CREAMY SMOKED TURKEY AND BLUEBERRY SALAD



Creamy Smoked Turkey and Blueberry Salad image

1/2 cup light mayonnaise
1/2 cup plain low-fat yogurt
1/4 cup orange marmalade
2 teaspoons fresh lemon juice
1/2 teaspoon ground black pepper
3 medium peaches (about 1 pound), cut in wedges (about 3 cups)
1 pint blueberries
2 cups cubed smoked turkey (about 8 ounces)

Steps:

  • In a bowl combine the mayonnaise, yogurt, marmalade, lemon juice and pepper. Add peach slices, blueberries and turkey; toss until well coated. Serve on lettuce leaves, if desired.

2 Smoked Turkey Legs, recipe follows
1/4 cup diced celery
1/4 cup diced apple
1 tablespoon pecans, roasted
1 teaspoon rice wine vinegar
1 teaspoon fresh parsley, finely chopped
1/4 teaspoon freshly ground black pepper
1/4 cup mayonnaise
3 quarts water, hot
225 grams kosher salt
225 grams dark brown sugar
1100 grams (about 2.5 pounds) ice
6 turkey legs
1 cup unsalted chicken stock

Steps:

  • Remove the skins from the Smoked Turkey Legs, pull off the meat and chop into 1/2-inch cubes.
  • Place the turkey, celery, apple, pecans, vinegar, parsley, black pepper and mayonnaise in a medium-sized bowl. Stir to combine and serve.
  • Place the water, kosher salt and brown sugar in an 8-quart plastic container and stir until fully dissolved. Add the ice before submerging the turkey legs in the brine. Cover and refrigerate for 4 hours or up to 12 hours.
  • Set up your favorite smoker and add a handful of hardwood chunks. If you have heat control, set it to 150 to 170 degrees F and allow the wood to smoke for approximately 30 minutes.
  • While the smoker is heating, drain the legs, pat them dry and arrange them on a rack. Smoke the legs on the rack for 3 hours, rotating the legs halfway through.
  • Heat your oven to 350 degrees F. Make 2 pouches out of double-layered heavy-duty tin foil, adding 3 legs and 1/2 cup of chicken stock to each pouch. Braise the legs in their pouches for 1 hour, then carefully drain and reserve the jus.
  • Defat the jus, remove the skins and serve the legs alongside the smoky jus.

1 1/4 pounds smoked turkey breast, diced
1 cup chopped green onions
3/4 cup chopped celery
1/3 cup low-fat mayonnaise
3 tablespoons chopped fresh thyme
6 tablespoons olive oil
3 tablespoons white wine vinegar
8 ounces mixed baby greens
2 1/3 cups coarsely chopped pitted Bing cherries
1/2 cup coarsely chopped husked toasted hazelnuts

Steps:

  • Mix turkey, green onions, celery, 1/3 cup mayonnaise and 2 tablespoons chopped thyme in medium bowl. Season salad with salt and pepper.
  • Whisk oil, vinegar and remaining 1 tablespoon chopped thyme in small bowl to blend. Season with salt and pepper.
  • Toss greens and vinaigrette in large bowl. Divide among plates. Add cherries and nuts to turkey. Place atop greens.

8 ounces sliced deli smoked turkey, cut into strips
4 medium apples, sliced
1/3 cup chopped walnuts, toasted

Steps:

  • Whisk together first four ingredients. , Place watercress on a platter; top with carrot, tomatoes, turkey and apples. Drizzle with dressing; top with walnuts. Serve immediately.

1 15-ounce can no-salt-added black beans
8 ounces whole red pepper or 7 ounces chopped ready-cut red pepper (1 1/2 cups)
A few sprigs fresh cilantro to yield 1/4 cup chopped
2 ounces red onion or 1/4 cup chopped
1/2 to 1 whole jalapeño pepper
1 large clove garlic
8 ounces ripe tomato
6 ounces smoked turkey or smoked chicken in a chunk
1 tablespoon olive oil
2 tablespoons raspberry vinegar
2 teaspoons sweet-hot mustard
12 large basil leaves
1 small bunch arugula
Freshly ground black pepper to taste
2 slices country bread

Steps:

  • Wash and drain beans, and set aside.
  • Wash, seed and chop whole pepper; wash, dry and chop cilantro; chop onion; wash, seed and mince jalapeño; mince garlic, and wash tomato and coarsely dice it and smoked turkey.
  • Whisk together the oil, vinegar and mustard in a bowl large enough to hold all of the ingredients; stir in the beans and chopped ingredients.
  • Wash and julienne the basil leaves, and stir in.
  • Remove coarse stems from arugula, wash and dry and break into small pieces. Stir into salad, seasoning to taste with pepper. Mix all the ingredients well to coat with dressing. Serve with bread.

Number Of Ingredients 8

1/3 cup (or more) purchased oil and vinegar dressing
1/2 teaspoon paprika
1 1/2 cups canned low-salt chicken broth
1/4 teaspoon crushed saffron threads or 3 teaspoons powdered saffron
3/4 cup long-grain white rice
2/3 cup frozen green peas
6 ounces smoked turkey, cut into 1/3-inch pieces
1/2 cup coarsely chopped red bell pepper

Steps:

  • Whisk 1/3 cup dressing and paprika in small bowl to blend. Bring broth and saffron to boil in heavy medium sauce-pan over high heat. Mix in rice. Cover, reduce heat to low and simmer until rice is almost tender, about 15 minutes. Mix in peas. Cover and cook until rice and peas are tender and broth is absorbed, about 5 minutes.
  • Transfer rice mixture to large bowl. Cool 5 minutes; fluff with fork. Mix in turkey and red bell pepper. Add dressing mixture and toss to blend, adding more purchased dressing by tablespoonfuls, if desired. Season salad with salt and pepper. Serve at room temperature.
