BANANA WALNUT ICE CREAM
This delicious and unique flavor ice cream is perfect for summer.

- Heat 2 1/2 cups of the half-and-half in a large saucepan over medium heat until small bubbles begin to form around the edges. Remove from heat and set aside.
- Mix the egg yolks and sugar in a large bowl until smooth. While stirring, slowly pour the half-and-half into the egg mixture. Transfer the mixture to the saucepan and heat again over medium heat until bubbles begin to form around the edges. Remove from heat and return to the bowl. Stir in the heavy whipping cream.
- Puree the bananas and 3/4 cup half-and-half in a blender until smooth. Add puree to bowl and mix well. Cover and refrigerate until cold, 3 to 4 hours.
- Pour mixture into cylinder of ice cream freezer. (Refrigerate any remaining mixture until ready to freeze.) Freeze according to the manufacturer's directions. Stir in the walnuts. Transfer to 1 quart containers and freeze overnight before serving.

- In a small heavy saucepan, heat milk and sugar until bubbles form around sides of pan. Whisk in honey. Quickly transfer to a large bowl; place in ice water and stir 2 minutes., Puree bananas; add to cooled milk mixture with 1 cup cream, extracts and salt. Press waxed paper onto surface of milk mixture. Refrigerate for several hours or overnight., In a small bowl, beat remaining cream until soft peaks form; fold into banana mixture. Fill cylinder of ice cream freezer two-thirds full; freeze according to the manufacturer's directions, adding banana chips during last minute. When ice cream is frozen, transfer to a freezer container; freeze for 2-4 hours., To assemble sandwiches, spread ice cream onto each of 10 graham cracker halves. Top with remaining graham crackers; press down gently., In a shallow dish, combine peanuts and jimmies. Roll sides of ice cream sandwiches in peanut mixture. Wrap in plastic; freeze on a baking sheet at least 1 hour.

A cheap and easy ice cream recipe without cream: just evaporated milk, skim milk and sugar. I flavored the basic ice cream recipe with vanilla and banana puree to get rid of the evaporated milk taste but feel free to improvise!

- In a medium bowl, mix together the skim milk, evaporated milk, sugar and vanilla. Pour into an ice cream maker, and freeze according to the manufacturer's instructions.
- When the ice cream is done freezing, add the bananas and raisins and let them mix in. Transfer to a freezer container, and freeze overnight before serving to improve the texture.

Steps:
- Combine milk and honey in medium saucepan.
- Bring almost to simmer, stirring occasionally.
- Beat yolks until pale yellow.
- Gradually beat in hot milk.
- Set bowl into a larger bowl filled with ice (or cover with plastic wrap directly on the surface of the custard and chill overnight).
- Cool custard completely, stirring occasionally.
- Fold in whipped cream and bananas.
- Process according to ice cream makers manufacturers instructions, until half set.
- Add walnuts and process until set.
- Let ripen in freezer several hours before serving.
