BANANA-MAPLE TOWERS

Steps:
- Preheat the oven to fan 180C/conventional 200C/gas 6 and grease four 150ml dariole moulds or heatproof teacups with the butter - this will help you turn out the puddings and add a touch more flavour.
- Mash the banana in a mixing bowl, using a fork. Beat in the eggs and vanilla extract, then stir in the breadcrumbs, sugar, milk and sultanas.
- Spoon the mixture evenly into the moulds or teacups. Arrange them in a small roasting dish, and then pour in enough hot water to reach about halfway up their sides.
- Bake uncovered, for 35 minutes, until set. Cool for a few moments, then turn out onto small serving plates. Drizzle a tablespoon of maple syrup over each pudding, then finish with a teaspoon of crème fraîche and a sprinkle of freshly grated nutmeg, if you like.

- Preheat oven to 350°. In a large bowl, cream butter and brown sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. In a small bowl, mix bananas, sour cream, maple syrup and vanilla. In another bowl, whisk flour, baking powder, baking soda and salt; add to creamed mixture alternately with banana mixture, beating well after each addition. Fold in pecans., Transfer to a greased 9x5-in. loaf pan. For streusel, in a small bowl, mix flour, sugars, butter and cinnamon until blended. Stir in pecans; sprinkle over batter., Bake 55-60 minutes or until a toothpick inserted in center comes out clean. Cool in pan 10 minutes before removing to a wire rack to cool.

- Line a bread pan with foil, overlapping the pan a little.
- Peel banana & slice lengthwise.
- Place in pan, cut side up.
- Spread syrup over the banana.
- Sprinkle with cinnamon.
- Top with butter.
- Wrap & seal with extra foil.
- Bake 350 degrees for 10-15 minutes.
