Baked Beans image

This is a recipe my mother made when we were kids. I don't know how old it is or where it came from. Delicious, comfort food with beans, bacon, brown sugar and tomatoes. I have also made this with canned beans.......use 4 or 5 cans beans, rinsed and drained instead. We always serve this with cornbread. I have put in the amount of brown sugar I usually use but you can either add more or less, depending on your personal taste.

1 1/2 lbs dried great northern beans
1 large onion, sliced
1 lb sliced bacon
2 cups brown sugar
1 (6 ounce) can tomato paste
1 (16 ounce) can whole tomatoes, undrained

Steps:

  • Look through the beans for any rocks or irregular looking beans and discard those. Put beans in large pot and rinse with cold water, then cover with cold water and cook till done. Drain.
  • Preheat oven to 325.
  • In medium sized bowl combine tomato paste and juice from the canned tomatoes. Set aside.
  • In bottom of greased Dutch oven layer half the cooked beans. Next cover that with half the onions and bacon. Sprinkle brown sugar over this generously. Repeat the layers ending with another generous sprinkling of brown sugar.
  • Top this with canned tomatoes that you have cut up or squished with your hand. Then top this with the reserved tomato paste mixture.
  • Cover the beans and bake for 2 to 3 hours.
  • Before you bake it the original recipe states that you can add a little syrup to the mixture but I never do this.

British Baked Beans image

These beans are enjoyed everyday throughout Britain. Often they're part of a large traditional British breakfast, but other times, simply served over a slice of toast.

1 tablespoon olive oil
⅓ cup chopped onion
2 cloves garlic, minced
2 tablespoons tomato paste
1 tablespoon apple cider vinegar
1 tablespoon molasses
½ tablespoon brown sugar
2 teaspoons Worcestershire sauce
1 (15.5 ounce) can cannellini (white kidney) beans, rinsed and drained
¾ cup vegetable broth
salt and freshly ground black pepper to taste
chopped fresh parsley for garnish (optional)

Steps:

  • Heat olive oil in a saucepan over medium heat. Add onion and cook until soft and translucent, stirring occasionally, about 5 minutes. Stir in garlic, and cook until fragrant, 30 seconds to 1 minute.
  • Mix in tomato paste, vinegar, molasses, brown sugar, and Worcestershire sauce, stirring until well combined. Pour in beans and broth, and cook until beans are coated and the sauce starts to reduce, about 15 minutes. The beans still should be saucy, not too thick. Season with salt and pepper.
  • Sprinkle with parsley before serving.

Number Of Ingredients 12

4 ounces dried white beans
1 small onion, peeled
4 cloves
4 teaspoons tomato paste
6 black peppercorns
1 bay leaf
4 fresh sage leaves
6 large garlic cloves, peeled
1 (10 ounce) can chopped tomatoes
1 tomatoes, diced, peeled and deseeded
salt & freshly ground black pepper
extra virgin olive oil (optional)

Steps:

  • •Place the beans in large bowl or pan, cover with cold water and leave to soak overnight.
  • •Next day rinse the beans and place in a large ovenproof pan or deep roasting tin, with enough cold water to cover.
  • •Pierce the peeled onion with the cloves and add to the beans with 2 tsp of the tomato concentrate, black peppercorns, bay leaf, sage, the garlic and the canned tomatoes. Bring to the boil on the stove top then place in the oven for approx 2-3 hours until the beans are quite soft. From time to time during the cooking, check that the beans aren't drying out, if they appear to be lower the heat and add a little boiling water.
  • •Remove the bay leaf and cloves and onion. Add the diced tomato and the remaining tomato concentrate, stir, then cook for 30 minutes more. Season to taste and serve sprinkled with fruity olive oil, if using.

6 slices bacon, chopped
1 large onion, chopped
1/2 cup green pepper, chopped
1/2 cup red pepper, chopped

Steps:

  • Heat a skillet over medium high heat, add the bacon and cook until brown. Remove bacon with a slotted spoon. Strain all but 1 tablespoon fat.
  • Add chopped onion and slowly cook, stirring in the love until caramelized; app 20 minutes.
  • Add the bell peppers. Cook over low heat until cooked.
  • Meanwhile mix together brown sugar, mustard, ketchup, Harissa and Emeril's essence.
  • Combine this mixture with the onions, bacon and beans.
  • Preheat oven 325*. Spray casserole with Pam; spoon in the bean mixture.
  • Place in oven and bake for 45 minutes.

1 (28 ounce) can size can pork and beans (aprx 3 1/2 c)
1 (15 ounce) can baby lima beans, drained
1 (15 ounce) can green beans, drained
1 (15 ounce) can red kidney beans (New Orleans Style)
8 slices bacon, fried and drained
onion, to taste
1 teaspoon salt
1 cup ketchup
1 tablespoon dry mustard
1 tablespoon Worcestershire sauce
1 1/2 tablespoons white vinegar
1/2 cup brown sugar

Steps:

  • After frying bacon,break up and put in beans.
  • Bake at 350 degrees for 1 hour.
