PROTEIN BANANA MUFFINS
Your kitchen needs to be stocked with Protein Banana Muffins. Made with maple syrup, oat flour, and chocolate, they make the perfect snack, dessert, or grab-and-go breakfast!

Steps:
- Preheat oven to 350F and line a muffin tin with liners. Spray liners with non-stick spray as well.
- In a large bowl, mash two bananas very well until no lumps remain.
- Whisk in egg, maple syrup, and vanilla. Set aside.
- In a smaller bowl, mix together oat flour, protein powder, baking powder, baking soda, and salt.
- Add the dry ingredients to the wet ingredients and stir until combined.
- Fold in chocolate chips.
- Scoop into muffin tins until about ¾ full. I like to use a cookie scoop to make this easy! If you are adding more chocolate chips on top, add them now.
- Bake at 350F for 15 minutes or until toothpick inserted in the middle comes out clean.

Steps:
- Preheat oven to 350 and prepare a lined or greased muffin tin.
- In a bowl, mash bananas until smooth. Stir in egg, honey, and coconut oil until combined.
- Add in oat flour, protein powder, baking powder, baking soda and cinnamon. Stir until combined.
- Pour batter into cups, filling 3/4 of the way. Do not overfill!
- Bake muffins for 15 minutes or until the tops are golden brown and a toothpick comes out clean when inserted in the center of the muffin.

I thought this was a very good recipe. I couldn't tell there was no sugar in the muffins. When I made this recipe I used the 4 tablespoons of the protein powder. I got this recipe from Obesity Help. It was posted by thekingskid.

Steps:
- Bake at 400 degrees.
- Grease muffin tins with Pam spray. Combine flour, Splenda, baking powder, baking soda, salt & cinnamon and mix together. In a bowl, beat egg whites with a wisk or fork. Stir in mashed banana, applesauce, nuts and milk. Add flour mixture and mix together. Spoon into muffin tins.
- Bake for 20-25 minutes. Stick a toothpick in the center of muffin to be sure cooked thru. Cool in pan for 5 minutes then remove and cool on a wire rack.

- In a large mixing bowl, combine mashed bananas (I mashed mine in my blender) with egg, oil, maple syrup and vanilla. Stir vigorously until the mixture is smooth.
- In a separate bowl, combine the dry ingredients- flour, protein powder, baking powder, baking soda, salt, cinnamon and cornstarch. For best results, spoon flour into cup (rather than scooping with cup) and then level using a butter knife. Make a well in the center of the flour mixture and add wet ingredients. Gently stir until just combined. Don't overmix.
- Spoon batter into the prepared muffin tins filling each one completely full and top with chopped nuts. Bake muffins for 5 minutes at 425 degrees F. and then with muffins staying in the oven, reduce heat to 350 degrees F. and bake muffins for 13-15 minutes more. The high heat will cause muffins to rise and then you will lower heat to cook the center of the muffin.
