This is Day 8: Breakfast, on the 21 Day Wonder Diet. You can decide on any berry combination to suit you. Try matching the the flavours with the yogurt. You can use fresh or frozen berries. This breakfast is to be followed by a mid-morning snack of 2 cups of air-popped popcorn.

3/4 cup skim-milk flavoured yogurt

200 g low-fat sugar-free peach mango yogurt
2 small bananas
1 tablespoon honey
2 passion fruit
1 dash nutmeg

Steps:

  • combine the milk, yoghurt, banana and honey and passionfruit in a blender. Blend until smooth and thick.
  • Pour into a long serving glass and sprinkle with nutmeg.

Banana Passion Fruit Smoothie image

A refreshing tropical smoothie ideal for breakfast on the run (put it in an insulated lidded container and take it with you!) or for a leisurely brunch or an anytime snack! I often make this and take it to work in 2 Tupperware containers: one for breakfast, the other as a snack during the day.

1 large bananas (sugar bananas if possible) or 2 small bananas (sugar bananas if possible)
2 passion fruit
2 cups soymilk
1 tablespoon wheat germ
2 drops vanilla essence
3 -4 ice cubes (optional)

Steps:

  • Slice the banana, halve the passionfruits and scoop out the seeds and fruit and add to the blender.
  • Add the soy milk, wheat germ, vanilla essence and ice cubes if adding, and blend on high until all the ingredients are well blended.
  • Serve.

2 cups self raising flour
1 tablespoon caster sugar
2 large eggs, seperated
2 cups skim milk
170 g passion fruit
2 large ripe bananas, thinly sliced
cooking spray (for cooking)

Steps:

  • Place flour and sugar into a medium bowl and gradually blend in milk, egg yolks, and 1/4 cup of passionfruit. Whish egg whites to stiff peaks and fold into mixture.
  • Heat spray oil in a non stick frying pan over a medium heat. Add 1/2 cup of pancake mixture to pan, arrange 8 banana slices over. Cook for approximately 1 to 2 minutes on each side or until golden and puffed. Repeat to make 12 pancakes.
  • Serve pancakes with extra passionfruit.
  • Tip: Use fresh passionfruit when in season. 170g can is equivalent to approximately 8 large or 10 small passionfruit.
