespoons apple cider vinegar
1 teaspoon freshly ground black pepper
3 dashes Worcestershire sauce
1 pinch of kosher salt
1/2 cup fresh parsley leaves

Steps:

  • For the potatoes: Put the potatoes in a pot with cold water and add the salt. Cover, bring to a boil and cook until fork-tender, 10 to 15 minutes. Drain, cut in half and transfer to a bowl.
  • Fry the bacon in large skillet over medium heat until crisp, 12 to 15 minutes. Remove to a paper towel-lined plate, chop into 1-inch pieces and reserve.
  • For the quick-pickled onion: Combine the red wine vinegar, honey, chile flakes and dill in a small bowl and whisk until the honey is completely dissolved. Add 1/2 cup water and the sliced onions. Toss well to combine and submerge the onions. Set aside or transfer to a container with an airtight lid. The quick-pickled onions can be stored in the refrigerator for up to 7 days.
  • For the dressing: Mix together the mayonnaise, BBQ sauce, mustard, apple cider vinegar, pepper, Worcestershire and salt in a medium bowl until combined.
  • Pour the dressing onto the potatoes, add a third of the pickled onions, two-thirds of the chopped bacon and half the chopped parsley and toss. To serve, garnish with the remaining parsley, bacon and pickled red onions.

5 pounds unpeeled potatoes, cubed
1 small red onion, diced
6 hard-cooked eggs, peeled and finely diced
1 ½ cups mayonnaise
½ cup barbeque sauce
½ teaspoon garlic powder
salt and ground black pepper to taste
1 teaspoon paprika

Steps:

  • Place cubed potatoes into a large kettle and cover with water. Bring to a boil over medium-high heat, then reduce heat to medium-low, cover, and simmer until the potatoes are just tender, 15 to 20 minutes. Drain and spread the potatoes onto baking sheets in a single layer. Chill the potatoes in the refrigerator until cold, about 2 hours.
  • Mix the cooled potatoes, red onion, egg, mayonnaise, barbeque sauce, garlic powder, salt, and pepper in a large bowl. Sprinkle with paprika if desired.

The recipe for this Southern classic came from the chef Millie Peartree's mother, Millie Bell. The sweet relish melds with the creamy potatoes for a deep, balanced flavor. Onion powder adds savory notes without the texture of diced onion, which could overpower the dish. Make sure that your eggs are rinsed thoroughly, so no pieces of shell remain, and that your potatoes are uniformly cut in roughly 1-inch cubes so they all finish cooking at the same time. (Millie Bell used her thumb as a measure.) And, most important of all, don't overcook the potatoes: You want potato salad, not mashed potatoes.

3 pounds russet, Yukon Gold or Idaho potatoes, peeled and cut into 1-inch cubes
Kosher salt and black pepper
1 cup mayonnaise
1/4 cup sweet relish
1 tablespoon yellow mustard
1 teaspoon granulated onion or onion powder
6 hard-boiled eggs, peeled and diced small
2 celery stalks (optional)
Sweet paprika, for garnish

Steps:

  • Set the potatoes in a large pot; add 1 tablespoon salt and cover with cold water by 1 inch. Set over high heat and cook just until fork-tender, about 15 to 20 minutes. (You still want the potatoes to still have some shape to avoid turning the dish into mashed potatoes.) Drain potatoes, and set them aside to cool.
  • As potatoes cool, make the dressing: To a large bowl, add mayonnaise, relish, mustard and granulated onion; whisk to combine.
  • Add the potatoes to the dressing, along with the diced hard-boiled eggs, and celery, if using; stir gently to combine. Taste and season with salt and black pepper as needed.
  • Chill for at least 2 hours, and up to overnight. Serve cold. Finish with a sprinkle of paprika. Potato salad will keep for 4 days in an airtight container.

This is always a hit at family and friend gatherings. My son wanted me to make it for Thanksgiving. Since it has onion, I don't eat it myself, but everyone says it is awesome. This makes a large batch. The dressing can be increased or decreased, depending on how moist you like your salad.

5 lb potatoes
5 hard boiled eggs
1/2 medium onion, more or less to taste
3 stalks celery
2 c miracle whip
2 Tbsp yellow mustard

Steps:

  • 1. Boil whole potatoes until fork tender. Remove from water and allow to cool. Meanwhile, chop the onion, celery and eggs. Set aside. When potatoes are cool enough to handle, peel. Cut into bite sized pieces. Add onion, celery, and egg. In separate bowl combine Miracle whip and mustard. Pour over potato mixture. Stir to evenly distribute dressing. Refrigerate and serve cold.
