I thought this was a very good recipe. I couldn't tell there was no sugar in the muffins. When I made this recipe I used the 4 tablespoons of the protein powder. I got this recipe from Obesity Help. It was posted by thekingskid.

Number Of Ingredients 12

1 1/2 cups flour
1/4 cup Splenda sugar substitute
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon cinnamon
2 egg whites
3 bananas (ripe & mashed)
1/3 cup skim milk (I use Lactaid Fat Free Milk)
1 cup applesauce (Sugar Free)
4 tablespoons protein powder (I use 4 scoops Vanilla Whey Protein )
1 cup walnuts (chopped)

Steps:

  • Bake at 400 degrees.
  • Grease muffin tins with Pam spray. Combine flour, Splenda, baking powder, baking soda, salt & cinnamon and mix together. In a bowl, beat egg whites with a wisk or fork. Stir in mashed banana, applesauce, nuts and milk. Add flour mixture and mix together. Spoon into muffin tins.
  • Bake for 20-25 minutes. Stick a toothpick in the center of muffin to be sure cooked thru. Cool in pan for 5 minutes then remove and cool on a wire rack.

1 scoop vanilla whey protein powder
1/4 cup oats
1 teaspoon vanilla extract
1/2 teaspoon baking powder
2 tablespoons egg substitute
2 g stevia
1/2 teaspoon cinnamon
2 ounces bananas

Steps:

  • Smash banana.
  • Mix all ingredients together.
  • Pour into jumbo muffin tin.
  • Bake for 15 minutes at 350 degrees.

2/3 cup uncooked oatmeal
2/3 cup Fiber One cereal
2 bananas
6 tablespoons jam (no or low sugar)
1/2 teaspoon vanilla extract
1/2 teaspoon cinnamon
1 teaspoon baking soda
1 teaspoon baking powder
6 g stevia plus (6 packets)
1 ounce chopped pecans

Steps:

  • Preheat oven to 350 degrees.
  • Mix everything except the cereal and nuts in a blender. (Note: recipe does not state exact amount of cinnamon or vanilla - 1/2 teaspoon is a guesstimate).
  • Fold in the cereal and mix well.
  • Line a muffin tin with aluminum cupcake liners and spray with non-stick cooking spray.
  • Pour the muffin batter evenly into each tin and top with the nuts.
  • Bake for 30 minutes.

1-1/2 cups all-purpose flour
1-1/2 cups cake flour
1-1/2 cups sugar
1-1/2 teaspoons baking powder
3/4 teaspoon baking soda
3/4 teaspoon salt
1/2 teaspoon ground cinnamon
1-1/2 cups mashed ripe bananas (2 to 3 medium)
1-1/2 cups sour cream
3 large eggs, room temperature
6 tablespoons butter, melted
STREUSEL:
1/3 cup all-purpose flour
1/3 cup sugar
3 tablespoons brown sugar
1/4 teaspoon ground cinnamon
3 tablespoons cold butter
1/2 cup chopped pecans

Steps:

  • Preheat oven to 350°. In a large bowl, combine first seven ingredients. In another bowl, combine bananas, sour cream, eggs and butter. Stir into dry ingredients just until moistened., Fill greased or paper-lined jumbo muffin cups two-thirds full. For streusel, in a small bowl, combine flour, sugars and cinnamon. Cut in butter until crumbly; stir in pecans. Sprinkle over tops., Bake 20-25 minutes or until a toothpick inserted in the center comes out clean. Cool 5 minutes before removing from pans to wire racks. Serve warm. Freeze option: Freeze cooled muffins in resealable plastic freezer bags. To use, thaw at room temperature or, if desired, microwave each muffin on high for 20-30 seconds or until heated through.

1 teaspoon baking soda
1 teaspoon ground cinnamon
½ teaspoon salt
1 dash ground nutmeg
3 very ripe bananas
½ cup white sugar
⅓ cup butter, melted
¼ cup lightly packed brown sugar
1 egg
1 teaspoon vanilla extract
¼ cup chopped walnuts

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a muffin tin.
  • Sift flour, baking powder, baking soda, cinnamon, salt, and nutmeg together in a small bowl.
  • Mash bananas in a large bowl. Mix in white sugar, melted butter, brown sugar, egg, and vanilla extract. Fold in flour mixture until just combined. Fold walnuts into the batter.
  • Divide batter evenly among the muffin cups.
