FLUFFY BANANA PANCAKES



Fluffy Banana Pancakes image

Fluffy yet moist thanks to mashed banana mixed into the batter, these pancakes make for the perfect weekend morning breakfast.

Number Of Ingredients 10

2 cups buttermilk (or 2 tablespoons vinegar + enough milk to equal 2 cups)(can substitute almond milk + vinegar)
1 large or 2 small ripe bananas (or about 1 cup mashed) (plus extra for slicing on adding to top of pancakes)
2 eggs
3 tablespoons unsalted butter (melted and cooled slightly) (can substitute melted coconut oil)
2 teaspoons pure vanilla extract
2 1/2 cups all-purpose flour
1/4 cup granulated sugar (can substitute pure maple syrup)
1 tablespoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt

Steps:

  • Add the buttermilk to a large bowl. If you're using the vinegar plus milk option, let sit for about 10 minutes to allow the milk to turn to buttermilk. Whisk in the mashed banana, eggs, butter, and vanilla into the buttermilk.
  • To a medium bowl, add the the flour, sugar, baking powder, baking soda, and salt. Whisk together to combine.
  • Pour the dry ingredients over the wet and mix just until incorporated. Do not overmix!
  • Let the batter rest for about 5 minutes. It should form bubbles and rise just a bit.
  • Heat a non-stick griddle to 325 degrees Fahrenheit or place a large frying pan over medium heat. Melt a little butter on the cooking surface, spreading it evenly, if desired (or if the griddle/pan is not non-stick). Using a 1/3 cup measure (or a trigger-handled ice cream scoop works as well), pour the batter onto the griddle or into the frying pan. The pancakes are ready to flip when they look a little dry around the edges and start to form little bubbles (about a minute). Flip and cook on the other side until golden brown and the cooked through.
  • Serve topped with sliced bananas, butter, and maple syrup.

Number Of Ingredients 14

1½ cups all purpose flour, spooned into measuring cup and leveled off
2 tablespoons sugar
2½ teaspoons baking powder
½ teaspoon salt
1 small, over-ripe banana, peeled (the browner, the better)
2 large eggs
1 cup plus 2 tablespoons low fat milk
½ teaspoon vanilla extract
3 tablespoons unsalted butter, melted
1 - 2 tablespoons vegetable oil
1 tablespoon unsalted butter
Maple syrup
Sliced bananas
Confectioners' sugar (optional)

Steps:

  • In a medium bowl, whisk together the flour, sugar, baking powder and salt.
  • In a small bowl, mash the banana with a fork until almost smooth. Whisk in the eggs, then add the milk and vanilla and whisk until well blended. Pour the banana mixture and the melted butter into the flour mixture. Fold the batter gently with a rubber spatula until just blended; do not over-mix. The batter will be thick and lumpy.
  • Set a griddle or non-stick pan over medium heat until hot. Put a pad of butter and one tablespoon vegetable oil onto the griddle, and swirl it around. Drop the batter by ¼-cupfuls onto the griddle, spacing the pancakes about 2 inches apart. Cook until a few holes form on top of each pancake and the underside is golden brown, about 2 minutes. Flip the pancakes and cook until the bottom is golden brown and the top is puffed, 1 to 2 minutes more. Using the spatula, transfer the pancakes to a serving plate.
  • Wipe the griddle clean with paper towels, add more butter and oil, and repeat with the remaining batter. Serve the pancakes while still hot with maple syrup, sliced bananas and confectioners' sugar if desired.
  • Freezer-Friendly Instructions: The pancakes can be frozen for up to 3 months. After they are completely cooled, place a sheet of parchment or wax paper between each pancake and stack together. Wrap the stack of pancakes tightly in aluminum foil or place inside a heavy-duty freezer bag. To reheat, place them in a single layer on a baking sheet and cover with foil. Bake in a 375°F oven for about 8 to 10 minutes, or until hot.

2 ripe bananas, mashed with some lumps
1 c flour
2 tsp baking powder
1/4 tsp salt
1 Tbsp heaping, sugar
1 egg
2 Tbsp vegetable oil
1 c milk, sometimes i use soured milk or buttermilk

Steps:

  • 1. Combine dry ingredients, set aside. ( flour, salt, baking powder and sugar.)
  • 2. Mash banana's - set aside.
  • 3. In a medium bowl, whisk together the egg, milk, oil and banana.
  • 4. Stir the dry ingredients into the wet, don't over stir, there will be lumps.
  • 5. Have a lightly greased griddle or frying pan heated over medium heat. If using my electric griddle I turn the heat to 375. If using a skillet I use medium heat, and adjust if cooking too fast. Once pan is hot enough, to where a drop of water sizzles and dissipates quickly. Pour your desired amount of batter into pan and I always spread, just a little. Once it starts browning around the edges and small bubbles appear throughout the cake, I flip to the other side. Cook on that side until center is no longer doughy.
  • 6. Serve with butter, syrup, nuts, chocolate chips, etc,etc. Enjoy!

1 1/4 cups milk
1/4 cup chocolate-flavor syrup
1 egg
2 medium bananas, sliced

Whipped topping, chopped peanuts, additional chocolate-flavor syrup and maraschino cherries, if desired

Steps:

  • In medium bowl, stir Bisquick mix, milk, 1/4 cup chocolate-flavor syrup and the egg with wire whisk or fork until blended (batter may be thin).
  • Brush griddle or skillet with vegetable oil or spray with cooking spray; heat griddle to 375°F or heat skillet over medium heat.
  • For each pancake, pour slightly less than 1/4 cup batter onto hot griddle. Cook until edges are dry. Turn; cook other side until golden brown.
  • Serve with remaining ingredients.

350g self-raising flour
1 tsp baking powder
2 very ripe bananas
2 medium eggs
1 tsp vanilla extract
250ml whole milk
butter, for frying
2 just ripe bananas, sliced
maple syrup (optional)
pecan halves, toasted and roughly chopped (optional)

Steps:

  • Sieve the flour, baking powder and a generous pinch of salt into a large bowl. In a separate mixing bowl, mash the very ripe bananas with a fork until smooth, then whisk in the eggs, vanilla extract and milk. Make a well in the centre of the dry ingredients, tip in the wet ingredients and swiftly whisk together to create a smooth, silky batter.
  • Heat a little knob of butter in a large non-stick pan over a medium heat. Add 2-3 tbsp of the batter to the pan and cook for several minutes, or until small bubbles start appearing on the surface. Flip the pancake over and cook for 1-2 mins on the other side. Repeat with the remaining batter, keeping the pancakes warm in a low oven.
  • Stack the pancakes on plates and top with the banana slices, a glug of sticky maple syrup and a handful of pecan nuts, if you like.
