A smart, low fat dessert to impress your guests

½ tsp butter
1 large banana
2 medium eggs
1 tsp vanilla extract
50g fresh breadcrumb
25g golden caster sugar
300ml/½ pt semi-skimmed milk
50g sultana
4 tbsp maple syrup
4 tsp reduced fat crème fraîche
grated nutmeg , optional

Steps:

  • Preheat the oven to fan 180C/conventional 200C/gas 6 and grease four 150ml dariole moulds or heatproof teacups with the butter - this will help you turn out the puddings and add a touch more flavour.
  • Mash the banana in a mixing bowl, using a fork. Beat in the eggs and vanilla extract, then stir in the breadcrumbs, sugar, milk and sultanas.
  • Spoon the mixture evenly into the moulds or teacups. Arrange them in a small roasting dish, and then pour in enough hot water to reach about halfway up their sides.
  • Bake uncovered, for 35 minutes, until set. Cool for a few moments, then turn out onto small serving plates. Drizzle a tablespoon of maple syrup over each pudding, then finish with a teaspoon of crème fraîche and a sprinkle of freshly grated nutmeg, if you like.

1/2 cup butter, softened
1/2 cup packed brown sugar
2 large eggs
1 cup mashed ripe bananas (about 2 medium)
1/2 cup sour cream
1/3 cup maple syrup
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
1 cup chopped pecans
STREUSEL:
2 tablespoons all-purpose flour
2 tablespoons sugar
1 tablespoon packed brown sugar
1 tablespoon butter, softened
1/8 teaspoon ground cinnamon
2 tablespoons finely chopped pecans

Steps:

  • Preheat oven to 350°. In a large bowl, cream butter and brown sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. In a small bowl, mix bananas, sour cream, maple syrup and vanilla. In another bowl, whisk flour, baking powder, baking soda and salt; add to creamed mixture alternately with banana mixture, beating well after each addition. Fold in pecans., Transfer to a greased 9x5-in. loaf pan. For streusel, in a small bowl, mix flour, sugars, butter and cinnamon until blended. Stir in pecans; sprinkle over batter., Bake 55-60 minutes or until a toothpick inserted in center comes out clean. Cool in pan 10 minutes before removing to a wire rack to cool.

1 banana
1 pinch cinnamon
1 teaspoon maple syrup
1 -2 teaspoon margarine, cut into small pieces

Steps:

  • Line a bread pan with foil, overlapping the pan a little.
  • Peel banana & slice lengthwise.
  • Place in pan, cut side up.
  • Spread syrup over the banana.
  • Sprinkle with cinnamon.
  • Top with butter.
  • Wrap & seal with extra foil.
  • Bake 350 degrees for 10-15 minutes.

½ cup maple syrup
1 egg
2 ripe bananas
½ teaspoon maple extract
3 tablespoons milk
2 cups all-purpose flour

3 tablespoons white sugar

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 5x9 inch loaf pan.
  • In a large bowl, mix the melted butter and maple syrup. Beat in the egg and bananas, leaving a few small chunks. Stir in the maple extract and milk. In a separate bowl, mix the flour, baking soda, and baking powder, and stir into the banana mixture just until moistened. Transfer to the prepared loaf pan. Mix the nuts and sugar, and sprinkle evenly over the batter.
  • Bake 50 minutes in the preheated oven, or until a knife inserted in the center of the loaf comes out clean.
