SALSA CHICKEN
Someone gave me this recipe a few years back and it's become a household favorite. You can use mild, medium or hot salsa depending on your taste. I usually serve it with Spanish rice and Mexican-style canned corn. Very easy and quick!

Steps:
- Preheat oven to 375 degrees F (190 degrees C)
- Place chicken breasts in a lightly greased 9x13 inch baking dish. Sprinkle taco seasoning on both sides of chicken breasts, and pour salsa over all.
- Bake at 375 degrees F (190 degrees C) for 25 to 35 minutes, or until chicken is tender and juicy and its juices run clear.
- Sprinkle chicken evenly with cheese, and continue baking for an additional 3 to 5 minutes, or until cheese is melted and bubbly. Top with sour cream if desired, and serve.

BARBARA'S CHICKEN DISH
My mate Barb makes this wonderful dish brilliantly, even after half a bottle of white wine:) you can add tomato paste if you like, or even chopped capsicum or mushrooms. This dish is fine with just wine and water, but much much better with well flavoured chicken stock. I like to use about 1/2 cup of stock that I get when I do chinese chicken wings. You can use lite sour cream for this dish, but the sauce with most likely seperate, still tastes great though.

Steps:
- Heat the olive oil in a large fry pan.
- add the chicken, (cut in bite sized pieces) and the chopped onion.
- stir for about 2 minutes.
- add the garlic, and continue cooking till the chicken is golden.
- add the white wine.
- add the tomatos.
- add the stock or water.
- simmer until chicken is cooked and the sauce is reduced.(thats why you use a LARGE pan.).
- when done, salt and cracked pepper to taste, turn off heat and cover.
- when ready to serve, re-heat, stir in the sour cream, but dont re-boil.
- serve over pasta, (I like curls) with a green salad.

BARBARA'S HOT SALSA
We love tomatoes! Every year, when our tomatoes come in, I make spaghetti sauce, can some of the tomatoes, do sun dried tomatoes with the romas, and make fresh salsa. I usually can the salsa, too. I love making it extremely hot, as it tends to mellow in the canning process. Sometimes, though, the heat just comes right on through. It is not a raw type of hot, but with the canning, it tends to age quite nicely. I keep a crock of salsa going all Summer and Fall. I don't can it until the flavors have had a change to mingle and the raw taste is gone. (about 3-4 days)

Steps:
- sprinkle salt in bottom of crock.
- Add tomatoes, onions, peppers, sugar, spices, and lime juice.
- Daily, sprinkle just a little salt into crock and stir.
- On the 4th or 5th day, pack (what has not been consumed) into hot sterile pint jars.
- Process in boiling hot water bath for 10 minutes.

- In a large skillet, saute chicken in oil for 3 minutes. Add green pepper; cook for 3 minutes or until peppers are crisp-tender. Stir in salsa; bring to a boil. Reduce hear; simmer, uncovered, for 3 minutes or until chicken juices run clear.

This is one of our favorite recipes. A friend gave me this Recipe years ago. I use the Salsa that I made from the Wonderful Salsa Recipe On RecipeZaar,But, you can use any Salsa.

Steps:
- Pound Chicken to flatten.
- Salt& pepper to taste.
- Dip chicken into beaten egg; then into breadcrumbs.
- Fry in Olive oil in hot skillet,brown on both sides.
- Put Chicken into glass baking dish.
- Top with Monterey Jack cheese.
- Put salsa over top of Chicken& Cheese.
- Bake 350 degrees for about 30 muintes.
