BANBURY CAKES
The Banbury cake reigns in the Midlands. Try this quick recipe for a teatime treat, lovely with a cup of Earl Grey

Steps:
- Cream the butter and honey together with the spices. Add the currants and the candied peel and mix well. On a lightly floured surface roll out the pastry to the thickness of a £1 coin and cut out 10 x 10cm circles, re-rolling any trimmings. Divide the filling between the circles.
- Bring up the edges of the pastry to enclose the filling and crimp the edges of the pastry together to look like little purses. Turn the parcels over, with the folds underneath. Roll each parcel out gently to an oval shape, taking care not to expose the filling.
- Heat the oven to 180C/160C fan/gas 4. Place the cakes on a baking sheet lined with non-stick paper. Brush with the egg white and sprinkle with sugar. Cook for 25-30 mins until cooked and crispy. Turn the oven down if the tops brown too quickly.
- When cooked, transfer to a wire rack and allow to cool a little before eating. When cold, they're excellent spread with a little salted butter.

BANBERRY SURPRISE CAKE
Years ago, a co-worker brought this cake to work. It has become one of my husband's favorite cakes.

Steps:
- 1. Bake cake according to box directions in a greased and floured 13 x 9" pan. Cool completely. Mix Jell-O and water; then add soda pop. Cool completely. Using the handle of a wooden spoon, poke holes in cake and pour Jell-O mixture over entire cake being sure it goes in all the holes. Slice bananas and cover entire cake. Mix pudding mix with milk. Let thicken slightly. Fold in Cool Whip and spread over cake. Refrigerate.

- Preheat the oven to 350 degrees F (175 degrees C). Grease and flour three 8-inch cake pans.
- Combine cake mix, gelatin mix, oil, eggs, strawberries, and flour in a large mixing bowl. Pour equal amounts into the prepared cake pans.
- Bake in the preheated oven until a toothpick inserted into the center comes out clean, 20 to 30 minutes. Remove from the oven and allow to cool completely, about 30 minutes.
- While cakes are cooling, mix powdered sugar, butter, and vanilla extract together in a bowl by hand. Chill for about 20 minutes.
- Whip chilled frosting until fluffy. Sandwich cake layers together with some frosting. Spread remaining frosting over the top and sides.

BANBERRY JELLO CAKE RECIPE

- Prepare cake according to package directions. Using a large fork, poke holes in warm cake. Dissolve jello in hot water and add pop. Pour mixture over warm cake. Refrigerate 2 to 4 hours. Mix pudding with milk and beat until thick. Fold in Cool Whip. Set aside. Slice bananas and place on cake. Ice cake with pudding mixture. Keep cake refrigerated.
JELLO CAKE
This is the moistest cake you will ever eat. I love it with strawberry jello and garnished with fresh strawberries. The Cool Whip makes such a pretty pure white and creamy frosting. It was my mom's favorite birthday cake. Prep time is also chill time

Steps:
- Prepare cake according to package instructions.
- Allow to cool completely in pans.
- Using a fork, poke holes all over the top of the cake through to the bottom.
- Prepare jello according to package instructions except do not allow it to set yet.
- Pour jello slowly over the entire surface of the cooled cakes (cake will look soggy, but thats ok).
- Chill cakes until jello sets completely (several hours or over night).
- To remove cakes from pans, set the pan in a dish of hot water for 1 minute.
- Remove to a serving platter.
- Frost with the Cool Whip.
- Garnish with fruit pieces.
- Keep any uneaten cake covered and chilled.
