SOURDOUGH BANANA MUFFINS
Steps:
- Preheat oven to 350°F. Grease a 12-cup muffin tin.In a small bowl, whisk flour, baking soda, salt, and cinnamon.In a large bowl, using a hand mixer, cream the butter and sugar until light colored and fluffy. Add bananas and beat until they're well "mashed." Add eggs and vanilla and beat until well combined.Add sourdough starter and beat on low just until combined. Then add the flour mixture and beat again on low just until combined. Gently fold in chocolate chips.Divide batter evenly between the muffin tins. If muffin cups are on the small side, you may need to bake excess batter in a ramekin.Bake in preheated oven for 25-30 minutes, or until a toothpick inserted in the center of a muffin comes out clean.Cool in the muffin tin on a wire cooling rack for 10 minutes. Run a knife around the edges of the muffins to loosen. Invert onto the cooling rack.Serve with good quality butter. Store any leftovers in an airtight container.Recipe adapted from my Sourdough Banana Bread recipe, which was adapted from a recipe from Pinch My Salt.

Very easy, moist banana muffins. Great basic recipe that you can change by adding nuts, chocolate chips, or raisins.

- Preheat oven to 350 degrees F (175 degrees C).
- Mix bananas, salad dressing, and sugar in a large bowl until smooth. Stir flour, baking soda, and salt into banana mixture until batter is just moistened. Divide batter evenly into 24 muffin cups.
- Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 17 minutes.

Steps:
- Preheat the oven to 400 degrees F (200 degrees C). Line a muffin tin with paper liners.
- Combine oats, whole wheat flour, all-purpose flour, white sugar, baking powder, baking soda, salt, cinnamon, and nutmeg in a medium-sized bowl.
- Lightly beat eggs in a large bowl. Stir in milk, oil, brown sugar, and vanilla extract. Add bananas and mix together well. Add 1/2 the flour mixture and stir to combine. Add remaining flour mixture and stir. Stir nuts into the batter.
- Spoon batter into the prepared muffin cups, filling each 3/4 full.
- Bake in the preheated oven until a toothpick inserted in the center of a muffin comes out clean, 18 to 20 minutes.

- Preheat oven to 350°F (176°C) and line a 12 count muffin tin with paper liners, or lightly grease.
- Whisk the flour, salt, baking powder and baking soda together in a bowl and set aside. In a separate bowl, use a fork to mash the bananas until smooth.
- Melt the butter in a mixing bowl and add the dark brown sugar. Use a spatula to cream the butter and sugar together. Add the eggs, mashed banana, sour cream, sourdough discard and vanilla extract and mix until combined.
- Add the wet ingredients to the dry ingredients and mix with the spatula until just combined. (Do not over mix!) Gently fold in 2/3 cup of the chopped walnuts.
