BAB'S BREAD AND BUTTER PICKLES



Bab's Bread and Butter Pickles image

Try these tangy-sweet bread-and-butter pickles on a tuna sandwich or chopped in a tartar sauce for fish fillets. Serve these at your next BBQ and then send your family and friends home with a jar as a great hostess gift! This can also be made with cider vinegar.

Number Of Ingredients 8

9 cups 1/4-inch thick cucumber slices
6 (1 pint) canning jars with lids and rings
1 tablespoon pickling spice
1 tablespoon ground turmeric
3 cups distilled white vinegar
3 cups water
1 ½ cups sugar
4 teaspoons sea salt

Steps:

  • Divide cucumber slices among canning jars. Add 1/2 teaspoon pickling spice and 1/2 teaspoon turmeric to each jar.
  • Stir vinegar, water, sugar, and sea salt together in a large saucepan and bring to a boil. Cook and stir until the sugar and salt dissolve; cook at a boil for 2 minutes.
  • Carefully fill jars with brine to within 1/2 inch of the rim, covering the cucumbers completely. Discard any leftover brine.
  • Place the lids on the jars. Refrigerate at least 24 hours before serving. Store in the refrigerator for up to 6 months.

Number Of Ingredients 11

25 cucumbers, thinly sliced
6 onions, thinly sliced
2 green bell peppers, diced
3 cloves garlic, chopped
½ cup salt
3 cups cider vinegar
5 cups white sugar
2 tablespoons mustard seed
1 ½ teaspoons celery seed
½ teaspoon whole cloves
1 tablespoon ground turmeric

Steps:

  • In a large bowl, mix together cucumbers, onions, green bell peppers, garlic and salt. Allow to stand approximately 3 hours.
  • In a large saucepan, mix the cider vinegar, white sugar, mustard seed, celery seed, whole cloves and turmeric. Bring to a boil.
  • Drain any liquid from the cucumber mixture. Stir the cucumber mixture into the boiling vinegar mixture. Remove from heat shortly before the combined mixtures return to boil.
  • Transfer to sterile containers. Seal and chill in the refrigerator until serving.

4 lbs cucumbers, cut into thin slices
2 lbs onions, thinly sliced (about 8small)
1/3 cup canning salt
3 cups vinegar
2 cups sugar
2 tablespoons mustard seeds
2 teaspoons turmeric
2 teaspoons celery seeds
1 teaspoon ginger
1 teaspoon peppercorn

Steps:

  • Combine cucumber and onion slices in a large bowl.
  • Layer with salt and cover with ice cubes; let stand for 1 1/2 hours; drain and rinse.
  • Place remaining ingredients in a large sauce pan and bring to a boil.
  • Add drained cucumbers and onions and return to boil.
  • Pack hot into jars, leaving 1/4 inch head space.
  • Remove air bubbles by running a knife down edges; adjust caps.
  • Process 10 minutes in boiling water bath.

The recipe came from an old friend many years ago. Easy to make, tastes great, everyone likes them, In the summer you want them at most meals & they go great with your BBQ.

4 cups sugar
2 cups white vinegar
2 tablespoons pickling salt
1 teaspoon turmeric
1 teaspoon celery seed
1 teaspoon mustard seeds
3 sliced cucumbers, approx 3/16 inch thick
2 sliced red onions, approx 3/16 inch thick (for Color)

Steps:

  • Fill ice cream pail 3/4 full of sliced cucumbers and red onions.
  • Mix ingredients together and then pour into ice cream pail.
  • Mix everything together, stir a couple times a day for 2 days.
  • Store in the fridge.
  • Lasts a month or more.

This was my husband's grandmother's recipe. It is so good. Store-bought pickles don't even come close. This is a good recipe for anyone who would like to try pickling, but hasn't done it before. It's quite straight forward, not a lot of ingredients.

15 cups sliced pickling cucumbers
3 onions, thinly sliced
1/4 cup coarse salt
4 cups cracked ice
2 1/2 cups cider vinegar
2 1/2 cups sugar
3/4 teaspoon turmeric
1/2 teaspoon celery seed
1 tablespoon mustard seeds

Steps:

  • Combine cucumbers, onions, salt and ice in a large bowl.
  • Mix well.
  • Put a weight on and allow to stand 3 hours. (For a weight, I use a plate with a gallon bottle of vinegar or water on top of it).
  • Rinse and drain thoroughly.
  • Combine vinegar, sugar, turmeric, celery seed and mustard seed in a large pot.
  • Add drained cucumbers.
  • Place pot on medium low heat.
  • Bring almost to a boil, but DO NOT ALLOW TO BOIL.
  • Remove from heat.
  • Seal in sterilized jars, 10 minutes in a hot water bath.
  • Easy way to sterilize jars: Wash them well in hot soapy water.
  • Dry them off.
  • Put on a cookie sheet, right side up, at 225°F for 15 minutes.
  • Turn off oven and leave them in there until you need them.

These pickles are so satisfyingly tasty and so easy to make! They are good, eaten alone, hence the name "bread 'n' butter"--that being all you'd need to make a complete meal! Crispy, and delicious! Bon Appetit!!

16 cups cucumbers
1 tablespoon salt
6 cups sugar
1 1/2 teaspoons turmeric
2 teaspoons mustard seeds
1/2 teaspoon celery seed
4 cups vinegar

Steps:

  • Slice cucumbers into thin slices.
  • Pack in ice for three hours.
  • Drain off water.
  • Discard bits of ice.
  • Mix together other ingredients.
  • Place cucumbers in a large stainless steel pot.
  • Pour ingredients over the cucumbers.
  • Bring to a boil.
  • When it starts boiling, pack into jars.
  • Wipe rims, and cap, using sterilized lids and bands.
  • Let set for 6 weeks before eating.
