Very easy acorn squash with stuffing, that even the kids like, when you want to do something with it besides just butter and brown sugar!

1 acorn squash, halved and seeded
4 tablespoons butter, divided
4 tablespoons brown sugar, divided
2 cups dry bread stuffing mix, divided
1 ½ cups chicken broth, divided
salt and pepper to taste
garlic powder to taste
onion powder to taste

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Place squash, face up, in a shallow baking dish. In each half place 2 tablespoons butter, 2 tablespoons brown sugar, 1 cup stuffing mix, 3/4 cup chicken broth, salt, pepper, garlic powder and onion powder. Wrap each half tightly with aluminum foil.
  • Bake in preheated oven for 60 minutes, or until squash is very tender.

1 ripe acorn squash
1 ripe banana
cinnamon
sugar
brown sugar
nutmeg
2 drops vanilla extract
butter substitute, if desired

Steps:

  • Preheat oven to 350F degrees.
  • Cut the acorn squash in half.
  • perpendicular to the lines.
  • Scoop out the sides and hack off the stem so that each half stands like a bowl.
  • Combine spices with mashed banana and add vanilla.
  • Add butter substitute if desired.
  • Fill each bowl with mixture and smear on sides.
  • Sprinkle more spices over the top.
  • Place in baking dish with a little water in the bottom.
  • Bake 45 minutes or until tender.

4 small acorn squash
2 cored and diced apples
1/4 cup dark brown sugar
1/4 cup margarine
1/4 cup water

Steps:

  • Preheat oven to 350.
  • Cut the acorn squash in halves and take out seeds.
  • Place halves in a roasting pan.
  • Place 1 tbsp of margarine and brown sugar in each half.
  • Divide the apples among squash halves.
  • Add 1/4 cup of water to bottm of pan and cover with foil.
  • Bake for 35-40 minutes or until squash is tender.

Great vegetarian version of stuffed acorn squash, full of stuff most people would have in the fridge.

1 large acorn squash
2 tablespoons butter
2 tablespoons onions, chopped
1/2 cup broccoli floret, chopped
1/4 cup mushroom, chopped
2 tablespoons celery, chopped
2 tablespoons walnuts, chopped
1/2 teaspoon brown sugar
1/2 teaspoon soy sauce
1 tablespoon fresh basil, chopped
1/4 cup muenster cheese, grated

Steps:

  • Heat oven to 400°F.
  • Cut squash in half and remove the seeds.
  • Rub the cut flesh with salt and place flesh side down in a baking dish and bake for about 35 minutes.
  • While the squash is baking, sauté onion in butter until clear and add chopped broccoli florets, mushrooms and celery.
  • Sauté about 4 minutes.
  • Stir in walnuts and fresh basil, then sprinkle with brown sugar and soy sauce, adjust seasoning to taste. Toss to mix well.
  • Check baking squash with a fork to see if it glides through the flesh.
  • Stuff with vegetable mixture, top with equal amounts of grated cheese and return to oven for about 5 minutes.
  • NOTES : Baked acorn squash halves stuffed with sautéed broccoli, cheese and walnuts.

2 small acorn squash (about 2 pounds total)
12 ounces ground lean pork or 12 ounces lean ground turkey
1/2 cup chopped celery
1/2 cup chopped onion
1/2 teaspoon salt
1/2 teaspoon curry powder
1/8 teaspoon ground cinnamon
1 cup unsweetened applesauce
2 slices whole wheat bread, cubed

Steps:

  • Spray a shallow baking pan with nonstick coating.
  • Wash and halve squash; discard seeds.
  • Place squash, cut sides down, in prepared baking pan.
  • Bake, uncovered, in a 350 dregree oven for 45 minutes or until tender.
  • Meanwhile, for stuffing, in a large skillet cook ground pork or turkey, celery, and onion until meat is brown and vegetables are tender.
  • Drain off fat.
  • Stir in salt, curry powder, and cinnamon; cook 1 minute more.
  • Stir in applesauce and bread cubes.
  • Turn squash cut sides up in pan.
  • Spoon stuffing into squash halves.
  • Bake, uncovered, for 20 minutes more.

4 medium acorn squash, halved and cleaned
olive oil
salt
fresh ground black pepper
1 lb Italian sausage, casing removed and cut into 1/2 inch pieces
1 cup sliced red onion
4 cups basic tomato sauce, recipe follows
1/2 lb rigatoni pasta, cooked until tender, tossed in olive oil and cooled
1/2 lb mozzarella cheese, cut into 1/2 inch cubes
1 tablespoon finely chopped fresh parsley leaves
1 tablespoon olive oil
1/2 cup chopped onion
2 tablespoons finely chopped garlic
2 teaspoons salt
1/2 teaspoon white pepper
2 1/2 cups chopped peeled tomatoes with juice
1/4 cup chopped fresh basil
1/2 cup chicken stock
black pepper
1 pinch sugar

Steps:

  • Preheat the oven to 350°F.
  • Season the squash with olive oil, salt and pepper.
  • Place on a baking sheet, flesh side up and add 1/2 cup water to the pan.
  • Cover with aluminum foil and bake until tender, about 1 hour.
  • Remove from the oven and cool completely.
  • In a large saute pan, over medium heat, brown the sausage and onions, about 6 to 8 minutes.
  • In a large mixing bowl, toss the sausage and onions with the tomato sauce, pasta, and cheese.
  • Season with salt and pepper.
  • Mix well.
  • Spoon the pasta mixture into the cavity of each squash.
  • Place the filled squashes on a baking sheet and place in the oven.
  • Bake until the squash is heated through and the cheese melts, about 20 minutes.
  • Place the filled squash in the center of each plate.
  • Garnish with parsley and serve.
  • Tomato Sauce: Heat oil in a large skillet and sauti onions, garlic, salt, and white pepper 3 minutes.
  • Add tomatoes and basil; cook, stirring, 3 minutes.
  • Stir in stock and 18 turns black pepper; simmer 2 minutes.
  • Season with sugar if acidic and cook 1 minute.

1 (6 ounce) package long grain and wild rice blend
3 (10 -12 ounce) acorn squash, cut in halves and seeded
2 tablespoons margarine
1 cup onion, chopped
2 tablespoons lemon juice
2 teaspoons dried sage
1/2 cup dried cranberries
1/4 cup walnuts, chopped and toasted
2 tablespoons light brown sugar
salt
pepper

Steps:

  • Preheat oven to 375 degrees.
  • Coat a baking sheet with nonstick cooking spray.
  • Prepare rice according to package directions, and set aside.
  • Arrange the squash halves, cut side down, on the prepared baking sheet.
  • Bake 40 minutes, or until tender.
  • Reduce oven temperature to 350 degrees.
  • Scoop out the squash pulp, carefully leaving a 1/4 inch shell.
  • Place pulp in a small bowl.
  • In a skillet, heat the margarine over medium heat.
  • Add the onion and cook, stirring, until tender (3 to 5 minutes).
  • Stir in the cooked rice, squash pulp, lemon juice, and sage, mixing well and breaking up the squash pulp into smaller pieces.
  • Stir in the cranberries, walnuts, and brown sugar.
  • Divide the stuffing to fill the acorn squash shells.
  • Place the shells on the baking sheet. (You may have to trim a bit off the bottom of some shells to keep them from turning over.).
  • Bake for 15 minutes, or until heated through.
  • Season with salt and pepper.
